It’s just me and the kids this week. So, I’m definitely looking for ease of preparation (more than usual!). And, I’ve geared the dishes more to my tastes, thank-you-very-much!

Last week the new recipes weren’t so hot, so this week we’re having some known faves.

Wed. Pork tamale casserole (from cooking light)
Thu. American chop suey (I love this stuff, dh hates it and he won’t be home for dinner
Fri. Homemade pizza or leftovers (I work late)
Nice easy week of guaranteed hits for us. Plus my girl and I will try Baked Blueberry Coconut Oatmeal & No Bake Granola Bars (both from two peas and their pod)
what is american chop suey? also do you have a link the blueberry coconut oatmeal and no bake granola bars?
the oatmeal is AMAZING!
What I grew up with as American Chop Suey is basically ground beef cooked with onion then simmered for 20 minutes or so with a smsll can of tomato sauce and a 15oz can of diced italian herb tomatoes. Then add in cooked macaroni and optional corn and eat once warmed through, or if you’re like me cook it another 10 minutes or so till the macaroni are really soft and saturated with the sauce. It’s comfort food straight out of childhood for me.
The coconut blueberry oatmeal we just tried and it was great. The bars didn’t work as well for us but we okay. Both are from this website http://www.twopeasandtheirpod.com

Sounds like a great menu this week. The cake looks yummy I’ve never had that type of cake.
This week my youngest (Giggle Girl) is turning 7 and she has her 1st grade musical. But all this is up in the air since she has a fever. Thinking its that weird fever flu thing that is going around.

That tres leches cake looks AMAZING! I am definitely making that sometime this week (maybe Thursday for Friday’s dinner?).

Tuesday: Ham or turkey and spinach paninis with roasted broccoli and butternut squash.
Friday: Fish fry with the family.
Saturday: Date night at a restaurant I’ve been dying to try — so excited!
And since I just decided to skip several days this week (I wish!). . .

Thursday: Coconut chicken and tofu with gingered carrots and snow peas. Served with naan.

I am glad to be back at menu planning. Figure out what we had and wanted was started to drive me nuts. A roommate heads back to work this week as well.
