Week 275 Menu

I love bedhead, blankies, Christmas jammies in April, and big yawns. How can so much cuteness be rolled up in one little person without them even trying?

I am swamped with work right now. And on Thursday I am heading to Miami (woohoo!) for the Mom 2.0 Summit with my DailyBuzz Moms colleagues. I’m starting to hyperventilate just a little thinking about the week…so, I am going to make this a super easy plan. It involves more prepared foods than I like to use…but…it’s between that and my sanity, which is hanging by a thread, so I choose sanity!

MONDAY:
– Spaghetti
– Sauteed zucchini

TUESDAY:
– These frozen chicken cordon bleu things from my grocery store
– Cauliflower and long grain rice

WEDNESDAY:
– Pulled pork sandwiches with coleslaw (buying pre-made BBQ pork and coleslaw!)

THURSDAY:
– Family fending for themselves!

FRIDAY:
– Family fending for themselves!

SATURDAY:
– Family fending for themselves! I’ll be partying at the Versace Mansion for Cinco de Mayo…with Owen in tow. How many 7 month olds can say they’ve done that?!

SUNDAY:
Waffles, scrambled eggs and fruit

  1. My three-year old saw a picture of your kids and wanted to know what all their names were. Now she talks about them like they’re friends who live far away from us. Very, very cute. :)

    Sunday: Pasta with  butter and green bean fries
    Monday: Lasagna roll-ups from the freezer and roasted potatoes/onions
    Tuesday: Roasted acorn squash with cinnamon apples and couscous
    Wednesday: Dinner at church
    Thursday: Vegetable soup and rustic white bread
    Friday: Enchiladas (chicken for them, vegan for me)
    Saturday: Celebrating Grandpa’s birthday!

      Green bean fries?! How do you make those?

    • They were quite popular! And they have been requested again for this week.

      1. Preheat oven to 400.
      2. Trim/clean green beans.
      3. Treat them to a breading regimen: dip in flour, then egg wash, then breadcrumbs (I prefer panko to make a little fluffy).
      4. Bake to 10-15 minutes, flip, then cook for another 10 minutes until crispy and golden.
      Note: I put them on a wire rack on a baking sheet to eliminate flipping and reduce cooking time.
      5. Serve with everyone’s favorite dipping sauce!

    Over the course of the past two weeks I’ve been juggling two sick kids and one sick hubby, so our structured meal plans kind of fell to the wayside. Needless to say, I think we’re all finally ready to get back to a more structured routine! :)

    Monday:

    I’m taking my boys strawberry picking for the first time this week, so I’m sure strawberries will be making an appearance at many of our meals this week! :)

      I hate those weeks when everyone gets sick…it really throws everything off. hope this week gets better! and have fun strawberry picking – I think picking berries is one of my most fondest memories with my kids every time we do it.

    M: Yogurt-marinated chicken with mushrooms and sweet potatoes
    T: Soba noodles in sweet ginger sauce with beef
    W: Spicy chicken thighs with rhubarb-cucumber salsa and roasted potatoes with lemon and dill
    R: Unsure. I wanted to do something with pomegranates, but they are out of season. Likely going to be clam-miso soup with some summer rolls from the local sushi-to-go place.
    F: Takeout.
    S: TBA. The Wife requested breakfast for Mother’s Day, so we’ll likely start things the night before with something fancy shmancy for dinner. Filet maybe?

    Mon: Chicken & Veg Stir Fry (using up all veg that wasn’t used up last week) w/ pineapple fried brown rice(using leftover pineapple from last week also)

    Tues: (Didn’t get to this last week) Corned Beef Benedicts w/ potatoes o’brian & fruit salad

    Wed: Chicken w/ 40 cloves of garlic & Mediterranean style couscous (carrot, onion, squash, scallion)

    Th: Leftovers–Using leftover chicken to make Curry chix salad pitas w/ couscous salad

    Fri: BBQ pork chops w/ grilled corn on the cob (BBQ spice butter) & coleslaw

    Sat: Cinco de Mayo Fiesta–pollo asada, carne asada, pork tamales, beans & rice. Also making mango margaritas…yummy!

