Week 347 Menu

I am already making our second batch of homemade granola bars! I can’t believe how many we went through in just three days. I think having six guests and two soccer games this weekend may have had something to do with it!

I’m feeling a bit under the weather and not really wanting to sit here at the computer planning a menu, so I’m pounding this out as fast as I can!

MONDAY:
- Bistro Chicken
- Mashed Potatoes + a veggie

TUESDAY:
- Chicken Soup with Rice

WEDNESDAY:
Chicken Croissants (got moved to this week)
- Veggie

THURSDAY:
- Leftovers

FRIDAY:
- Take out

SATURDAY:
Homemade pizza (Hawaiian and Honey Goat Cheese with Caramelized Onions)

SUNDAY:
- Waffles
- Fresh Fruit

    I made the granola bars today too! But I didn’t put enough oil and they just crumbled…at least I think that’s what happened. Gotta try again!

      bummer! (although that would make some yummy cereal!)

      I think the trick for me was to make sure it cooked long enough (without overcooking, of course), but then letting them cool before cutting. the longer they cool the more they “harden” and stick together. I cut too soon the first time and they started to crumble a bit, so I stopped, waited, and then I didn’t have the problem. don’t know if this will be helpful at all. good luck!!!

      catherine and I have been emailing and there are really two tricks – when you form the rectangle before baking, be sure to press it all together really well, even though it seems dry and hard to do. then don’t cut them after baking until they’re totally cooled.

      and, yes, probably need to put enough oil and honey! hopefully it works for you the second time around! :)

    We just returned from vacation….started in Yellowstone and worked our way across Wyoming with our grand finale at Mount Rushmore. Beautiful!

    Back to reality and menu planning. I read the 1st granola bar post during our flight home and bought the ingredients this afternoon. Can’t wait to make these. I really like the combination of oats and chocolate.

    Sun: Tuna sandwiches, baked french fries
    Mon: Meatloaf, mashed potatoes, green beans
    Tue: My birthday!..Dinner st my parent’s house
    Wed: Chicken pot pie, salad
    Thu: Leftovers
    Fri: Football game…eat at the food stand

    So I have had a few life changing events (went back to work after 4 years home and then my mom died in labor day) and I have not been cooking, but I’m guessing at some point the family is going to need me to start cooking again, right?

    Sunday- Mother in laws house for chicken parm and eggplant parm and baked macaroni
    Monday- grilled steaks and corn
    Tuesday- meat sauce and spaghetti
    Wednesday- yummy honey chicken thighs with jasmin rice and broccoli
    Thursday- leftovers
    Friday- waffles and fruit
    Saturday- chicken sausage gumbo

  13. We LOVE homemade granola and granola bars. In honor of the season, I swap out the oil for pumpkin puree and add pumpkin pie spices. Aaaaahhhh (that is the sound of angels singing)!

    Sunday: Lettuce cups and “smorgasbord de la fridge”

    Monday: Burgers on the grill with homemade buns

    Tuesday: Pad Thai 

    Wednesday: Yorkshire pudding

    Thursday: Chicken and pineapple on grill

    Friday: Homemade pizza

    Saturday: Out

      Do you use this same recipe that Jane uses or do you have a specific one. The pumpkin smells are running around in my brain and I am already smelling my house! If it’s not a similar one… Could you share.

    • I substitute canola oil/honey for:
      ½ cup pumpkin puree
      ¼ cup applesauce
      ¼ cup maple syrup

      Then, I go crazy with the cinnamon (1T), ginger (2t), nutmeg (1t), & cardamom (1t). I add 3/4 cup candied ginger (teensy dice) if I’m feeling especially pumpkin-y.

      Thank u so much. I made the weelicious ones, but used nuts and raisins instead. I tossed in some cinnamon too. Can’t wait to try the pumpkin ones! I love pumpkin…Starbucks Pumpkin Latte here I come!

      Just wondering how big of a can of pumpkin? I have a large can…surely not half of the big one. Thanks

    Here it goes – my first time to post! My husband and son are big meat-eaters, while my daughter is vegetarian and I eat only minimal meat. So I try to plan meals that are still full without the meat.

    Sunday: Spaghetti, garlic bread, salad (I got too lazy to make the salad, so hopefully another night)

    Monday: Fish tacos with fruit salsa, rice, and black beans

    Tuesday: Steak, baked potato, baked beans (this might be a good night for that salad)

    Wednesday: Southwest crock pot chicken over rice with tortillas

    Thursday: 4-bean crock pot chili with corn bread

    Friday: Tacos

    Saturday: Leftovers and eating out

      I also have myself and oldest daughter who don’t eat meat and then My hubby, and other 4 kids are carnivores! It makes things difficult!

    Thursday: Chicken and shrimp stir fry

    Saturday: My husband and I leave for our honeymoon to Scandinavia!

  29. I made the granola bars yesterday with my daughter and we followed the original recipe, but added a few craisins. They are good, but so crumby. Do you have any suggestions? I was worried after stirring and stirring and stirring and they were still so dry and when I put them on the cookie sheet, I could barely get them to stay in a rectangle form.

      I checked with catherine and she had the same response I was going to give.

      the mixture does seem dry, but when you form it into a rectangle be sure to pat the mixture together really well. after baking, let it totally cool before cutting. when I made them the first time I cut while they were still warm and they were falling apart. I stopped, waited, and it made all the difference.
