Week 311 Menu

Happy New Year!!! I hope you all had a great week! We took a little trip down to San Diego and had a lovely time. I forgot just how amazing the weather is down there. Wow. We are lucky we get to move back!

With a week of family visiting, celebrations and travel, we have eaten out a TON and are sick to death of restaurant food. I am definitely getting back into the kitchen this week, despite the disastrous state of our home and all the organizing and packing that needs to happen in the next two weeks.

MONDAY:

- Grammy’s orange chicken

It’s the new year and I’m hoping some of you have added meal planning to your list of resolutions! Here’s a little plug if you haven’t. Meal planning is a GREAT resolution – easy to track, easy to do, and makes life so much better! You should totally do it! :) Now that I’ve gotten that out of my system, back to business. It’s your turn to share your menu for the week! Can’t wait to see what you are all eating!

      Will you share the recipe for the Mexican chicken bake? We are always looking for New Mexican recipes!

      Gosh, it is so very unfancy- it’s one of our go-tos for busy nights. Basically Trader Joe’s Burritos (chicken verde, chicken and bean or just bean) cooked using the microwave directions then put in a baking dish and covered in salsa. Into the oven at 350 for about 30 minutes then cover in shredded cheese and broil until melted. Serve with cilantro lime rice.

  6. Jane, I don’t envy you having to pack up your house to move. I’m having some serious loathing with just packing up Christmas decorations! :)

  14. I’ve been away for a while, so congratulations on the move to San Diego. I was there last winter for a conference and really liked it. The Gaslight District was pretty neat and very walkable and the San Diego Zoo was massive.

    Must try for you and the husband is Slater’s 50/50 in Point Loma (http://a1dente.wordpress.com/2012/02/16/slaters-5050-point-loma-calif/), home of the 50% beef-50% bacon burger. They also have a 100% ground bacon burger. It sounds disgusting, but the food is quite excellent.

    Last year my resolution was to meal plan. I created a google doc for my grocery list that has the days of the week on top for meals. I also created a binder with my favorite recipes, the list haddock stuck the binder not so much.
    My resolution this year is to prep for my meals on Sundays so I can be more efficient during the week and I find it is easier to stick with my menu if a lot of the prep work is already done (chopping veggies, mixing spice mixes, cutting up meat) I started in mid December. I got myself some more tupperware to hold things so I can streamline.

    Your blog helps me so much! I don’t post my menu all the time, but I definitely check in every Sunday to see your menu (and whenever there is a new post)
    Good luck with yiur move. I’m in Los Angeles, so I know how much nicer the weather can be down here!!

      well, I don’t like doing whole posts with just announcements about myself, so I buried the announcement in a weekly menu post. so, yeah, probably not the best way to announce the move!

      so, yes, we are moving back to san diego! nate is done with his post-doc at stanford and has found a great job down there. SO sad to leave bay area, but we lived in san diego before and loved it there…it’s a good thing. and so, the next two weeks, packing, packing, packing!

    Finally back to creating a weekly meal plan after weeks of birthdays, holidays and parties. It was hard at first, but I’m thrilled to be back in a routine.
    Sunday: We had super-garlicky shrimp pasta with a spinach side salad.
    Monday: Sesame-ginger-soy tofu over Asian noodle salad with a side of cumin zucchini.
    Tuesday: Calzones with side salads
    Wednesday: Leftovers
    Thursday: Some type of soup with wild mushroom and swiss flatbreads.
    Friday: Turkey chili with cornbread. Side of broccoli.
    Saturday: Miso-glazed salmon with sides TBD.

    Good luck with the packing — the thought alone of having to pack up our house is enough to make declutter all the time.

    Ack, I need to get on track! It is almost 4:30 here and I don’t have any idea what I’m making tonight. I have ground beef and chicken breast in the fridge. Hmm.. I will have to browse through everyone else’s menus.

      tacos are a good sper of the minute dinner if you have everything. if not chicken over rice with a can of crm of any soup in the oven for 30-45 minutes on 350.

    Sausage, sauerkraut, and some vegetable my family will eat (they probably won’t eat the sauerkraut – but I love it)

    New Year’s resolution…USE THE CROCKPOT!…it’s been out of the box for months just hasn’t been used yet…seeking inspiration.

      roast and steaks in the crockpot are the most tender meat ever. but we even made our thanksgiving turkey in our crockpot, a whole turkey breast, 1 stick of butter and some salt. cook on low for 10 hours. so in the morning before work then when you get off and done running around you eat. you can also do mashed potatoes in the crockpot, but they only take 4-5 hours so better on seperate days. my mom does cheese fondue in her crockpot, i havent tried it yet. but so many ideas. i think i might do crockpot stuffed peppers next week for my husband.

      I haven’t ever done steaks in the crockpot before – what an interesting idea! roast for SURE in the crockpot, so yummy. and that’s so fun you did a turkey breast in there, too! you are the crockpot queen, stephanie! good inspiration for both susan and me and everyone else :)

      Oh yea. Crockpot steaks make it a no knife dinner. We have to spoon out the meat most of the time but tender enough my 3yr old and 5 yr old love it. Husbands favorite way too.

    ok we get paid every 2 weeks so to make sure we can afford the food the second week we buy 2 weeks of groceries at a time. we have a family of 5 so gets expesive. so here is what i have so far,
    tue(tonight) left overs
    Wed tacos
    Thursday finish leftovers and roman noodles
    friday beef stew over rice
    saturday lunch blts
    dinner meatball subs and fried potatoes
    sunday lunch
    dinner
    monday red beans and rice with corbread (read that on here and it sounded good)
    tuesday waffles and fruit salad
    wed porcupine meatballs over rice with extra sauce
    thursday ravoli with lithwainian alfrado, and breadsticks
    friday crockpot steaks and loaded baked potatoes.
    still have to figure out that one sunday and one more week of food. but if i get it figured out soon i will add it too.

      then at the end i am doing clean out the fridge day saturday, all day of leftovers.
      sunday brunch
      dinner crockpot stuffed peppers for my husband, and deluxe potatoes for me and the kids. then crockpot chocolate wonder for desert.
      monday ham and bean soup with rice stirred in over bread. or dunk it, either way.
      tuesday turkey breast and leftover potatoes
      wednesday leftover turkey in gravy over noodles
      thursday (probably) frzn tv dinners and then shopping for the next 2 weeks.

  41. Better late than never. Haven’t posted in a while…but the great news is that my son’s surgery is scheduled and we have a bit of a break in tests and therapy until then!

    Here’s what we had this week…I obviously made a big batch of chili :)

    Monday-Chili Spaghetti, Salad, Garlic Bread
    Tuesday-Chili Topped Baked Potatoes, Green Salad
    Wednesday-Smoothies and homemade Focaccia Bread

    Saturday-Lentil Sausage Soup (again)

    And as for the “perfect weather” here in San Diego, it hit 28 degrees here last night!
