Week 349 Menu

When we lived in San Diego previously, Nate would get The Viking chocolate cake from Extraordinary Desserts every year for my birthday. That’s right, an ENTIRE cake. It was decadent and thoughtful and something I looked forward to all year. Then…we moved away. Nate tried with all his might to find a cake in the Bay Area to take The Viking’s place, and, while we found some delicious cakes, nothing lived up to the legend of The Viking. I have to admit, this cake is one of the best things about moving back to San Diego…maybe even better than the weather! Nate got me the cake this week and it was just as good as we remembered! Layers of chocolate cake, chocolate mousse, chocolate pastry cream, ganache and a sweet-crunchy-praline-nutty coating on the outside, The Viking is the best chocolate cake ever. Yeah, I said it.

Enough cake talk. On to the menu! We were supposed to have pot roast tonight, but we made last-minute plans with some friends who are in from out of town, so we’ll have a nice Sunday dinner on a weeknight instead!

    Like always, we have a list of meals but I don’t designate a day since I never know if I’ll have time for something.

    Rotini with Italian sausage, classico sauce, cottage cheese, mozzerella cheese (a kind of lazy/laid back lasagna pasta), garlic bread and salad

    Roast with veggies, mashed potatoes, gravy.

    Macaroni and cheese with ground beef, onions, tomatoes, sour cream, etc. (taco mac?)

    Rice, black beans, fajita chicken, calico corn, cheese, sour cream, avocado, salsa (a burrito bowl)

    Lasagna rollups, pasta sauce, salad, garlic bread

    Breakfast for dinner – waffles, eggs, sausage

    Leftovers

  6. Dinners this week: (I have a goal of getting our 3 year old daughter to eat dinner this week. The past month or so, she’s been happy to go to bed instead of eating dinner. Here’s to hoping she will like some of these dinners!)
    Sunday – Game day food. Nachos with lots of toppings (beans, tomatoes, guac, etc).
    Monday – Homemade fish sticks with an herb dipping sauce and carrot slaw.
    Tuesday – Spaghetti with veggie crumbles, sautéed garden greens, fresh bread.
    Wednesday – Fried rice with veggie chicken.
    Thursday – Breakfast for dinner (taking the easy way out, I know). Pancakes and eggs and bacon, with a fruit salad.
    Friday – Slow cooker veggie chili with cornbread.
    Saturday – Pasta with broccoli and walnuts.

    Any tips for getting a picky 3 year old to eat dinner?

    • Have you tried soups? My picky eater loves soup and will eat almost anything in a soup. Breakfast for dinner is an easy way to sneak in vegs too…pumpkin pancakes, zucchini chocolate muffins, kale and/or spinach in smoothies. Also make-your-own pizzas. I just put lots of vegs in the pizza sauce. Hope this helps a bit. I understand your pain…dinner time is usually the hardest part of the day w/ my lil guy.

    • My “research” shows the more you can have him/her help with preparation, the more likely he/she will eat it! Tearing/spinning lettuce for salad, breading chicken/fish sticks, stirring batter, grating parmesan.

      I second and third the make-your-own pizzas and pumpkin pancakes (see above reason). I found 2 or 3 veggies she’ll actually eat, and I make them all. the. time. I sneak veggie purees and flax in a lot of things too (burgers, mac-n-cheese, pancakes, cornbread, meatballs, you name it!!) Start small and increase over time while cackling “bwahahaha.”

      I’ll say this, just keep letting her go to bed hungry. Eventually she will get it! My little one is finally trying things- she is 6 now. In my house you eat what we eat or you don’t get dinner (or dessert!). It took so long to break her though, she is a tough cookie! Nothing helped either not letting her pick the groceries not helping with prep NOTHING! And she always knew when I was being sneaky with veggies! We are getting there now she will eat most pasta and try the meat. I usually serve fruit instead of veggies and she will at least try it.

