After two weeks of Spring Break fun (Anna one week, Cate the next) and throwing caution (or at least responsibility) to the wind, it’s back to real life this week. Perhaps that means I’ll actually make more than one or two items on the menu plan! But, really, who cares about meal plans when there are zoos to be visited, beaches to play on, and flower fields to gaze upon?

I’m back to a 5 day work week this week (got a new job, yay!) after a couple years of having Mondays off… So my meal planning is even more important now! I’ll be getting home a little later than normal, so having a plan really makes it much easier to prepare some ahead of time.
Sat – chicken soup in the crock (because I got my preschoolers death cold)

Mon – quiche Lorraine (make ahead) with green salad

Monday-Friday-Freezer Food in no particular order or predetermined use…I have Orange Chicken, Manicotti, Pizza, Chili, and Meatballs. Probably do rice and green beans with the chicken, salad with the manicotti, and Cornbread with the chili.
We ate at Phil’s yesterday. I thought of you, Jane! 🙂 My 4 year old requested it. She’ll eat a whole rib and corn on the cob and a side of fries.

Last week’s menu was a big, fat goose egg. We started out with a (horrible!!) stomach bug and never really got our appetites back until the end of the week. A lot of ginger ale, rice cakes and brown rice for us. We’re all ready for the some good food this week!

I was super sick, so I sort of winged it. Tossed in 2 wings, 2 thighs, 2 drumsticks. 6 c. Chicken stock. 1 c. Water. 2 stalks celery, chopped. 1/2 lg onion, chopped. 2 carrots, chopped. Lots of seasoning! Marjoram, thyme, salt, pepper. 2 cloves garlic (for my cold!) bay leaf. Parsley if you have it. Set on low for 6 hrs. Scoop chicken out, debone. Remove bay leaf. Put chicken back in. Add cooked noodles if you want (we skipped noodles, had fresh bread instead) Season more if it needs it. I have zero sense of smell or taste right now, so use your best judgement! Tip: remove skin from chicken first.

Thur: Homemade pizza from the freezer
Fri: Breakfast for dinner, probably eggs and tomatoes on roast
