Week 267 Menu

This morning I was in the bathroom getting ready and I heard, “Mom might like to take a picture of this!” and Cate came running back to find me. They had cut open a grapefruit and were waiting to eat it until I took a photo. It was really cute. Nate continued to have breakfast with the girls in the kitchen. They have been having the cutest conversations. I came into the living room, having missed most of what had been said, but I did hear Cate say, “Mom sure is a good cook, but she’s not a good planter!” I guess that’s why I do not have a gardening blog. πŸ˜‰

I’m back to eating normal food. Woohoo! My mouth is almost back to normal, which is so nice. Thank you all for your well wishes over the last two weeks! Our menu pretty much went out the window last week since we were busy as bees getting my sister Anne all settled into her apartment, which we have fondly named ‘Anne’s Cottage.’ It’s been a lot of fun!

  1. I’m in the process of making mine, and jumped over here for some inspiration πŸ™‚
    Starting my 3rd trimester today, so there is light at the end of the tunnel in being able to digest dairy again πŸ™‚ On the bright side, I made pizza for the first time in 6 months the other day, and used Buffalo Mozzarella (from Costco). It was excellent and did not require an anti-nausea pill afterwards, so I’m doing pizza again this week and am kicking myself for not trying the buffalo mozzarella earlier.
    So far I have:
    *Grilled Fajitas w/Spanish Rice and Chips/Salsa (Not sure if you’re close to a Sprouts, but if they carry Tacupeto chips you MUST buy them. Like, real restaurant chips in a bag.)
    *Sausage, Mushroom and Bell Pepper Pizza with Green Salad
    *Baked Salmon with Brown Rice and Green Beans (serving this the day before my glucose test, so not overdoing the carbs/sugar)
    *Spaghetti with homemade sauce, French Bread, and Green Salad

    Love this idea for a site! Sara, at the end of the week is where I am exhausted (thursday nights especially), so I usually plan soft scrambled eggs + salad. Cheap and easy. Here’s my menu so far:

    Sunday: Whatever is the freshest fish @ the store, rapini w/chili and anchovy, sauteed brussels sprouts w/garlic
    Monday: My bf will be cooking steak & salad
    Tues: A spinach/hardboiled egg/harissa/toasted almond mixture with lavash I think? (Recipe from Heidi Swanson)
    Wed:Mashed potato & celery root with____ something?
    Thurs: Eggs & salad (told u Sara hehe)
    Friday:Homemade pizza, dough made thursday night

    I’m not sure what to make with the celery root mash (I don’t like chicken really)

    Tuesday I would make pasta w/greens & rosemary/garlic
    and Wed I’d make ww israeli couscous salad w/figs, almonds and arugula. Feeling very indecisive, as usual…

  4. Hooray for feeling better! Everyone in the house benefits when Mama is 100% again. πŸ™‚ I have three weeks left until my due date so I’m trying to push on through to the end (no pun intended).

    Sunday: Shredded beef wraps, roasted cauliflower and mixed fruit smoothies
    Monday: Chicken and roasted vegetable couscous
    Tuesday: Kale and Sweet Potato Salad (inspiration from Just the Tip)
    Wednesday: Dinner at church.
    Thursday: Steak from freezer (Omaha Steak gift!) and edamame salad
    Friday: Garlic, roasted red pepper linguine
    Saturday: Out.

    Glad you’re back to eating normally and that’s fantastic that your sister is close by! All three of my sisters live away (but near one another) and I miss them terribly. I was lucky enough to have one here for the weekend and another one here this week for a business trip πŸ™‚

    Only 6 weeks until I’m due, and I can say that I am becoming lazy with meals… All I want to do is sit on the couch, and nap… So, here goes nothing, hopefully we’ll make everything:
    Sunday: Taco Soup
    Monday: Shrimp Scampi with Linguini
    Tuesday: Chicken Picatta, Mashed P’s, Veggies
    Wednesday: Pizza
    Thursday: Green Chili Chicken Casserole
    Friday:Friends over, Fish Tacos with the Red FIsh the boys caught
    Saturday: Date night (trying to get in as many as we can! If only we could go out for sushi…)

    Tuesday ~ Homemade Chicken Pot stickers, steamed broccoli, egg drop soup (we were supposed to have this tonight, Sunday, but we found some fabulous NY steaks at Costco that the hubby is going to grill instead).

    Wednesday ~ BBQ chicken sandwiches, green beans

    Thursday ~ crockpot goulash

    Friday ~ Family date night

    Saturday ~ Date Night (if we can find a sitter!)

    Here’s what we are having down on the farm this week:
    Sunday – Lemon Chicken (new recipe for us & I liked it!), with leftover Broccoli Fettuccine Alfred, garlic toast
    Monday – Baked Sweet Potatoes, Green Beans and cornbread
    Tuesday – Clean out the frig (I have a huge event at work this day, so I planned no cooking).
    Wednesday – Sloppy Joes, with baked beans and fries
    Thursday – Breakfast: biscuits, scrambled eggs and sausage
    Friday – Pizza

    I’m trying to not go to the supermarket except for milk, bread, baby formula and maybe eggs. I really want to eat out of our freezer and pantry. I am also trying, mainly for my own sake, to make sure every meal has some type of green veggie!

    Monday- Chicken Murphy- special dinner for my husband’s birthday! Roasted asparagus

    Tuesday- Mini hot dogs, hash browns, baked beans, green beans

    Wednesday- Pasta with peas and bacon/ham

    Thursday- Grandma’s

    Friday- Leftovers

    Saturday- Probably fast food for the kids and something random for me. We’re marching in our local St. Patty’s Day parade….

    Tuesday: Creamy Cauliflower Soup (a good way to use up some CSA ingredients!)
    Wednesday: I am out
    Thursday: Husband is out, there is a frozen TJ’s pizza calling my name!
    Friday: Baked Polenta Pie
    Saturday: Husband is out of town, so I will make something that he would normally balk at.
