Week 250 Menu

Nate’s mom Pat is here. She’s our last helper to come stay with us. She leaves on Tuesday. I think I might cry…okay, okay, we know I’m going to cry. πŸ˜‰

Pat brought a very special treat with her…McIntosh apples straight from New Hampshire. Seriously, there’s nothing like a Mac from New England. Nate is in apple heaven right now.

So, this week, for real, I’m in charge of our dinners. We do have a bunch of things stocked up in the freezer, so I can ease back into cooking on my own again.

    I’m having my baby this week!!!! Crazy.

    Sunday – Gnocchi w/sausage and peas, spinach salad

    Tuesday – Chicken Teriyaki (your recipe in the crock pot)
    Wednesday – leftovers, or out
    Thursday – out, and to the hospital to have baby!
    Rest of the week is up to husband and grandparents. I also plan on making a pumpkin pie on Monday or Tuesday. Been craving one.

    I might need to come up with a fry substitute because this week is french fry heavy, especially if I make buffalo wings and fries on Friday. Any help is welcome.

  9. Good luck this week! My husband starts his (10 month delayed) paternity leave this week so I’m pushing some of the meal prep/cooking onto him.

    Sunday ~ pretzel chicken, quinoa, roasted Brussels sprouts

    Monday ~ Tuna Pasta (think tuna melts with pasta instead of bread)

    Tuesday ~ Chicken Lettuce Wraps

    Wednesday ~ oven baked or grilled salmon, couscous, spinach

    Thursday ~ crock-pot BBQ chicken sandwiches

    Friday ~ something from the freezer (I have lots of premade meals right now, yay!)

    Saturday ~ take out

    PS I made your butternut squash soup for dinner last night and it was AMAZING! I added half an apple to the soup and used some chopped apple as garnish. It was a huge hit, will for sure be making it again.

    Monday: Sloppy Joes, Macaroni and Cheese
    Tuesday: Fried Chicken (birthday dinner request)mashed potatoes, gravy, corn
    Wednesday: Sour Cream Enchiladas, rice
    Thursday: Ravioli (Home made sauce, store bought frozen raviolis)
    Friday: Pork Roast, Mashed Potatoes, Gravy, carrots
    Saturday: Chicken Pot Pie (For the kids; mom and dad have yearly date night)

  13. I am totally envious of your apples right now! I am a big time fan of apples and anything with apples in it. I would love to try one of those Macs! (I love apples so much I originally ecause interested in Mac computers because of the cute little apple. That was a long time ago…please keep that a secret!)

    I’m interested in trying that soup! Not just because I am needing more freezer recipes either. The only thing I know is we will have hot fresh bread with every dimmer this week and I will be creating a dessert recipe of my very own involving peanut butter! πŸ™‚ I hope you have a good week!

    Your menu sounds great!
    heres ours for the week:

    Sunday: Steak frites w/ herb butter, salad, berry pie from local bakery
    Monday:mini chicken pot pies
    Tuesday: blt sliders, simple pasta salad (see recipe below)
    Wednesday: out
    Thursday:benihana-style chicken fried rice, wonton soup from local chinese place
    Friday: decomposed salad to use up leftovers with shrimp, corn, cherry tomatoes, mixed greens, and sugared walnuts
    Saturday: chicken cutlets, roasted potatoes, peas, brownies

    simple non-creamy pasta salad:
    -1 regular sized box of pasta (preferably macaroni, orchiette, or penne)
    -1/2 cup olive oil
    -1/4 cup butter
    -2 cloves garlic
    -1 teaspoon dried parsley
    -1/4 cup cherry tomatoes
    1/4 cup cooked corn, off the cob

    Cook pasta according to box directions. Heat oil, garlic, butter, and parsley in a skillet on medium until the garlic is golden. Pour over drained, hot pasta and add cherry tomatoes and corn. Season according to your preferences (i usually add a sprinkle of fine-grain salt and white pepper). Mix and serve chilled. Alternitively, keep warm and top with cheese and balsamic.

    Here’s my plan for the week. What I’m really craving is

    1. Roast beef with Horsetooth Hot Sauce rub, onions and mushrooms in the crock pot with sour cream horseradish, beets and mashed sweet potatoes.
    2. Beef stirfry, egg rolls and egg drop soup.
    3. Chicken pasta carbonara and salad.
    4. Meatloaf, homemade mac and cheese, green beans
    5. Bacon and bleu cheese pizza, salad
    6. Taco soup, cheesy tortillas
    7. Hamburger helper and corn (for the night I go to class – my hubby and daughter like this stuff)

    Monday – Seafood jambalaya, corn and okra succotash

    Monday – 10 minute chicken and baby potatoes ( don’t get too excited – recipe from a magazine, there is only a 10 minute prep, but an overnight marinate and hour to cook – fyi!)

    Tuesday – tacos

    Wednesday- chicken tortilla soup

    Thursday- white bean stew with pasta

    Friday – spaghetti squash

    Sat – ??

    We’re hoping that the week after Thanksgiving we will be able to bring home from Korea the 18-month old boy we’re adopting, so in the meantime, I’m stocking my freezer with premade meals.

    S: Meatloaf (will freeze half the recipe) & pretzel rolls

    M: Chicken Pot Pies (will make half in small disposable pie pans and freeze)

    T: Baked Mac & Cheese with roasted broccoli

    W: Autumn Salad

    T: Orange Chicken in the slow-cooker

    F: Leftovers (We call it “restaurant night,” and the kids love it because they get to choose what they eat out of the options in the fridge.)

    S: Spaghetti with Sausage & Peppers (will freeze half)

    I just want to share – I took third place with my green chili in the neighborhood chili cook-off this weekend!! It went up against a bunch of good Texas Red Chili, so I’m pretty proud of that 3rd place win!

  39. If it’s the Chicken & Rice Soup recipe you posted in the last few weeks, it’s easy and amazing!!! I made it the day after your post – to save time, put the chicken breast with bone in the slower cooker overnight with some chicken stock. Was going to freeze it, but it was so good I ate it everyday for lunch! Thanks again for sharing!

  45. It’s been a year since I’ve been organized this well with dinners and I think I need to get back in the swing of things. I love your site and I always am inspired from it. So, here it goes. I have to just start planning or my life is crazy…crazier than it is now with 3 kids and 2 jobs. Maybe I’ll do better if i post on here.
