Week 306 Menu

Hi, everyone! My menu is super late today. And I don’t have a photo. Because we’ve been at war. At least it feels like it. We were up all night with Owen, including a trip to the ER where we found out he has croup. So, Nate and I started the day out completely dazed, exhausted and overwhelmed…and then I found lice in one of the girl’s hair this morning. Because we didn’t have enough to worry about. Thank GOODNESS my sister is in town and it’s the weekend or I don’t know what we would have done!

MONDAY:
- Chicken Piccata
- Mashed potatoes

TUESDAY:
- Butternut Squash Soup

WEDNESDAY:
- Take out (swim lesson night)

THURSDAY:
- Leftovers

FRIDAY:
- Kitchen Sink Quesadillas

SATURDAY:
- Cate’s birthday party! I’m sure we’ll grab a bite somewhere when the party is over!

SUNDAY:
- Waffles

  1. Jane, I hope your kiddos are doing better soon and that you and your husband get some much needed rest.

    My husband has taken to having soup once a week. Tonight he made Italian Wedding Soup and he LOVED it. I’m going to suggest your Butternut Squash Soup for next week. Thanks for the recipe and I look forward to your Broccoli Cheese Soup recipe!

      We love soup, too. We tried this recipe last week and it was amazingly delicious. I can’t remember where I got the recipe, could have been from a previous post here, so please feel free to credit it if you recognize it. Enjoy!

      Italian Bean Soup
      6 Servings

      1 medium onion, thinly sliced
      1 small potato, peeled and finely chopped
      1 celery rib, chopped
      2 tablespoons olive oil
      3 garlic cloves, minced
      3 cans (14-1/2 ounces each) reduced-sodium chicken broth (or veggie)
      1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
      1 can (14-1/2 ounces) Italian stewed tomatoes, undrained
      1/4 cup minced fresh parsley
      1 tablespoon prepared pesto
      1/4 cup uncooked orzo pasta
      1 cup fresh baby spinach
      1/4 cup grated Romano cheese

      In a Dutch oven, sauté the onion, potato and celery in oil until tender. Add garlic; cook 1 minute longer. Stir in the broth, beans, tomatoes, parsley and pesto. Bring to a boil. Stir in pasta. Reduce heat; cover and simmer for 10-15 minutes or until pasta is tender. Add spinach and cook just until wilted. Sprinkle each serving with cheese.
      Yield: 6 servings (about 2 quarts).
      Nutritional Facts 1-1/3 cups with 2 teaspoons cheese equals 224 calories, 8 g fat (2 g saturated fat), 6 mg cholesterol, 1,029 mg sodium, 29 g carbohydrate, 5 g fiber, 11 g protein.

    • We eat soup once a week too as it is a Swedish tradition! I suggest trying a curried parsnip soup, the recipe I use is from an Australian cookbook but I am sure there are tons online!

  2. Oh gosh!! Sounds like a rough weekend! We’ve had a revolving door of grandparents and both parents traveling for work over a two week period. I’ll be glad when it’s over!!

    Sunday: out for Mexican
    Monday: Christening a new slow cooker with a pot roast!
    Tuesday: Grandparents, Dad and kids are on their own!
    Wednesday: Pumpkin pancakes
    Thursday: Tacos with leftover, shredded pot roast
    Friday: Homemade calzones
    Saturday: At a friend’s house learning about Hanukkah with the kids! Latkes!!!

    I don’t plan for a specific day; I just plan 4-5 meals and then make what I feel like for the day.

    $2 Subway subs, chips, pickle spears
    sloppy joes, mac and cheese
    Hot Chicken Salad casserole, lima beans
    Brats, german potato salad
    Sausage, veggies
    Green Chili Chicken casserole

    Wow, sorry to hear about your rough start to this week! I hope Owen is feeling better, the lice are zapped quickly, and you all catch up on well needed rest.

    Sun: Chicken Pizziola with a side of pasta, salad
    Mon: Fried pan fish my husband caught, baked fries, peas, cole slaw
    Tues: Roasted turkey breast, stuffing, carrots, and pumpkin pie (we went away for Thanksgiving & had no leftovers & no pumpkin pie. I need to make up for that!)
    Wed: Leftovers
    Thurs: Chicken & rice soup….making extra for the freezer
    Fri: Shrimp Caesar salad, fresh baked rolls
    Sat: Out

    Oh no! I hope Owen recovers quickly and the lice are contained and terminated rapidly!
    This is what I hope to make this week, but not sure which nights yet. Some of the meals are frozen/ pre-prepared, which I’ve been saving for when I’m especially tired.
    - Pasta + broccoli + Trader Joe’s chicken sausages
    - Creamy Shrimp with Coconut Rice and veg stir fry
    - Lentils and rice with peas and carrots
    - Chicken corn chowder
    - Blackened salmon with ????
    - Polenta with Chili

