Week 534 Weekly Menu

Hello everyone! Hope you all had a great weekend and that those of you celebrating Passover or Easter this past week have had a wonderful holiday! We sure did, Easter was relaxing and happy. 🙂

Now it’s back to the grind, starting with the weekly menu. (Wow, I really made meal planning sound fun there.)

MONDAY:
– Leftover Easter food

TUESDAY:
Lentil Soup (using leftover Easter ham)

WEDNESDAY:
– Omelettes (using up more of that ham, my family is gonna love me!)
– Smoothies

THURSDAY:
– Pasta with Grilled Chicken, Broccoli and Cream Sauce

FRIDAY:
– Leftovers

SATURDAY:
– Eat out night

SUNDAY:
– Grilled meat of some kind with grilled vegetables

    Saturday – Pizza
    Sunday – Easter dinner at my aunt and uncle’s — I brought garlic and butter green beans and dirt dessert
    Monday – Chili, cornbread, spinach
    Tuesday – Leftovers
    Wednesday – Lemon garlic chicken, brown rice, peas
    Thursday – Turkey tacos, brown rice, peas
    Friday – Leftovers or out

    Not a lot of cooking happening this week, but here’s what I have planned:
    Kale Pesto Pasta with Shrimp and Tomatoes, Salad
    Cajun Red Beans and Rice with Andouille Sausage
    Mushroom and Spinach Quesdillas with Guacamole

    Sunday- just us- we went out for hamburgers!
    Monday – our Monday staple! Salmon, roasted Brussels sprouts, rice and salad
    Tuesday- chopped salad and baguette
    Wednesday- leftovers
    Thursday-stir fry with chicken
    Friday- steak on the grill with grilled veggies
    Saturday- in DC for the science march!

    We had our usual Easter family pitch-in, but this year featured 3 different macaroni and cheeses. So much for coordination! My mother and my aunt each did a variation on the same crockpot mac & cheese recipe, which came out wildly different, which was interesting.

    As for my menu, again I’ll post a link since I’m doing 3 meals a day. But the exciting news is we’re starting to get asparagus coming in from farm! It’s also the beginning of an insane time at work, so I’m doing 3 different crockpot dinners from around the world – Philly Cheesesteak tonight, a Thai green curry tomorrow, and I’m going to try to make Chicken Tika Masala in the crockpot Thursday. This all coming off of a tagine I made Saturday, so Rabat, Philadelphia, Bangkok, and Chandigahr (or Glasgow…) visit my kitchen in a week…

    Hubby is gone on a business trip for the week, so I let my 9-yr-old help with menu planning since it’s just the two of us.

    M: tamales w/ rice and chips & salsa

    Tu: homemade mac n cheese, parmesan chicken nuggets, apple & carrot slices

    W: out on mother-son dinner & movie date

    Th: B4D… French toast, scrambled eggs, bacon, & fruit salad

    F: spaghetti & meatballs w/ salad & breadsticks

    Sa: Bunco night at a friend’s…Making meatball sliders.

    Su: beer can chicken w/ grilled potato wedges & corn on the cob

  7. I’ve been in a cooking rut the past couple weeks. I’m scouring old menus and cookbooks to spice things up a little. Hopefully I can snap out of it going into next week!! I remembered your Indian burritos and had to make them this week. YUM!! That may just kick start things… 😉

    Sunday: Dinner at a friend’s house
    Monday: Parmesan chicken
    Tuesday: Indian burrito (TWFD)
    Wednesday: Blue apron
    Thursday: Individual pizzas
    Friday: Leftovers
    Saturday: Out

    I’m late this week, lost track of time :).

    Monday: Spinach Tortellini Casserole
    Tuesday: Burgers and Home Made Chips and Fresh Veggies
    Wednesday: Hubby’s Birthday–Pulled Pork Nachos and Chocolate Mousse
    Thursday: Beef Wrapped Asparagus Teriyaki Ramen
    Friday: High Tea Sandwiches–Cucumber, Smoked Salmon, and Fancy PBJ options
    Saturday: Guy Fieri’s Red Rocker Margarita Chicken Sandwich and Salad
    Sunday: Stuffed Crust Pizza and Fresh Fruit
