Today I am on a plane…flying home…from this place…

Owen and I got to go to Miami for a few days to attend the Mom 2.0 Summit with my DailyBuzz Moms team. It was a blast…especially the closing night party at the Versace Mansion. Yup, Owen has been to a party at the Versace Mansion. How many 7-month olds can say that? Too bad I’ve ruined Cinco de Mayo for him for the rest of his life…don’t think he’ll ever be able to top it!

It’s really hard to think about a menu right now, but I’m pretty sure that we’re going to have to eat dinner this week!

it is really lovely there – it’s sort of off the beaten path down on key biscayne, kind of a drive to everywhere else, but definitely more peaceful b/c of that. the beach was kind of small and lots of seaweed, but beaches are always changing so it may not always be that way. the hotel is super pretty and the pool area looked like lots of fun. and it’s right on the beach…which is the best thing about it, in my opinion – vacation spots should be right on the beach!
My little girl turns two this week. Almost impossible to believe!

I haven’t planned a menu in so long! We have been getting ready to put our house on the market and now that my husband is travelling for work, he isn’t home during the week. So the kids and I have been mostly scrounging or going to the store before dinner. YUCK! Anyhoo, we listed the house and it sold in THREE DAYS!! So now I can relax a little more and plan a menu. But that will have to be next week because I am so exhausted that we will eat hot dogs and grilled cheese and leftovers for the next few days
congratulations on selling the house – that must be a huge relief!!!

the girls gave owen a very enthusiastic welcome home – it was very cute! when it came to me…well they were more interested in what was in my suitcase, little stinkers!
Forgot this was Teacher Appreciation Week…making chicken enchiladas w/ green sauce & beef enchiladas w/ red sauce for teacher potluck lunch on Wed. Also decided to make individual cherry crumbles for dessert this week.

Miami is a wild, fun place.

Our Menu I’m vegan (with the occasional vegetarian lapse) the rest of the family is meat eaters so I make everything vegan take out my stuff and then prepare the rest for them. It works for us!
Mon: black bean and sweet potato tacos, with spanish rice
Tues: Spaghetti (with meatballs for hubby and girls), roasted green beans, garlic toast
Wed: red beans and rice with cornbread (with some veggie)
Thurs: Swedish meatballs with noodles and roasted brussel sprouts (for me pasta w. white beans and spinach and brussel sprouts)
Fri: Calzones and raw veggies to munch
Sat: Sandwiches (me: smashed chickpea and avocado, hubby: hot ham and cheese girls: pepperoni) with tomato soup
Sun: Moms day so grilling burgers (homemade black bean for me: regular for the rest of the family), and my sister and mom are bringing sides but don’t ask me what
yes, he was – pretty crazy! the house is unreal…you just can’t believe it was someone’s home. and miami is a fun, wild place…I can’t believe how many neon lights there are and how all the palm trees are lit with blue lights!
and, yes, owen and I both stuck our feet in the water! it was actually the first time I’ve touched a warm ocean…I’ve always been in the northeast or california, and that florida water is AWESOME!
fun I lived in the florida panhandle for a while the water is warm there so I can’t imagine how warm in miami.
What a fantastic trip! How fun for Owen — those will be great photos for him someday
My husband and I have talked about going to Miami for a vacation but haven’t done it yet — I’m a little concerned it’s going to be a bit too nightclub-y for us. So our vacations this year are both California ones (Northern for the family one and LA for the husband and I).
Anyways, on to the menu:
Sunday: Grilled pizzas with salads and pears. We made a sausage, mushroom, and roasted red pepper one; a roasted red pepper, spinach and pepperoni one; and a prosciutto, asparagus, yellow beet, goat cheese in a garlic sauce one. YUM!
Monday: Crockpot chicken teriyaki with brown basmati rice broccoli (track meet followed by band concert = definitely equals a crockpot meal!).
Tuesday: Tikka marsala tofu and chickpeas with sesame green beans and mandarin oranges.
Wednesday: Leftovers.
Thursday: Zucchini, onion, and corn enchiladas.
Friday: Not sure — husband will be gone traveling. Oldest will be working so the younger two and I may do something easy like hot dogs and crudite.
Saturday: Husband will be back so date night for us!
Sun: Grilled chicken in the best marinade…to die for…if you want it I can send it to you, couscous, steamed swiss chard from the garden.
Mon:Crock pot pork chops simmered in an awesome soy sauce, ketchup, garlic, honey mixture, rice, green beans
Tues: Leftover pea soup and bread
Wed: Fish tacos…this marinade is yummy and I grilled in my gill pan, delish. I didn’t put the adobo sauce in my dressing, not a fan, but did the rest.

Here it is. My friend found it in a Runner’s World magazine years ago. Her husband makes it by the gallon to keep in the fridge for summer bbqing. I just make when needed. Let it marinate a while, I usually do overnight even though there is lemon in it and some people say not to marinate long with lemon. I do and we are fine.
Awesome marinade
For 1 lb chicken, double as necessary. I will often double and use for 3 pounds, it should be enough.
¼ c soy sauce
¼ cup orange juice
3 minced garlic cloves
2 TB olive oil
2TB lemon juice
1 tsp oregano
1 tsp worchestire sauce
½ tsp pepper
½ t paprika
1TB parsley
I put this all in a Ziploc, add chicken, marinate a day or two flipping Ziploc from time to time. I also put the Ziploc in a pie plate so it doesn’t leak in my fridge.

Well, last week everything got so turned around… only about three things were actually made from that list! With, MIL cooking one night, take out another night & hubby & I finally getting a DATE NIGHT! That was so worth it! Hope this week settles down!

I froze a bunch of stuff last week, and this week will be no exception. I have 2 weeks worth of meals for after baby (37 weeks now), but am aiming to get a month’s worth. We’ll see!
Sunday- Grilled Jalapeno Bacon burgers with Avocado Slaw and Feta Dressing, Fries, Green Salad. (So. Ridiculously. Good.)
Monday-Beef Burritos, Beans, Chips and homemade guacamole. (making extra beef to freeze)
Tuesday-Bacon and Spinach Omelettes, Fresh Fruit
Wednesday-Spinach, Pine Nut, Bell Pepper Pasta, Green Salad, Garlic Bread
Thursday-Soup and Sandwich, TBD (Tomato Soup and Grilled Cheese perhaps?) (extra soup to freeze)