    Sun: Fiesta leftovers

    I’m also making pineapple muffins with leftover pineapple from last week. :)

      I made the pineapple muffins today for Sunday brunch, and they were soooo yummy! I got the recipe from bakingbites.com. My 4-year-old son & hubby love them too! I thought I’d share this great recipe with you all. :) The only thing I did different from her recipe was use half whole-wheat flour & half AP flour, and I didn’t have oranges so I added 1/4 cup OJ instead of the zest. I also added a splash of vanilla & a pinch of cinnamon. Enjoy!

      Pineapple Muffins
      2 1/2 cups all purpose flour
      2 tsp baking powder
      1/4 tsp salt
      1 cup sugar
      1/2 cup shredded coconut
      1 cup buttermilk
      6 tbsp butter, melted and cooled
      1 large egg
      2 tsp orange zest
      1 cup chopped pineapple
      coarse sugar, for topping

      Preheat the oven to 375F. Line a 12-cup muffin tin with paper liners.
      In a large bowl, whisk together flour, baking powder, salt, sugar and shredded coconut.
      In a medium bowl, whisk together buttermilk, melted butter egg and orange zest. Add to flour mixture and stir to combine, mixing only until no streaks of dry ingredients remain. Stir in chopped pineapple.
      Divide batter evenly into prepared muffin cups (cups will be very full) and sprinkle generously with coarse sugar.
      Bake for 16-19 minutes, until a toothpick inserted into the center of a muffin comes out clean.
      Cook muffins on a wire rack for at least 15 minutes before serving.

      Makes 12 muffins.

    We are going berry picking again this week (kids love it). Hopefully, we get tons of good fruit because that was my menu inspiration for the week:

    Monday: strawberry pancakes and bacon
    Tuesday: grilled chicken breasts over arugula with raspberries
    Wednesday: takeout
    Thursday: steak tacos
    Friday: honey glazed salmon, garlic bread, salad
    Saaturday: BBQ if the weather is nice—burgers, sesame noodle salad, mixed berries

    With all these berries, i’ll definitely be baking. Im making a berry pound cake and organic pink lemonade cupcakes. For the cupcakes, i just prepare organic vanilla cake mix with a few changes. I use half organic lemonade and half fresh raspberry/strawberry juice instead of water. I also stir in a splash of heavy cream for richness, as i always have that on hand for buttercream frosting.

    Not sure if I should confess about the layer of white that covered the lawn and roof on Saturday am. The rain washed it away and soccer season began as scheduled later that afternoon in rain and 4 degrees (Canadian Celsius style). It took two blankets and two jackets but I managed to stay on the sidelines for the whole game. I always figure if my kids are out there in shorts it is the least I can do.

    So the menu this week is about the return of two kids with mad soccer schedules and our gloomy weather…not much BBQ or anything fun going on outside…other than soggy sideline watching! I hope the sun returns soon.

    Saturday: Enchiladas (adults) & Grilled Cheese (kids)
    Sunday: Out with friends
    Monday: BBQ burgers (only a 60% chance of rain)
    Tuesday: Men – eggs and farmer sausage (Mom away for the night)
    Wednesday: Double soccer right after piano Take-Out
    Thursday: Chicken quesadilla
    Friday: Homemade pizza (specialty of our home chef…can’t wait)

  11. I lived just North of Miami for 20 years.. PLEASE head to Padrino’s Cuban restaurant in Hallandale!!!) (go up A1A NOT 95! I suggest you have the Vaca Frita (with rice beans and plantains) and tres leches for dessert!!!

    Chicken Noodle Soup with Toast for Big Daddy who is feeling a big down.
    Sloppy Joes and carrot sticks
    Wings, carrot and celery sticks
    Pasta with Meatballs and garlic toast

    • Wow, this week’s menu got completely sidelined by MiniMe and Me contracting Big Daddy’s virus. Not Good.

      Replace every meal above with Chicken Noodle Soup, Ramen Noodles, or Chicken Broth and toast.

