Happy Mother’s Day, my friends. I hope you have a lovely day honoring all of the great women in your life. Lucky for me my mom is actually here with us this morning, which is such a great thing! Nate and Anne (my sister) are busy in the kitchen making a wonderful brunch…including this fruit salad, which was a true labor of love!

I can’t believe I’m sitting here posting a menu on Mother’s Day. My dream Mother’s Days are those where I do nothing…Nate likes to call it “Mother’s Day Off.” But the more compulsive side of my personality simply can’t let a Sunday morning go by without a menu going up!
Although, I am just going to copy and paste last week’s menu. I’ve never done that before! But, as you learned on Friday, I did not cook this past week and didn’t ever get to the grocery store. We’ll see if I can get back on track this coming week.

Monday: Garlic parmesan chicken from freezer with roasted broccoli
Tuesday: Eggplant Parmesan (cheese-less for me) and peas
Wednesday: Dinner at church
Thursday: Beef stroganoff (from freezer) and leftover eggplant parmesan with veggies
Friday – Sunday: Disneyworld!
On my last week of maternity leave, I’ll be making up some “goodies” to have on hand:
– Packets of dried beans cooked up and ready for hummus/enchiladas/etc!
– English muffins
– Enchilada sauce
– Hamburger/hot dog buns

Almost. There. 38 weeks today, and fatigue has hit me like a anvil on Wile E. Coyote. So, I’m relying on my crock pot this week. We have plenty of freezer meals, but I’d rather save those for once he comes

Monday-Pulled Pork Sandwiches, Coleslaw, Roasted Potatoes w/Spinach (we picked our first sampling of purple potatoes from the garden this morning!)
Tuesday-Pulled Pork Sandwiches, Coleslaw, Roasted Potatoes w/Spinach
Wednesday-Grilled Cheese and Tomato Soup (my 3 year old can’t get enough homemade tomato soup, and it freezes well)
Thursday-Pasta in some form…pesto maybe?

Impressive. I think I quit cooking by 38 weeks. It was probably more like 36 weeks when I quit cooking. Your menu looks great. Grilled Cheese sandwiches are my favorite. Good luck and get some rest.

Wed: Breakfast for dinner – eggs, bacon, mushrooms, tomato

Sat: Lamb falafels, hummus, pitta, salad
Sun: Were watching the olympic torch relay through our city so will probably eat out.

Tuesday: Chicken _____. I’m not sure what it will be, but we’re definitely having chicken.
Wednesday: I’m traveling, so its FFY (fend for yourself).
Thursday: I’m thinking seriously about this being a pizza night.
Friday: Dinner with the inlaws.
Saturday: TBD, as is many a meal on Sunday.

Monday ~ Asian Marinated Baked Chicken, steamed rice, green beans. Depending on what time the hubby gets home from work, this might get adapted for the grill instead of the oven.
Tuesday ~ turkey burgers, sweet potato fries, zucchini/onion/mushroom kebabs
Wednesday ~ Matt’s honey mustard chicken on the grill, couscous, something green
Thursday ~ panko crusted tilapia (from the freezer), mashed potatoes, broccoli
Friday ~ Grilled NY Steaks (from the freezer), sides to be determined
Saturday ~ out with family friends
Sunday ~ TBD, my mom will be in town. We’ll see if the weather holds up so we can grill again or if we end up going out.

For some reason, this week’s menu was hard to be inspiring, but once I got some inspiration, I quickly filled out this week and most of next week too.
Sunday: Sea scallops with herb-butter sauce, orzo pilaf and roasted green beans and asparagus.
Monday: Chicken-bacon pesto sandwiches with Indonesian veggie salad with peanut dressing.
Tuesday: Pasta with roasted red pepper sauce.
Wednesday: Leftovers.
Thursday: Mushroom and spinach quiche with mixed green salads.
Friday: Calzones with spinach and pea salad (either doing tomato, pepperoni and mozz or ham and cheddar).
Saturday: Giada’s salmon cakes with quick pickled green beans and herby cucumber salad.
Monday – Grocery store after dinner, so I think I’ll make spaghetti or some other pasta
Tuesday – I’ve never made risotto, but I think I’m going to try it today! I’ve found some recipes online, but can’t decide on one.
Wednesday – frozen pizza
Thursday – Cheese stuffed shells
Friday – crockpot chicken for chicken tacos.

My husband made a wonderful grilled turkey dinner last night for Mother’s Day dinner, so we’ll be eating turkey for the next couple of days and freezing the rest.
Monday: Summer Chili over steamed brown rice
The chili will be made with turkey, corn, bell peppers, onions, and white beans.
Tuesday Whole-Wheat Pasta w/ turkey & spinach
Wednesday: Leftovers
Thursday: Grilled Halibut foil packets w/ tomatoes, olives, basil, & oregano over couscous
Friday: I am teaching a Desserts Cooking Class, so my dinner will consist of banana chocolate cream pie, strawberry-mascarpone granita, and individual berry crumbles.
Saturday: Grilled Santa Maria Tri Tip, bake potatoes w/ greek yogurt & sautéed shrooms

I’m really excited about this week’s menu! We’re trying lots of new things (like broiled artichokes and paella) so it’s going to be a fun week of food.
Sunday: Mother’s Day lunch… I cooked red chile enchiladas, latin yellow rice, puerco beans, salad, and a molten lava cake.
Monday: Grilled lemon garlic rosemary chicken, spinach tortellini tossed with fresh parmesan, broiled artichokes, salad.
Tuesday: Everyday Food’s quick veggie fajitas with leftover beans and rice from Sunday.
Wednesday: Skinny chicken alfredo with broccoli and roasted squash/zucchini.
Thursday: Roasted chicken sausage with veggies (onions, carrots, bell peppers, potatoes, grape tomatoes).
Friday: date night out with my husband! TBD.
Saturday lunch: Martha Stewart’s Easy Paella.
Saturday dinner: baby shower!
Sunday lunch: Light frito chili pie wraps, roasted or grilled broccoli.

I finally got my menu up on my blog. I have been working on it (or rather, putting it off!) all morning. I feel like I’m in a rut…that we eat the same types of things all the time, but I scour recipes, and it’s just that I’m picky and these are the things we like. And, I’m trying to lose weight as well, so it seems like every other meal we have is chicken. Which is okay. I like chicken. I’m not even tired of it, it just feels lame to post the same things all the time, compared to the other great and diverse menus I see (but I’m breaking my own rule to NOT compare your menu to others…lol).

Monday- I grabbed take out. I work till noon, gave the dog a bath. I had a haircut and then Ayden (my dog) and I had our first training class. Class last an hour and I will be taking it for the next five weeks.
Tuesday- Roast chicken in the crockpot, Stove top, and random veggie.
Wednesday- Spaghetti and meatballs, bread or rolls.
Thursday- Not a clue, working till six. (MLB)
Friday- smoked pork chops, Stove top, more random veggies
Saturday- Roommate in charge. If she is working I will probably do some form of a stir fry.
