Yesterday I ordered a Blurb book of some of my Instagram photos. Because my friend Moosh did it. And that means it’s cool. ANYWAY…as I was going through my Instagram photos deciding which ones to use, I was once again drawn to this shot.

How is it possible I took that photo with my phone? It blows me away. iPhone magic aside, are those not the cutest little girls ever?
School starts Tuesday! We are super excited around here for a new year, although I’m a bit scared of getting back into life with a schedule. It’ll be good for me, I’m sure, even if painful!

we love friday night pizza night at our house! My kids especially love it because it’s the only time that they get to drink pop (though sometimes it’s Kool aid because I forgot to buy a 2 liter that week!) I love it because if I had a tough day at work, I can stick to my menu plan with a little help from papa murphy’s!

Tuesday – We have a boatload of eggplant from our own garden and the CSA. So, I’m cruising Pinterest now for eggplant recipes. Right now these Eggplant Arancini are looking pretty good. I think the kids would even eat them. Served with a green salad.
Wednesday – First night back to coaching for me so we need a make ahead dinner. Since we’re supposed to get arugula in the CSA, I’m thinking this pasta with arugula and white beans will be perfect!

Saturday – Another CU game for Scott, so I’m thinking of a ladies and kids night fiesta! Quesadillas on the grill, guacamole and chips and lots of margs!

I think I’ve finally organized the menu for this week. We had a rib-off with friends at our house yesterday so all my planning went into that. Just winging it for tonight before I go to the store tomorrow.
Sunday: Dinner at the ballpark with a stop for wings after the game.
Monday: Rib-off at our house: grilled, smoked, and baked ribs, a dill potato salad, homemade baked beans, garden salad, fruit salad, cupcakes, and cake. Delicious!
Tuesday: Chicken sausages, leftover potato salad, big green salad (to counteract all the bad-for-us stuff we ate on Monday).
Wednesday: Late cross country meet so easy leftovers.
Thursday: Summer hash to use up all the great garden veggies. Over easy and scrambled eggs on top.
Friday: Lasagna with turkey sausage, tofu, and spinach. Side salads and garlic bread. All eaten really early so we can head to the first home football game of the season.
Saturday: Sister in town — thinking of Mexican so I can make homemade tortillas for the first time — so excited to try them!
