We had a little more time this morning than usual, so I decided to do something fun with our pancakes. I tried these cinnamon roll pancakes that I found while reading blogs for DailyBuzz Moms. The kids loved the novelty of putting frosting on their breakfast and little Owen couldn’t stop eating!

I can’t believe another week has already passed! I mean, really, Halloween is just a few weeks away. How is that possible?
MONDAY:

TUESDAY:
- Caprese salad (it’s tomato season where we live, CSA is overflowing with tomatoes!)
- More crusty bread
WEDNESDAY:
- Turkey sandwich with cranberry and cream cheese
- Chips and fruit

- Eat out after soccer practice
- My truly GUILTY pleasure, The Vampire Diaries, is back on air…a sinful dessert to celebrate, perhaps?

- Green Noodles (a humble name for an amazing dish)
- Salad
I actually went grocery shopping yesterday, so I have all my ingredients up through Thursday ready to go. I may have to make this a weekly practice since grocery shopping during the week is proving to be too difficult lately. It feels much less stressful going into the week with food already on the shelves!

So weird…I’m also making Chicken Soup w/ Rice tomorrow because my 4-year-old is fascinated with the book just as I was at his age. He asked me to please make enough to serve to his entire classroom.

I was fascinated with that book when I was small, too! what is it about that book that pulls you in…that’s sweet you’re making it for him!

I go shopping on the weekend too…makes it so much easier to have everything on hand when it’s time for dinner. On really good weeks, I go ahead and prep as much as I can too, but rarely does that happen

Monday- almond parmesan pork chops, baked potatoes and sauteed zucchini
Tuesday- Italian chicken, pastasides, and garlic green beans

I feel like grocery shopping is always my biggest barrier to getting my menu actually cooked…I used to hate shopping on the weekend, but I think I’m just gonna have to start doing it – it’s so much better!

Oh my gosh. Back from vacation today and I don’t wanna go back to work tomorrow!!!! So, needless to say, I had to dig deep to come up with my humble menu for the week.

Tuesday: Individual fritatas with CSA veggies
Wednesday: Baked pasta with veggies

Friday: Homemade calzones (it’s been on the menu for a couple weeks…we’ll get to it yet, I swear!)

I shop on Saturdays all by myself. It’s awesome. It used to be a family affair but then my son now refuses to sit in the cart so it’s not fun nor productive to bring him. It does feel good to start the week out ready to go.

This week, I arrived at my favorite grocery store at 8:00 am on Saturday and practically had the place to myself. Ususally I don’t go there because it’s so crowded. I guess I’ve got a new routine, which may help my menu planning that has not been the greatest recently.
Sunday: Pork chops, mashed potatoes, creamed kale
Monday: Out
Tuesday: Something easy, it’s my Bunco night
Wednesday: Ground turkey tacos
Thursday: Crock-pot buffalo chicken sandwiches
Friday: Sauteed filet tips and mushrooms over rice

We LOVE going to the store at 8am on Saturday or especially Sunday (with everyone in church). It’s so peaceful. But sometimes the produce and meat sections aren’t fully stocked. Still, it’s worth it
We make cinnamon swirl pancakes all the time. Our method is a little different. Search for it on Try It You Might Like It if you’re interested. I just finished watching season 3 of Vampire Diaries so I could be caught up by Thursday. Can’t wait to find out what happens.

lol… My fiance and I both LOVE The Vampire Diaries!! But it’s a little embarassing to share with your friends that you’re watching a show about teenagers and vampires when you’re almost 40.
This week is a short one. We are headed to Denver Tuesday night for a week of wedding appointments. We have appts with photographers, 3 caterer tastings, & 3 bakery tastings. Gonna be a tasty week!!

I am so fortunate that I am a freelance editor and writer so I can go to the grocery store Friday mornings, which I love (as much as one can love grocery shopping). I can stock up for the weekends and typically have enough for the week, with maybe an occasional trip to the smaller neighborhood store.
Sunday: We had shrimp pot pies with leeks, peas, redskins, and mushrooms.
Monday: Corn chowder with crusty bread.
Tuesday: Cheesy spaghetti squash bake with salads and green beans (that I need to use up).
Wednesday: Leftovers.
Thursday: Pierogies with chicken sausages and roasted broccoli.
Friday: Martha Stewart’s tuna nicoise sandwiches (made a head of time so we can make it to an away football game).
Saturday: Out to dinner to celebrate my husband and two of my sisters’ birthdays!
