It’s that time again…weekly menu planning time!

This year for Easter we’re going crazy and heading to Sequoia National Park! I’m going to plan an Easter picnic for Sunday and I am actually really excited.

MONDAY:
– Homemade Hamburgers (there’s a tip in this podcast episode for how I’ve been cooking hamburgers lately)

TUESDAY:
– Chili

WEDNESDAY:
Chicken Caesar Wraps

THURSDAY:
– Leftovers

FRIDAY:
– Eat on the road! Visiting Sequoia National Park for Easter Weekend!

SATURDAY:
– Eating on the road

SUNDAY:
– I’m packing an Easter picnic to eat at Sequoia…any suggestions for food that would be fun for that, please leave them in the comments, with links if you have ’em!

  1. Sounds like a great weekend trip! I like pasta/quinoa salads, crudite, hummus, and deconstructed sandwiches for picnics.

    Sunday: Buffalo cauliflower bites
    Monday: Roasted butternut squash soup
    Tuesday: Asian salmon
    Wednesday: Baked sweet potato in slow cooker
    Thursday: Japanse restaurant miso udon soup
    Friday: Cacio e pepe (pasta, cheese, and pepper)
    Saturday: Out after 4-year old’s birthday party!

    An Easter picnic sounds really fun! I’d keep it simple because you are traveling…..maybe ham sandwiches on Easter bread, pineapple salad, and dyed Easter eggs. Chocolate bunnies for dessert :-)!

    Sun: Turkey, sweet potatoes, green beans
    Mon: Business travel
    Tue: Business travel
    Wed: Western omelets
    Thu: Grilled chicken Caesar salad
    Fri: Tuna melts, celery sticks & apple slices
    Sat: Out before attending a performance of Jesus Christ Superstar. A favorite of ours!

    We’re moving and meals are difficult to plan right now since half of my kitchen is in storage, a quarter of it is here, and a quarter of it seems to be missing… maybe it’s still at the old house. LOL I’m going to have to come up with new dinner ideas because travel time from work will be longer and I won’t be getting home until around 7:30pm – ideas are welcome!

    Tonight we’re having spaghetti, salad, and garlic bread. The rest of the week is a mystery.

    Monday: Black Bean Tacos, Salsa and Guacamole
    Tuesday: Chicken Milanese
    Wednesday: Baked Ziti and Salad
    Thursday: Yellow Chicken and Green Beans
    Friday: Date Night, kids get pasta
    Saturday: Roast Chicken, Carrots and Salad
    Sunday: Easter Dinner–Ham, Fries, Corn and Dessert, no idea what kind 🙂

    Week of 3/20 to 3/26
    (everything mostly is prepped this week…I’m trying to get back on track!)

    Sunday: Roast pesto chicken, roasted new potatoes, and tomato/spinach/mushroom cheese stacks
    Monday: Tuna melts (non-recalled tuna, tomato, and provolone on pumpernickel bagels) and fruit (pears, strawberries, grapes, cantaloupe)
    Tuesday: Family fends! I have rehearsal.
    Wednesday: Pizza baked potatoes
    Thursday: Basil-tomato-garlic ravioli
    Friday: Hmm…I have no idea. Mac ‘n’ cheese, maybe? Or some kind of veggie wrap?
    Saturday: Family fends! I have a show.

    What a great idea to have a family picnic on Easter!

    Sunday – Herbed chicken w/mushrooms, orzo w/spinach, peas
    Monday – Jambalaya pasta w/hot sausage & chicken
    Tuesday – Leftovers
    Wednesday – Cheeseburgers, loaded baked potato pierogis
    Thursday – Buffalo chicken sandwiches, French fries
    Friday – Easy roasted lemon-garlic shrimp over pasta, salad
    Saturday – One pot Italian noodles w/chicken

    Su: we’re on our Spring Break getaway at our Green Valley Lake cabin…but still cooking…beef ravioli & cheese tortellini with marinara/garlic bread

    M: pollo asada tacos/rice & beans/chips & guac

    Tu: chicken marsala/buttered noodles/grilled asparagus

    W: back home…sandwiches or bean and cheese burritos

    Th: crab stuffed salmon/wild mushroom couscous/roasted asparagus

    F: Easter egg decorating! Grilled pizzas and salad

    Sa: my mom is visiting for Easter…heading to Carlsbad for the flower fields and shopping, then to Pizza Port for late lunch/early dinner
