Week 293 Menu

Yesterday I ordered a Blurb book of some of my Instagram photos. Because my friend Moosh did it. And that means it’s cool. Plus, she has a great deal on her blog right now where you can get a FREE Blurb book of your Instagram photos. How could I pass that up? (P.S. ANYWAY…as I was going through my Instagram photos deciding which ones to use, I was once again drawn to this shot.

How is it possible I took that photo with my phone? It blows me away. iPhone magic aside, are those not the cutest little girls ever?

School starts Tuesday! We are super excited around here for a new year, although I’m a bit scared of getting back into life with a schedule. It’ll be good for me, I’m sure, even if painful!

– Happy Labor Day! We’ll grill some hot dogs at the pool!

–Β Chicken Pot Pie (I made this last week and all three kids loved it, so figured it would be good for the first day of school!)

– Chicken and Bean Enchiladas (recipe from Erika B. that I’ve yet to make myself, can’t wait b/c it’s delicious!)

– Soccer night – eat out! (This will be our Thursday routine this fall, eating out right after soccer practice with Dad as assistant coach)

    Th – My son has gymnastics until 6 p.m. every Thursday so I have to be prepared in advance. This week I’m pulling spaghetti sauce from the freezer…it’s not exciting but it works!

  6. I just love it when a 3-day weekend sneaks up on you! It’s like finding a $20 bill in your pocket! πŸ™‚

    Sunday: Grilled chicken, roasted veggie quinoa salad, lettuce salad, and oatmeal bars/vanilla ice cream with friends
    Monday: Asian lettuce cups (new family favorite!), rice and soft pretzels with more friends
    Tuesday: Giant salads with grilled, cajun shrimp
    Wednesday: Stuffed peppers (stuffing = leftover meat from lettuce cups, quinoa and various CSA veggies) in the slow cooker
    Thursday: Dinner at school’s Open House
    Friday: Homemade pizza and movie night (I am instating this tradition!)
    Saturday: Out.

      we love friday night pizza night at our house! My kids especially love it because it’s the only time that they get to drink pop (though sometimes it’s Kool aid because I forgot to buy a 2 liter that week!) I love it because if I had a tough day at work, I can stick to my menu plan with a little help from papa murphy’s!

    Friday: vegarian lasagna with kale and mushroom-tomato sauce
    Sat: pumpkin black bean chili

  8. Sunday – Scott’s smokin’ ribs. He’s promised me a veggie delight…I’m guessing that means black bean burgers.
    Monday – Another Labor Day BBQ after enjoying an extra weekend day.
    Tuesday – We have a boatload of eggplant from our own garden and the CSA. So, I’m cruising Pinterest now for eggplant recipes. Right now these Eggplant Arancini are looking pretty good. I think the kids would even eat them. Served with a green salad.
    Wednesday – First night back to coaching for me so we need a make ahead dinner. Since we’re supposed to get arugula in the CSA, I’m thinking this pasta with arugula and white beans will be perfect!
    Thursday – Left overs
    Friday – Homemade pizza on the grill.
    Saturday – Another CU game for Scott, so I’m thinking of a ladies and kids night fiesta! Quesadillas on the grill, guacamole and chips and lots of margs!

    Tuesday: Vegetables from the greenmarket + white beans + trying a new grain mix I found at costco
    Wednesday: leftovers or out

    Saturday: clean out the fridge soup

    Im back to menu planning, Yay!!! I haven’t posted in a while… with me and the kids returning to school and the hubby picking up some double teaching assignments things have been a bit crazy.

    M- Lemon pepper chicken cutlets, baked potatoes, maple glazed carrots and corn.
    T- Chicken, broccoli, wild rice and cheese casserole probably with some dinner rolls.
    W- (Middle child’s request) Gourmet grilled cheese and soup/salad.
    Th- Honey baked ham, new potatoes and green beans with potato rolls and honey butter spread

  35. I let my husband pick this week’s (and next week’s) meals because, frankly, I just didn’t feel like thinking about it πŸ™‚
    Plus, it was funny seeing what he picked (he actually chose some fish! yay! I must be having a positive affect on him after all!)

    Tuesday: Back to School Night – the kids will eat some tortellini and some leftover bbq chicken drumsticks
    Wednesday: Shepherd’s pie

    I have absolutely no idea what we’re going to eat for the rest of this week. The in-laws-to-be are in town until tomorrow, so it might be one of those weeks where we end up eating out too much…

    I think I’ve finally organized the menu for this week. We had a rib-off with friends at our house yesterday so all my planning went into that. Just winging it for tonight before I go to the store tomorrow.
    Sunday: Dinner at the ballpark with a stop for wings after the game.
    Monday: Rib-off at our house: grilled, smoked, and baked ribs, a dill potato salad, homemade baked beans, garden salad, fruit salad, cupcakes, and cake. Delicious!
    Tuesday: Chicken sausages, leftover potato salad, big green salad (to counteract all the bad-for-us stuff we ate on Monday).
    Wednesday: Late cross country meet so easy leftovers.
    Thursday: Summer hash to use up all the great garden veggies. Over easy and scrambled eggs on top.
    Friday: Lasagna with turkey sausage, tofu, and spinach. Side salads and garlic bread. All eaten really early so we can head to the first home football game of the season.
    Saturday: Sister in town ”” thinking of Mexican so I can make homemade tortillas for the first time ”” so excited to try them!

    We’ve returned from our Maui vacation! I’m ready to start getting back to our routine (it’s more of a “have-to” than a “want-to”). Here’s our menu…

    Wed: Slow-Cooker Chicken & Rice Burritos w/ green salad & homemade 1000 Island dressing
    This is our 1st soccer season! Crock Pot is always handy during sports seasons! πŸ™‚