    I read this every week and never post. But I had to just because we ended up with a similar situation as you. So first off, I am soooo sorry you have had to deal with any of this. That is tough. I really hope you are able to get some rest and take care of yourself and the kiddos and everyone recovers quickly. Lice alone is insane! I have a recipe that was really effective on lice and can send you the information if you send me an email.
    Menu for the week:
    Sunday: Hot dogs, Mac n Cheese and Veggies (A little last minute throw together)
    Monday: Enchiladas
    Tuesday: Ballet Night- Take Out Burritos
    Wednesday: Turkey Dinner with the fixins’ we didn’t cook this year and didn’t have leftovers so we are making our own.
    Thursday: Baked Potato Night with lots of yummy toppings
    Friday: Pita Pocket Sandwiches (filled with Turkey, Cheese, Lettuce and Tomatoes with a touch of ranch to make it extra tasty for my girls)

    Sun- Fend for yourself…buffalo chicken salad for me.
    Mon- White bean soup w hamhock and corn cakes.
    Tues- Ground chicken spaghetti with veggie noodles, garlic bread and salad
    Wed- BBQ chicken, corn on cob, potato salad and baked beans
    Thur- Amish food Day… got any good traditional Amish recipes? I have an Amish obsession. Chicken pot pie(amish noodle), applesauce and friendship bread
    Fri- Homemade wood fire grilled pizzas…bbq chicken, onion jam and pineapple w balsamic glaze and slaw and chicken thai peanut chicken with slaw and sriracha sauce
    Sat- Chinese take out… kung pao chicken, yummo!
    Sun- Crock pot roast, smashed potatoes, green beans and corn clover rolls

    Saturday: My best friend’s daughter’s birthday party…. Hubby and Boys are on their own. Lasagna from the freezer, breadsticks, salad

    Hi. So sorry to hear about all the chaos currently going on at your home. My mom likes to tell the story of how she broke down in tears the one and only time my sister and I came home from school with lice. Apparently there was an epidemic at school, and apparently, my mom was scarred for life. It sounds like you are handling it much better than she did. Good luck with everything! Here’s our menu in no particular order:

    Red beans and rice, salad
    Succotash over brown rice, braised red cabbage
    Egg, spinach, and cheddar casserole, grits, fruit
    Quinoa, beans, greens, and cornbread

    Sunday: Amber’s Award-Worthy Chili (This is from my freezer-exchange club. Two of my friends and I started doing this a few months ago. We each make four dinners’-worth of two meals, keep two for our own freezers, and give one each to the other two participants. This way, we each get four dinners a month that we don’t have to cook (and have four meals frozen that we did make ourselves)! It’s SO awesome; especially if your friends are good cooks.)

    Friday – first Christmas party of the season – appetizers for us, pizza for the kids probably.

    Poor little guy! My 4-year-old son also came down with croup this week. He lost his voice for 3 days…that’s forever to a 4-year-old! All is well with us now & I’m hoping all is well for you soon also! :)

    I can empathize about the croup. Poor Owen. Both my kids would get it with almost every cold in the winter. The cool mist humidifier is your friend but cool night air works fastest. It’ll be 4 days then back to normal. He will grow out of it. Hope your week gets better.

    Tuesday: fish tacos…we cheat, we use frozen battered fish, my husand loves them, rice, cauliflower (I know that veggie doesn’t really go with the meal but it was on sale)

    Thursday: Leftover mole..yay, with only three of us home now, we get leftovers

    I am so sorry that your family had a rough weekend. I am so thankful that neither of my kids had croup! Now, 7 and 17. My 17 year old told me that her friends think our family is “weird” because we have dinner together every night. She told me she was glad we do. Made my heart swell. So I guess I better collect recipes and keep up the weekly menus! Thank you for the help. SO glad I found this blog. I love to cook but hate to figure out WHAT to cook.

    Wed – spicy garlic lime shrimp (we’re trying shirataki noodles for the first time)

    Jane – been there/done that – on all fronts, sadly.

    Magic cure for lice: mayonnaise – thickly applied, shower cap on top, slept in overnight. Then when shampooing the next morning, remember to use some lemon juice to help cut through the slime. We tried it all – and this is what worked. FYI – this was when our kids were teensy, and at that stage in life when baths with lots of toys were considered a reward. We would up the ante on the funnest bath toys ever to get every last minute out of that cleansing shampoo!

    and thank you for the tips, commiserations, well wishes, and happy thoughts…the week is still a little crazy, but nothing will ever beat sunday! I was in quite a state when I put my menu up! but things are getting better :)
