Week 244 Menu

Yes, I’m still here. But we are going to the hospital today…on my birthday! Yup, baby boy will most likely have the same birthday as me. Pretty fun! Wish us luck today!

This week I am not planning a menu. I figure having a baby is a good excuse, right? So, I’m giving myself a break! I’m not even posting a photo today. Take that, Blog.

BUT…you are not off the hook so easily! Please post your menus…please please please! I’m counting on all of you to step up while I slack off!

    Mon — French Onion Pizza
    Tues — Rice, Beans, and Cheese
    Weds — Hot Chile Grilled Cheese Sandwiches
    Thurs — Rosh Hashanah: Sweet and Sour Cucumbers, Chickpeas and Rice with Spinach, Hummus, Pita, Roasted Apple and Pear Sauce, Honey Cake Trifles
    Fri — leftover
    Sat — dinner out

    3. You must have the most comfortable uterus ever. I told my daughter I was evicting her if she got too close to my due date (she came out a week early.) Let’s hope #2 follows the same pattern, but we have another 7.5 months on that one. I’ll start the convincing now πŸ™‚

    Our very-tentative menu this week:
    -Grilled Salmon with Rice Pilaf and the last harvest of green beans from the garden.
    -Chicken Tacos, Black Beans, Green Salad
    -Baked Macaroni and Cheese, Veggies
    -Grilled Green Chili Burgers, Red Potatoes from the garden (our first batch of the season!), Fruit Salad
    -Pizza and Salad
    -Out to Eat

    This is just what I have so far. I may completely change my mind between now and grocery shopping this afternoon. We’ll see πŸ™‚

  6. AHHHHH! SOOOOO EXCITING!!!! Happy Birthday Jane!!! And OMG I can’t wait to see pics of your BOY!! I wonder if you did a lot of freezer cooking within the last few weeks/months to make things easier after baby-boy is here?! Anyway, here’s my weekly menu!

    Sunday – Sloppy Joes, Tator-Tots, Salad
    Monday – Savory Herb Chicken over white rice, & sweetpeas <3
    *note*- My dad calls me sweetpea so everytime I write the word I HAVE to put a heart after it. πŸ™‚
    Tuesday – DH is BBQing Burgers on the grill & we're having french fries (freezer-to-oven)
    Wednesday – Homemade Pizza, salad (using Jiffy crust mix)
    Thursday – Amy's (my) Salsa Chicken Enchiladas, with a side of corn
    Friday – Brown Sugar Glazed Salmon, white rice, & steamed broccoli
    Saturday – Shake-n-Bake Crispy Buffalo Chicken, Chicken rice-a-roni, steamed zucchini

    ::Sloppy Joes:: (Sunday)
    I just use the McCormick Sloppy Joe Packet Seasoning and whatever tomato-paste is on sale.

    ::Slow Cooker Savory Herb Chicken:: (Monday)
    2 1/2 – 3 lb. chicken, cut into serving pieces
    2 envelopes Lipton Recipe Secrets (soup mix) "Savory Herb with Garlic" flavor
    2 Medium red bell peppers, cut into 1-inch cubes
    1 cup coarsely chopped onion
    1/2 cup dry white wine or water
    -Combine all ingredients and cook on high for 4-6 hours, or low for 8-10 hours.

    ::Amy's Shredded Salsa Chicken:: (Thursday)
    I just put 4-5 frozen chicken breasts into the slowcooker,a few shakes of chili powder, pour in a 24oz jar of salsa, and cook on high for 5 hours. Shred with 2 forks and you have amaaazing dinner/leftovers for days (& it freezes well too so you can save some for the weeks ahead if there is any left)!

    Happy bday and best wishes for you and your family! Here’s my menu for this week:

    Sunday: out to dinner with the kids and a few other families
    Monday: chicken brocolli pasta saute in garlic butter sauce, lemon sorbet or whatever ice cream the kids want thats lying around
    Tuesday: hopefully my husband will grill up some hamburgers along with potato burger-buns, oven fries, fruit salad
    Wednesday: picking up japenese take out on the way home from the girls dance class (cucumber rolls, salmon and chicken teriyaki, veggie tempura etc.)
    Thursday: Homemade chicken noodle soup with warm rolls, chocolate chip cookies
    Friday: steak in red wine sauce, roasted mushrooms and mashed potatoes
    Saturday: salad, crusty bread, fish…maybe lemon sole, orzo in herb butter

    one of my favorite menus of all time this week. hopefully i get to most of it! Best wishes for the baby.

    So, here is a list of some of our usuals. Not exactly a meal plan, but it’s something to share!

    Pasta (we usually do whole wheat, but not always) with tomato sauce, sometimes with a salad, sometimes with simple garlic bread

    Stir-fry – this is a big one for us. πŸ™‚
    some combo of veggies (often carrots, broccoli, napa/thin leaf cabbage, garlic, green beans, sugar snap or snow peas, etc., and tofu. We love the Soyaki regular or Veri Veri Teriyaki sauces).

    burritos, tacos, fajitas. Beans instead of meat (or occasionally we’ll do ground turkey with taco seasoning for tacos depending on who we are cooking for).

    Hearty salad bar nights

    Indian food

    Soups – especially crockpot. Especially bean-filled.

    I was wondering…does anyone have a good recommendation for a website/blog for healthy, clean eating? I don’t mean diet recipes…I just mean putting more good things and less processed foods. I’m a full-time working mom so it’s hard to make a healthy meal every day, but if I could prepare a couple meals on the weekend, it would be helpful. Unfortunately, the only meals I know how to prepare are not the healthiest.

    Hello, fellow meal-planners!
    Last night I found these at Target, and they will make my menu planning prettier (and save me from having to transform scrap paper or note pads into a grid I can use). This isn’t the pattern at my store, but it’s the same layout.
    At my Target, it was in the $5-6 range. And since I usually do 2 wks at a time (on 1 sheet), this 25-page notepad will last almost a year. Not bad for 5 bucks!

    (I don’t work for 3M or Target….just wanted to pass along a helpful item!)
