Hi all! Is it really time to plan another menu already?

Just a couple repeats from last week because we had lots of leftovers to feast on throughout the week. I always love that!

MONDAY:
– Kitchen Sink Quesadillas
Guacamole and chips

TUESDAY:
– Sweet Korean BBQ Beef Tacos

WEDNESDAY:
– Chicken Stir Fry
– Dumplings

THURSDAY:
– Leftovers

FRIDAY:
– Hot dogs
– Fruit, carrot sticks, chips

SATURDAY:
– Eat out

SUNDAY:
Honey Mustard Grilled Chicken Sandwiches
– Salad

  1. My husband and kids all have that nasty stomach virus that’s going around. Daughter is on the tail end of it, hubby is feeling well enough to sit on the couch, and my little guy is still in the middle of it. I’m so incredibly sick of cooking toast, applesauce, and bananas for meals!

    We were in Las Vegas last week, and had some wonderful buffets–this week will not be nearly that exciting :)

    Sunday-Chicken soup for those who are up for it, Aglio e Olio for me (I’m not sick!)

    Monday-Chicken soup for them, leftover pasta for me

    Tuesday-Scrambled Eggs and Toast for them, Mushroom and bell pepper omelets for me

    Wednesday-Saturday-Hopefully everyone is 100%…I’ll assess the menu then :)

    Mon: tacos/ taco salad
    Tues: baked potatoes w/ bacon, broccoli, cheese
    Wed: Quinoa stuffed peppers
    Thurs: leftovers
    Fri: out or frozen pizza & salad
    Sat: some kind of egg bake or frittata

    Mon: chicken khoresh with rice
    Tues: Kung Pao chicken in lettuce cups, braised kale
    Wed: leftovers

    Sat: leftover pasta

    Sat: Something from the freezer

    My one son is leaving for an adventure with the Utah conservation corp next week. He’ll be gone for a year. So this week is an all request week
    Sunday. Steak, baked potatoes, roasted broccoli and salad
    Monday. Chicken fajitas , black beans and rice
    Tuesday. Ham steak, Mac and cheese and salad
    Wednesday. Beef stew and biscuits
    Thursday hamburgers and fries
    Friday. Leftovers
    Saturday. Pizza and wings at his sister’s house

      that is so neat that your son is doing that – I googled it to see what it’s all about, very cool! can’t believe he’ll be gone a year! tell him good luck!

    Tonight: Spaghetti w. turkey meatballs, sauteed green beans and cheesy bread

    Monday: Potato Soup and homemade bread (polar temps.)

    Tuesday: Homemade pizzas

    Wednesday: Garlic and Herb Chicken, Mash Potato, and Veggies (not sure what)

    Thursday: Red Beans and Rice with Cornbread

    not sure about Fri and Saturday since Friday is payday that also means it’s grocery day.

    Thanks for the recommendation of the Sweet Korean BBQ Beef Tacos. We had them last night and the kids gave them a thumb’s up! I can always rely on you for kid friendly food ideas!

    We are brand new empty nesters…hmmm, going to be interesting trying to cook for 2 and not five!

    Tues: Out for Taco Tuesday with another empty nest couple

    Thurs: Leftover black bean soup and something…hmmmm, cheesy jalapeno bread
    Fri: Salami, cheese, crackers, olives, wine….end of the week relaxing.

    Omg! I have been bombarded at work! I have just been happy to feed my people! This week will be different, I hope!
    Sunday- broccoli cheese soup with French bread
    Monday- baked ziti
    Tuesday- pork tenderloin and potatoes
    Wednesday- honey chicken and rice
    Thursday- leftovers
    Friday-out to eat for my husband birthday
    Saturday-probably out again, I’ll milk his birthday for everything I can get!

  14. Every time I read your menus I think how lucky your children are! Sounds like another great week.

  15. Sunday – Leftover orzo and spinach soup from the freezer and fresh bread.
    Monday – It’s going to be cold! I’m going to try this red beans and rice recipe, with a sub for the bacon. Served with a green salad or veggie.
    Tuesday – Baked ziti with a green veggie.
    Wednesday – Some sort of chicken (fish for me) with a greek couscous salad.
    Thursday – Lentil, kale, and potato soup served with fresh bread. Scott’s not wild about lentils, but this looks very tasty. Maybe he’ll come around…
    Friday – Homemade pizza!
    Saturday – Dinner out or kitchen sink quesadillas.

    Friday: Picky Palate’s Mini Bean and Cheese Burrito Cups with Fresh Veggies

  23. I’m using up a lot of items from our freezer. DH splurged and bought some ice cream yesterday (even though we have some frozen yogurt, I think he was just in the mood for something specific) and I’ll have to buy some salad basics later in the week. Beyond those items, we have everything else already at the house. I’m so glad not to have to do grocery shopping this week. This head cold has really gotten me down.

    Lunch:

    3. Dad’s Meatloaf with Relish (freezer), mashed potatoes
    4. Pizza
    5. Salad
    6. Sweet-n-tangy Pork Loin (freezer), mashed potatoes, beets

    2. Hoisen Chicken Wings (crock pot meal, chicken in the freezer), potato salad, broccoli

    I need to try your Korean Beef Tacos recipe. I tried them once using a different recipe and they were terrible! They were very dry and tough. Your look juicy and tasty, though.

      the tacos are so easy because I use a packet from campbell’s – the meat is SO GOOD. not dry and rough at all, nate and I were fighting over the leftovers! :)
