Week 318 Menu

We are on our way home today. I just wanted to thank you all for your kind comments and emails regarding my grandfather. It was very sweet and much appreciated. We had a wonderful week together as a family, despite the sad circumstances of our gathering. I feel very grateful for the time we had together.

Le Creuset has a new color called Quince, which you can get at Williams-Sonoma. I am participating in a photo contest with other food bloggers to help show off this pretty new yellow. The blogger who gets the most “Likes” on her photo gets to give away a bunch of Quince goodies. Because of this week’s unexpected travel, I forgot to beg you for votes and I’m pretty sure I’m in last place. If you want to make my photo feel more popular, visit this Pinterest page and “Like” it. Back to the regular routine for us this week.

Sweet Potato and Black Bean Burritos

FRIDAY:
– Take out

SATURDAY:

– Fresh fruit

– Rice and veggie

    Your family has been in my thoughts all week. I have thought of you often, and prayed for peace in the midst of your grief.

    This week my baby is still recovering from surgery, and isn’t allowed to play in his jumperoo for nearly a month, so my weekday meal prep time has been short since he either wants to jump or be held :)

    Sunday-Pioneer Woman Sunday Night Stew w mashed potatoes

    Monday-Lazy Man’s Chicken Parmesan and Garlic Bread (just frozen chicken tenders baked with spaghetti sauce, over spaghetti.)

    Tuesday-Leftover PW stew and potatoes

    Wednesday-Trader Joes Spanakopita and Rice Pilaf with broccoli

    Thursday-Costco Orange Chicken with Rice and Green Beans

    Friday-Homemade BBQ Chicken Pizza

    Saturday-Leftovers

    Monday – Ranch chicken in the crockpot over pasta
    Tuesday – Ham, green beans and potatoes
    Wednesday – Grilled hake, pierogies, broccoli

    Well here’s to a “normal” week for you!

    Mon- leftover gumbo (never got to last week)
    Tuesday- oven fried pork chops
    Wednesday- parm chicken bake casserole
    Thursday- marinaded flank steak
    Friday- boiled crawfish
    Saturday- out to eat – so many birthday parties this day, we probably won’t be home long enough to cook anything!

  8. we are getting a blizzard mon-tues so comfort food and making 3 meals a day for many days. I might go on a cooking strike by the weekend :)

    As usual, I just plan 5-6 meals and make what I feel like each day. I work until 6pm, so I have to cook something that can be baked or re-heated by family as they get home.

    bourbon chicken (new recipe, still haven’t gotten to it), rice
    tacos and Zataran’s spanish rice
    probably Subway ($5 footlongs and Februany!)

  11. I was just looking at some Le Creuset cookware earlier today. They have this light blue color that is really pretty (I’s a sucker for anything blue or green though, somehow I resisted).

    Here is my menu for the week…
    spinach enchiladas
    lasagna bites with salad
    taco pie with spanish quinoa
    asparagus soup with poached egg
    peanut chickpea soup
    grilled cheese and tomato parm soup (since I didn’t get to it last week)

    We had a really lazy weekend, and I enjoyed every minute of it. That being said, we didn’t even go to the farmer’s market or grocery store, so we are eating up what’s in the house this week, and hoping it gets us through the whole week (lunches and dinners). Here’s the plan in no particular order:

    Italian Veggie Pie, roasted brussel sprouts (Yes, it’s still on the menu. Please don’t let my delay in getting to it make you think it is a reflection on the dish itself, because it really is awesomely delicious!)
    Veggie Chili (from the freezer) and grilled cheese sandwiches
    Succotash over brown rice, broccoli
    Quinoa, white acre peas, collard greens

    Wednesday – dinner at church
    Thursday – homemade pizza
    Friday – leftovers
    Saturday – out
    Sunday – who knows!

    Liked on pinterest. I know I should be more than satisfied with a full (inherited) set of le creuset pans, they really are fab, but all the new pretty colours make me wish mine weren’t all red!

    Tue: Mushroom pizza, salad
    Wed: Broccoli, leek and taleggio filo pie, green beans
    Thur: Pasta with tomato sauce, salad
    Fri: Hubby’s working late so not sure. Maybe veggie crumble.

      that’s how I feel about my KitchenAid mixer, which is white and I”m sure will run until the day I die….but there are all those pretty colors now, and GLASS BOWLS. so pretty. I mean, I’m so grateful for my mixer! ;)

      foil dinners ? is this where you put protein and veggies in a foil pack and bake ? i tihnk i heard about these once. they seemed easy for a weeknight meal ?

      Yeah, for the foil dinners, I use a ground beef patty (whatever size you feel suits you) and then add any veggies that sound good. When we did it last week, I used chopped carrots, chopped red potatoes and sliced red peppers. I seasoned it with a little seasoning salt and Montreal steak seasoning. Wrapped it all up in foil and baked it at 350 for about 45 mins. I’m sure you could also sub a chicken breast for the ground beef. Either way, easy and delicious!

      great idea ! i love dinners that are in the oven for a short period of time so that i can do other things instead of being stuck in the kitchen !

    I’ve been loving looking through everybody’s meal plans for inspiration for some time now, so I figured it’s time I finally share my own!

    Sun – turkey, stuffing, green beans, squash, cran sauce, gravy
    Mon – grilled chicken caesar wraps
    Tues – leftover turkey and cran sauce sandwiches
    Wed – ham, spinach & cheddar quiche w/crispy roasted taters
    Thur – hamburgers, pickles, fruit salad, s’mores cookies
    Fri – I work late, either DH makes pizza w/kiddo or else leftovers

    Glad to hear your back, it’s always nice to be with family. Even in those times.

    Well nothing last week worked out, we stayed with grandma, since she was sick. So most of this is a repeat of last weeks Unmade menu.

    Sun: Take out Pizza
    Mon: Roasted chicken, mac and cheese, veggie & cornbread (MIL cooked)
    Tue: Meatloaf, mashed potatoes & veggies
    Wed: Chicken tostadas & mexican rice (maybe corn?)
    Thur: Goulash
    Fri: Shrimp omelets, hash browns & toast
    Sat: B: Waffles w/ strawberries, sausage & OJ
    L: BLT & chips
    D: TBD (Hubby will probably cook)
    Dessert: TBD (That’ll be me)