      Toothpicks! When each of my kids went through their picky phases, I would just cut or roll the food small and stick a toothpick in it. I know it sounds silly, but they loved picking up the pieces with the toothpick. Still works on my picky 5-year-old when I need her to eat fruit.

    Wow, it’s been a long time since I commented, or meal planned for that matter. I’m trying very hard to get back on the wagon! Now that harvest is finally (almost) over and I can count on the hubbs being home for dinner, this will hopefully get more consistent!

    Sunday: BLT Chicken Salad with warm Bacon Dressing for the adults. Chicken, Veggies, Mashed Potatoes for the kiddo
    Monday: Salmon, Brussel Sprouts, Rice
    Tuesday: Pizza, salad
    Wednesday: CCD Teaching, eat with the HS kids
    Thursday: Off to celebrate homecoming at my husbands college alma mater… CHILD FREE
    Friday: Eating something wonderful without having to cut anything for anyone
    Saturday: More eating of adult only food
    Sunday: Spaghetti and sausages

    OMG! This last week was so crazy. In short my menu this week: nothing. I have no idea. Went to the grocery bought a pork tenderloin and some ground beef. Hopefully I can come up with something using those two meats. My little girl wants pizza and movie night Friday so I guess there is that. Ugh!

    Hi, after coming back from vacation I’m trying to get back into the swing of things. Since I cannot eat gluten, i pretty much cook every single meal i eat so it was soooo nice to have someone else cooking for me on vacation (and doing the dishes!). I had a few mishaps and a few days of not feeling that great but all in all it was a good vaca. Now back to the kitchen (sigh…..)

    Sunday – Tacos (with these horrible corn tortillas that totally fell apart!)

      oh yes…it was great to have someone else do it. i really took for granted the ease of just going out to eat or getting take out but not anymore. i try not to complain to much. I remind myself that i’m in control of my health and there are not many health issues that you can eradicate simply by avoiding a certain food group. for example, a cancer sufferer would love it if all they had to do was give up a food and they were “cured”. someone said that to me once and it changed my perspective. but alas i still whine a lot 🙂

    I think there is an Extraordinary Desserts cookbook that has the Viking Cake recipe in it. You are such an amazing cook, I would love to know if you tried to make the cake yourself if it came out as well!

I don’t know why I never thought to see if karen krasne had a cookbook. you were right and I bought the book as soon as I read your comment! sure enough, the recipe is in there. nate asked if I’m ever going to tackle it. he also suggested that it might not be a good thing that I have the power to make this cake in my hands…we seriously ate the 10 inch cake in one week no problem. scary! 😉

      Hi Nancy. I’m from Ohio and still haven’t made it up to the HOF. Did you like it ? How long would you say the avg. person would want to spend there ? Its funny how they say you never explore your own hometown and in this case its true for me and the HOF.

    I don’t think I’ve posted since school’s started. Things have been crazy but I think we’re finally settling into a routine — life with three busy teenagers is crazy!

    Sunday: We had grilled steaks with avocado, radish and fresh corn salad and grilled asparagus.
    Monday: Spaghetti and meatballs, garlic foccacia bread and sauteed zucchini.
    Tuesday: Leftovers/take out. Two of the kids grab takeout in between marching band rehearsal and orchestra rehearsal. The rest of us typically grab leftovers.
    Wednesday: Orange chicken, brown rice and roasted broccoli.
    Thursday: Our local Wendy’s is debuting the new style of Wendy’s and the marching band members and family get to eat for free during the preview/test run night.
    Friday: Turkey chipotle chili with the leftovers for chili cheese fries during football on Sunday.
    Saturday: Shrimp noodle bowls.

    Dumplings recipe- it’s a staple to our fall/ winter nights.
    4 cups flour
    2 Cups milk
    2 eggs
    1 tsp salt & pepper

    Mix well and use hot spoon to drop into boiling soup.

    Soup-

    Carrots
    Celery
    9 cups stock
    Thyme
    Handful of kale
    Cooked chicken
