Look at this pear! It’s a mutant! Seriously, the one on the left itself is a little larger than normal, just to give some perspective. I think my organic CSA farm is using growth hormone in their pears. Scandal!

Sunday- chicken w/ peppers- 5 ingredients and super easy! Toss 3 red bell peppers w/ salt pepper and evoo. top w/ 6 chicken drumsticks and season well. bake at 425 for 30m covered and 25m uncovered. Serve w/ rice or bread to soak up the “yummies”
Monday- leftovers
Tuesday- Easy sausage supper and garlicbread- Toss 1/2 a butternut sqash, 1 red onion and 4 sausages. bake for an hour.
Wednesday-bacon chicken bites, wild rice, veg
Thursday- Fennel roast pork tenderloin, pita, salad
Friday- garlic chicken wraps, tomato soup

Ive made them a few times and we absolutely love them! They are great for parties, potlucks, game day and anytime you want some bacon goodness.

I made the taquitos with chicken and some with black beans and sweet potatoes (mostly because I had some that needed to be used up). Haven’t tried them yet, but they sure looked and smelled delicious!
I’m scheduled to be induced on Wednesday, the day after my birthday, so I’m taking it very easy this week.

Monday- Trader Joe’s Mandarin Chicken with broccoli and rice
Tuesday- Carb rich birthday dinner with a little glass of wine. Woohoo!

Sure! It is a hamburger casserole. Here’s my mom’s recipe: (this is an old
recipe; I don’t use “Spry” which is/was a brand of shortening … I don’t
add any oil at all; and I don’t like green peppers very much so I don’t add
nearly as much).
Texas Hash
(original)
2 large onions, sliced
2 green peppers, cut fine
2 T Spry
1 lb hamburger
2 c tomatoes
1/2 c uncooked rice
1 t chili powder
1 t salt
1/4 t pepper
Cook onions and green pepper slowly in Spry. Add hamburger and fry until
brown. Add tomatoes, rice, and seasonings. Put in casserole. cover and
bake 45 min. serves 8. (I add about a cup of shredded cheddar; some in the
dish and some on top).
(no oven temp is given – I would assume 350)
My mom also used to make this recipe minus the green peppers and instead
stuff whole green peppers with it and bake until done.

I’ve made Texas Hash for years, but like it better without the tomatoes, green pepper and chili powder. So, I add 1 cup of broth or water and season with summer savory and basil. I just stir the rice into the hamburger mixture, let it saute for 2 or 3 minutes, then add the liquid and seasonings and cook it on top of the stove for about 20-25 minutes at a simmer.
I need to get planning for Thanksgiving too! We split up the cooking between everyone but I love to try new things.
Just the kids and I this week with two band concerts and an evening meeting for me. Very easy meals for the first part of the week.
Sunday: My in-laws were in town and took us out for sushi — my favorite!
Monday: Tortellini and turkey sausage with roasted broccoli.
Tuesday: Baked potato bar with turkey ham, bacon, broccoli, scallions, and cheese. Served with bbq chicken chunks.
Wednesday: Leftovers.
Thursday: Lighter tuna noodle casserole.
Friday: Turkey meatloaf with carrots, peas and mashed potatoes.
Saturday: Two kids are gone, husband is taking the oldest son out, so I get take-out for myself. Not sure what yet, but something yummy.
Sun: 40 Cloves & A Chicken from Alton Brown. It’s from an early episode, and wasn’t nearly as good as it looked on TV. Plus French bread & brussel sprouts w/bacon
Mon: Coconut Red Lentil Soup over brown rice, naan
Tues: Chicken & Wild Rice Casserole and honey lemon carrots
Wed: spaghetti & meatballs, garlic bread, green salad
Thurs: meatloaf, Pioneer Woman’s Crash Hot Potatoes, steamed cauliflower with cheese sauce
Fri: Pad Thai, cucumber salad, fresh pineapple
Sat: tacos & refried beans
