Week 401 Menu

Today we’re off to ride ALL the trains at Griffith Parkย in celebration ofย Owen’s birthday. Can’t wait to ride some steamers! Before we go, I have to get my menu planned!

MONDAY:
Tuscan Tomato Soup (Anna’s request!)
– Crusty Bread

TUESDAY:
Sweet Korean Beef BBQ Tacos (I have some in the freezer to use up!)

WEDNESDAY:
Chili
–ย Corn chips

THURSDAY:
– Leftovers

FRIDAY:
Turkey Sandwiches with Cranberry and Cream Cheese
– Fruit and chips

SATURDAY:
– Eat out night

SUNDAY:
– Lemon Pepper Chicken (recipe to come)
– Veggie and Rice

  1. This week is a short week for us, my husband and I are celebrating our anniversary with a weekend away, yay!

    Monday: Braised Chicken Thighs with Spicy Kale
    Tuesday: Breakfast for Dinner
    Wednesday: Hamburgers and Fresh Veggies and Oven Fries
    Thursday: Mongolian Beef and Rice and Peas
    Friday-Sunday: Out!!

    Sunday – pizza! buffalo chicken and mushroom
    Monday – salmon and flounder with broccoli and baked potatoes
    Tuesday – Chicken curry and rice
    Wednesday – turkey meatloaf with mashed potatoes and salad
    Thursday- leftovers
    Friday – out
    Saturday – tbd

    Sunday: Zucchini-Beet fritters, tater tots, celery sticks, grapes, and an abundance of dipping sauces.

    Monday: Naan pizzas: roasted red pepper and pepperoni, and BBQ chicken with gouda, red onion, and cilantro.

    Tuesday: Pasta with red sauce (sausage, chicken, roasted red peppers). Salad.

    Wednesday: Homemade chicken soup and grilled cheese. Salad.

    Thursday: Hubby’s night to decide/cook.

    Friday: Chicken curry with chickpeas, peas, tomatoes, cauliflower, and zucchini over couscous.

    Saturday: Hoping for a night out…or at least takeout. I have already cooked all of these meals for today, and all of the child’s lunches. This is Week 8 of “I do all the cooking on Sunday”…and it’s so convenient but very tiring!

  4. I love how when we get to be a parent, everything is for the kids’ birthdays…never mind that your birthday happened to be the same day ๐Ÿ™‚ Anyway, have fun!!!

    I received a new BBQ cookbook for review, with recipes from some of the Southern BBQ meccas, so I’m cooking out of that for a couple days this week.

    Sunday-BBQ Pork sandwiches w Carolina Piedmont Sauce, coleslaw, and Central BBQ baked beans

    Monday-“Redneck Tacos”–shredded BBQ pork, coleslaw, and BBQ sauce layered on corncakes

    Tuesday-Tortellini Soup, Bread

    Wednesday-Leftovers

    Thursday-Grilled Ahi Tuna Sandwiches, Chips

    Friday-Pizza

    Saturday-out to eat

    Sunday: beer can chicken, roasted potatoes & carrots, green beans
    Other meals sometime this week:
    Southwest turkey burgers & grilled corn
    Parsley pesto pasta to use up garden parsley (maybe with leftover chicken)
    Sausage, peppers & Onion hoagies with Sriracha mayo

    Also made for work lunches: quinoa tabouli with chickpeas & feta (also using up garden parsley)

    Happy Late Birthday!!! ๐Ÿ™‚

    We are sort of winging it for dinner this week on some nights.

    Sun – We had a roast, potatoes, corn, cheesecake
    Mon – Hawaiian Haystacks?
    Tues – Oatmeal and muffins. Weird, I know, but sometimes you just need something different that is meatless, but also not refried beans or veggies.
    Wed – my husbands 40th birthday!!! But, he will be coaching that night so we will probably celebrate on Friday. Dinner will most likely be leftovers or it might end up being cake and ice cream. ๐Ÿ˜‰
    Thurs – No idea yet. Maybe baked potato bar?
    Fri – Eat out
    Sat – Potluck with friends

    Sat — quinoa, Apple, cranberry stuffed acorn squash, roasted green beans
    Sun — Guiness beef stew
    Mon — broccoli Alfredo
    Tues — grilled pork chops, sesame noodles, roasted green beans
    Wed — homemade pizzas (veggie & pepperoni)
    Thurs — cream of broccoli soup, fresh bread
    Fri — BFD

    Mon: Chicken curry, rice, zucchini
    Tue: Pasta with broccoli and boursin, green salad
    Wed: Pot pie, hopefully there will be some late green beans left at the allotment to go with dinner.
    Thur: Burritos with cabbage, carrot and lime ‘slaw’
    Fri: Steak, baked potatoes, salad
    Sat/Sun: Going to stay with a friend for the weekend and support her doing her first marathon. I’ll be joining her in the carbo loading but not the running! Taking cheesecake brownies to spoil her afterwards.

      that is sooo nice of you ! i just competed in a race and my sister sent me flowers w a nice note. runners really appreciate things like what you are doing. i think its just the acknowledgement that someone understands the time and effort that is put into a race. ive never done a marathon i cant even imagine !!!!

    Sunday – Ham, green beans and potatoes
    Monday – Stuffed cabbage soup, crusty rolls
    Tuesday – BFD Sausage, egg and cheese on muffins, hash brown potatoes
    Wednesday – Chicken salads w/garlic bread
    Thursday – Pizza, salad
    Friday – Pesto grilled cheese sandwiches with l/o cabbage soup
    Saturday – Leftover ham, green beans and potatoes

  11. When I planned this menu last week, I included a ‘To-Be-Determined’ day and a ‘Try A New Recipe’ day. Honestly, they were two days I did not have meals for so I planned spontaneity. It usually works out and helps keep the menu from feeling oppressive.

    My husband did tell me this morning, “I want to try this recipe.” Then he sat the paper down and walked off. So, we have a recipe, I’m just not sure what it is yet. ๐Ÿ™‚

    I’m also doing tomato soup this week ! Here’s my GF menu for the week
    Sun – Flank Steak Tacos
    Mon – Chicken Stir Fry w Quinoa
    Tue – Tomato Basil Bisque in Crockpot
    Wed – Chicken w Spicy Rub & Roasted Brussel Sprouts (never had roasted brus sprouts before – hope i dont hate them!)
    Thu – Leftover Soup
    Fri – Pasta w Sausage & Basil
    Sat – Pizza for Dinner (Reward after a looooong run!)
    Sun – Thinking Steak/Shrimp Skewers and Veg – anyone cooked this on a grill pan before ? thoughts ?

    Thurs: BFD- egg and cheese sandwiches, fruit salad
    Fri- not sure yet

    Tuesday: Stuffed shells (with sweet potato filling)

    Wednesday: Chicken quesadillas

    Thursday: Dragon noodles (a much milder sauce for the more sensitive in the house)

    Friday: Leftovers

    Saturday: Out.
