Week 404 Menu

It’s Sunday, which means it’s time to break out the pencil and paper and get planning!

I am going to be traveling to Washington, D.C. this week to attend the 2014 AYA Summit with ONE. The summit will be looking at issues affecting women and girls in developing countries. I majored in International Relations, with a focus in developing countries, and minored in Women’s Studies, so I think it goes without saying that I am SO EXCITED for the summit! My dad is coming to town to help with the kids, so he and Nate will be holding down the fort. When I was in 3rd grade, my dad and I were home alone for a week and he made spaghetti every night. I made sure to add it to the menu in honor of that week! 😉

MONDAY:
– Cream of Mushroom Soup
– Crusty bread and salad

TUESDAY:
– Loaded Nachos
– Guacamole

WEDNESDAY:
– Spaghetti
– Salad and garlic bread

THURSDAY:
Naan pizzas (these are our new English muffin pizzas, just as easy but yummier!)
– Salad

FRIDAY:
– Leftovers

SATURDAY:
– Eat out

SUNDAY:
Swedish Pancakes
– Smoothies

  8. Back home after *another* week of traveling. Glad to be home for a while. Please don’t throw anything at me, but I’m starting to look for Thanksgiving dishes this week.

    Sunday: Family birthday dinner – Roasted chicken, balsamic brussel sprouts, roasted butternut squash with parmesan, rolls
    Monday: Burgers on the grill with homemade buns
    Tuesday: Daughter’s choice for her birthday – Homemade pizza and cauliflower rice
    Wednesday: Stuffed shells (filling: sweet potatoes)
    Thursday: Spicy turkey nachos
    Friday: Leftovers
    Saturday: Out

    My husband and I were talking yesterday about how our meal plans have changed since we were first married. We liked the same foods then as we do now. The difference is that we now make them at home instead of going out to eat them at restaurants. Not only is it cheaper, but also healthier – there is a lot less sodium in the meals I cook.

    Lunch:
    Eat Out
    Dad’s Meatloaf with Tomato Relish, mashed potatoes, peas
    Chipotle Chocolate Chili
    Spaghetti and Meatballs
    Superfast Salisbury Steak, rice, steamed carrots
    Salad
    (out of the house, lunch is served)

    Supper:
    Leftovers
    *Healthy Slow Cooked Tikka Masala, rice, green vegetable
    Veggie and Cilantro Hummus Sandwiches, chips, apple slices
    *Pasta Casserole
    Falafel, fresh vegetables and couscous
    *Twice Baked Breakfast Sweet Potatoes
    New Recipe or leftovers

    • I have seen that trend in our lives, too. for example, stuff I used to buy half pre-made from trader joe’s I now make from scratch and never buy from them anymore. I think we’ve made a good evolution!! 🙂

    your story makes me laugh ! my dad watched us once when my mom was out of town for work and we had fast food and pizza a LOT 🙂
    Here is my GF menu for the week. I am doing my first 1/2 marathon on sunday so there is some carb loading here!
    Sun – Chicken Parm Meatballs and Salad
    Mon – Apple Brie Quesadillas
    Tue – Crockpot Chicken Taco Soup
    Wed – Chicken and Roasted Broc w side Quinoa
    Thu – Leftover Soup
    Fri – Steak w Roasted Sweet Pots and Leftover Quinoa
    Sat – Pasta w Al fresco Chicken Sausage
    Sun – Pizza and ice cream and running rewards 🙂

  12. Been lazy in planning my menus the last couple of weeks. Just can’t seem to get on top of life now that homeschooling is in full gear…I promise this week I’ll do better 🙂

    Tuesday-Chili and Cornbread, Fritos

    Wednesday-Dinner out for my father in law’s bday