      I might be able to do Chicken enchiladas by Saturday. ole. ugh

    Looks like we are having a lot of sandwich type dinners this week as I prepare for finals. Easy for me, probably not so exciting for the hubby and kids.

    Sun- Beef tips in mushroom gravy over rice

    Mon- “Gourmet” Grilled cheese, soup and fruit salad

    Tues- BLT’s Fries(for the kids) and Onion Rings (adults)

    Wed- Spaghetti and mozzarella stuffed meatballs, salad and garlic bread

    Thurs- BBQ Sammies, cole slaw and baked beans

    Fri- Quesadillas

    Sat- Probably make a “real” meal since I don’t have class, something like Chicken Fried Steak, taters and corn.

    2 weeks left in the semester and I cant wait to have a break, who knew going back to school at 31 would be so hard!

    Friday – Homemade pizza or take out depending on how we’re doing with the party cooking.

    Saturday – First Communion Party (I’ve spent about 3 weeks making as much of the food ahead as I could.)

    I got an early start on my garden here in Houston this year. Homegrown produce in this menu: Zucchini, yellow summer squash, green beans, tomatoes, thyme, parsley, basil, sage, turmeric.

    Monday-Indonesian Shrimp Gule(coconut milk and spices) Green Beans, Jasmine rice
    Tuesday-Salmon Croquettes with remoulade,summer squash sauteed in olive oil with garlic & thyme, green salad w/ tomatoes.
    Wednesday-Grilled marinated chicken, oven roasted potatoes with sage and garlic, broccoli.
    Thursday-Spaghetti and meatballs, broiled parmesan zucchini.
    Friday-Lemon butter tilapia, rice pilaf, green peas.
    Saturday-leftovers
    Sunday-Roast chicken, mashed potatoes, gravy, garlic zucchini ribbons.

    It’s a weird week to say the least therefore the odd menu.
    Sunday: Hot Head Burrito takeout (newly opened here — but not as good as Chipotle!)
    Monday: Pierogies, chicken sausage, pears, cauliflower and broccoli
    Tuesday: The 15-year-old and 16-year-old jokingly said ice cream when I asked what they want for dinner so that’s exactly what I’m doing. Husband is out of town and the kids don’t think I’m serious but we’re going to the local ice cream place for dinner.
    Wednesday: General Tso’s tofu with green beans.
    Thursday: Tortellini veggie bake (Pinterest recipe).
    Friday: BLTTAs (bacon, lettuce, tomato, turkey and avacado) with watermelon and cantaloupe.
    Saturday: Maybe burgers? I’m hoping for good weather to grill out.

      Can you tell me about your phyllo fish sticks?

      Sorry, just saw this now… I use haddock, cod, or tilapia, cut into strips. Use 2 sheets of phyllo dough per stick, place short end to you – brush w/ melted butter – put fish on sheets, fold over the long sides & roll it up. use melted butter to seal. bake seam down on a non-stick sheet. brush lightly w/ butter before baking. about 20-25 min at 400 degrees. recipe is from the William Sonoma “cooking together” cookbook. serve w/ tartar sauce for dipping.

  39. Have fun! I’m sure Owen will be quite the hit at the party! :)

    We’re all finally over the cold, flu, sinus infection, and bronchitis that have been plaguing our house the last few weeks…now just trying to beat heartburn and swollen cankles. Little man is set to make his debut in 3 weeks, so I’m doing a lot of freezer cooking this week (well, depending on the cankle discomfort anyway.)

    Here is our menu:
    Monday-Homemade Baked Mac and Cheese, Steamed Carrots (froze a pan)
    Tuesday-Slow Cooker Chicken Burritos, Green Salad (freezing a batch)
    Wednesday-Turkey Bacon Paninis, Chips, Fruit
    Thursday-Meatball Sandwiches, Chips, Fruit (freezing a batch of meatballs)
    Friday-Pizza. No promises it will be homemade. Frozen or take out most likely…and don’t judge if there is no side :)
    Saturday-family birthday party
