I had to dig deep for inspiration this week. But, after poring through the last couple weeks’ worth of everyone’s menus, I think I found some yummy dinners!
Sunday: Eli’s Asian Salmon and sautéed kale (with ginger and garlic)
Monday: Meatballs and pasta
Tuesday: Individual pizzas with tons of pepperoni and black olives for everyone!
Wednesday: Dinner at church.
Thursday: French Onion Soup (Smitten Kitchen)
Friday: Bistro Chicken (TWFD)….gotta see what all the fuss is about!
Saturday: Out.

I keep meaning to write and tell you that we LOVE the bistro chicken! Made it for the first time 2 weeks ago and it’s back on my menu for this coming week. SO easy and everyone enjoyed it, even my picky 7 year old. Winner!
With soccer tryouts and dance recital practice over we are back to eating at home this week

I have no clue week
I don’t feel like cooking and we just found out my youngest got a hairline fracture in her ankles growth plate so lots of carrying her around till we go back for the second xray and consult.
monday: sloppy joes, homemade fries (regular and sweet potato) and mac n cheese (lentil sloppy joes for me)
tuesday: chicken, mash potato, veggie (I’m having baked sweet potato, and a big salad)

Good luck! My daughter broke her ankle on a trampoline too, no long term issues and overall a pretty easy recovery. She was 13 at the time.

Our CSA starts Wednesday, so I’m only planning the days between now and then — after that I’ll plan from the basket contents. I’m so excited!

Loved the photos from Carmel — we’re out in northern California at the end of July for a family vacation so I’m definitely looking for restaurant ideas so your post was perfect. We’re staying in Big Sur & Santa Cruz, Yosemite, Lake Tahoe, and then ending with a few days in San Fran (cramming a lot into eight days!). So you have a favorite (teenage-friendly) restaurants in the area, that would be fantastic!
Sunday: Grilled sausages with peppers and onion, grilled veggies (portabellos, yellow squash & zucchini)
Monday: Garden burgers, panzanella salad and kale chips
Tuesday: Trying a Pinterest recipe of crispy potato soft tacos — not sure on sides yet.

Friday: Buffalo chicken eggrolls with salads and not sure what else.
Saturday: Husband wants to use his smoker early for Father’s Day so we’re doing pulled pork and chicken and I’ll make mac and cheese with a green bean feta salad.

S: The Daughter’s birthday party. We opted to go easy this year with pizza. It’s going to be Goldfish-themed. Not the animal, but the cracker. It’s about the only thing she eats with regularity. Multiple Goldfish flavors for a nosh and The Wife is going to do cupcakes with decorated with the cookie-flavored Goldfish.

I actually planned out a menu this week (I plan Friday through Thursday). It is our last “real” week here in our home of the last seven years. By next week we will be in our temp home while our new home finishes construction. After planning the menu, I did a little packing and packed up ALL my ovenware! So I had to run out and buy some disposables and rearrange a few nights LOL

gotta love turmoil, eh? I find when our schedule gets crazy and then finally calms down a bit, being able to cook dinner at home is such a relief.
Wow, it has been so long since I’ve posted a menu. I think we’ll be having the following this week and I’m not sure what we’ll have on what days, so here is the list:

*chicken bacon ranch wraps
*BLTs
*fried chicken, green beans, mac & cheese
*steaks on the grill, corn, potatoes

I was also being lazy today and decided to buy one of those veggie trays that they have already done up at the grocery store so I can just put those out at either lunch or dinner as our veggie. I hardly ever buy them because I think it’s silly to spend that much on the pre-cut/washed veggie tray when I could separately buy the veggies cheaper but I had surgery on my foot last week and am trying to make things as easy as possible.
I hope your recovery is going well and you shouldn’t think twice about buying that veggie tray!
Not much cooking going on this week as my husband and I have overlapping work trips.
Mon: Chana masala and naan bread (from the freezer as husband’s away)
Tue: We’re both away
Wed: Husband fends for himself (I’m betting he’ll get pizza!)

Wednesday: Spaghetti with meatballs and mushrooms (and some grated zucchini!).
Thusrday: SkinnyTaste Mediterranean Chicken Kabobs over salad with tzatziki sauce, grilled corn on the cob.

Though my baby is already 3 weeks old (I was baking bread from scratch with baby #1 three days postpartum), we were faced with some unexpected, and serious health concerns, so this is the first week I’ve really planned a menu and gone shopping!
