Week 332 Menu

Last night Nate had a surprise date planned. Months ago he told me to get a babysitter for June 1 and that it would be a late night. I didn’t find out what we were doing until we were driving in the car last night! He did a great job keeping the surprise.

So…where did we go? To see Imagine Dragons! I have to tell you about it because it was so much fun. The lead singer Dan is our friend’s brother, so it’s been really fun to watch their meteoric rise since the first studio album came out last August. It’s quite stunning, actually. Last night’s show was amazing and they are better live than on the album (not all bands can boast that these days…these guys are legit musicians, which became apparent watching them play). We randomly ended up sitting next to another band member’s mom and his two aunts. Ryan’s mom told us how she loves telling people that she got him guitar lessons in 5th grade and that he’s been devoted ever since. You could tell the family was so excited and delighted for the band, a bunch of nice guys that they love. And when Ryan spotted her in the crowd near the end of the show, it was so cute. At one point when the crowd was singing the lyrics, you could tell Dan was in disbelief. It was really sweet. Dan’s wife’s band Nico Vega opened for them. She was crazy in a really great way and a total rocker, plus her voice was amazing. The best part, though, was when she brought their headphone-wearing 10-month-old daughter on stage for a kiss. The entire crowd chorused with “Awwwwwww.” It was such a fun night, filled with positive energy and great music. Thanks, Nate!

    That looks like a wonderful night, I’m glad you had fun.
    I’m happy that the lettuce in the garden is coming in. We eat a lot of it so it is good for the grocery bill.

    I regularly cook dinner only on Sunday, so I cannot say what’s for dinner this week. However, I can take a shot at saying what’s for dinner this month. If I write some of my ideas down, perhaps I won’t forget them.

    I haven’t posted in awhile. Lacrosse season was hectic and meal planning didn’t really exist. So here I go again:
    Sunday – it has been in the 90s and I was craving bbq chicken and macaroni salad (with tuna).
    Monday – ground turkey sloppy joes
    Tuesday – salmon packets
    Wed – out with a friend
    Thur. – those chicken enchiladas look so good. Minus the cilantro.
    Fri – retirement party
    Sat – out with in-laws

    Sooo… Jealous, we love love music and they are great!
    I haven’t had a menu in a couple of weeks due to a badddd broken foot and juggling doctors appts and 5 kiddos! So, I’m back… sort of, I’m in a knee scooter..but I can cook!

    Sun.- Cuban pork, black beans and rice
    Mon.- LO.. Cubanos, black beans and fries
    Tues.- Pork chops, stuffing, broccoli and apples
    Wed.- Pasta carbonara, salad and bread
    Thurs.- World cuisine Wed..moved to Thurs this week. Danis
    Fri.- Homemade pizzas…. variety
    Sat.- Crawfish boil
    Sun.- something in the crockpot…for meeting schedule. All ideas welcome

    Just now looking back on my meal plan I realize that we have several meatless meals planned. Last fall I set out to find several and these are some we have come to love. However, I am finding we are in a rut with these, using the same ones over and over. I think it is time to look for some more.

    How fun! Love Imagine Dragons and would love to see them live. We are surprising our kids (teenagers) with a concert this summer β€” The Killers β€” I can’t wait to see enjoy the experience. There’s nothing like a really good live show πŸ™‚

    We are heading on vacation at the end of the week so my goal is pretty simple and easy with little leftovers (or easily freezable leftovers!)
    Sunday: Grilled chicken with mango-roasted poblano salsa. Served with roasted fingerling potatoes and asparagus. Made wonderful rhubarb-strawberry-crystallized ginger bars for dessert β€” delicious!
    Monday: Sweet and sour chicken over rice with roasted broccoli.
    Tuesday: Leftovers quickly as it’s eighth grade graduation!
    Wednesday: Last day of exams for high schoolers so we’re celebrating with friends over β€”Β pizza and cupcakes too!
    Thursday: Ranch house crockpot pork chops served with salads and whatever other veggies & fruit I need to get rid of.
    Friday: Lentil and brown rice salad with feta. Served with whatever else we need to get rid of!
    Saturday: Eating at Dogfish Ale House in Falls Church, Va. on our way down to OBX.
