Week 363 Menu

Six months later and our kitchen wall is finally all one color. Woohoo! I also hope to never paint anything again in my life. The kitchen wasn’t too complicated, but the living room about did me in. I’ll share some photos with you when I have it all cleaned up – it’s pretty darn cute!

You would think with the new year I’d be all fired up for planning menus, but I’m stumped. I am having a hard timing coming up with this week’s plan. I guess I liked vacation mode! Thank goodness you all post every week – I got all of this week’s ideas from your menus from last week. So, thank you!

    Mon – Homemade Pizzas (I’ll let my kids make their own – I’m having mine lasagna style, Salad
    Tues – Chicken & Artichoke Casserole, Salad
    Wed – Pork Roast, Sweet Potato Casserole, Green Beans
    Thurs – Tex Mac & Cheese, Salad
    Fri – Zucchini & Tomato Soup, Salad, Fresh Baked Bread
    Sat – Chicken & Cheese Enchiladas, Spanish Rice
    Sun – Pot Roast & Veggies, Rolls

      What is Tex Mac and cheese?

      Tex Mac & Cheese is a spicy version of regular Mac & Cheese:

      1 lb ground beef
      1 small onion, chopped
      2 tbs tomato paste
      3 tsp chili powder
      2 tsp ground cumin
      1 1/4 tsp salt
      12 oz rotini
      3 cups milk
      2 tbs flour
      1 1/2 cups shredded Cheddar Cheese
      1 1/2 cups shredded Pepper Jack Cheese
      1 cup crushed tortilla chips

      Heat oven to 375. Coat 13.9.2 w/cooking spray.
      Heat a large skillet over med high heat. Cook beef and add onion for 6 to 7 minutes or until beef is no longer pink. Stir in tomato paste, 1-1/2 tsp of chile powder, 1 tsp of cumin & 1/4 tsp of salt. Add 1/4 cup water and cook 1 minute, set aside.
      Meanwhile, cook pasta according to package directions, drain and set aside.
      Make sauce while pasta is cooking. In a med size sauce pan, stir together milk, flour, the remaining 1-1/2 tsp chile powder, 1 tsp cumin & 1 tsp salt. Bring to a simmer and cook 1 minute until thickened. Off heat, stir in 1 cup of cheddar and 1 cup of pepper jack until a smooth sauce is formed.
      Stir the cheese sauce into the pasta. Spoon half of the mixture into prepared dish, top w/beef mixture and then remaining pasta mixture. Sprinkle the remaining cheese and crushed chips over the top and bake at 375 degrees for 30 minutes (bubbly and browned.)

    Sun: grilled salmon and zucchini, smashed red skin potatoes.
    Mon: Goulash(macaroni-tomato-beef),green peas.
    Tues: Chicken cilantro wonton soup with rice noodles(The Lemon Bowl).
    Wed: Leftovers
    Thurs: Meatballs and mushroom gravy over rice, corn.
    Fri: Eggplant Parmesan, green salad.
    Sat: leftovers

    Happy New Year! Love the light in your kitchen. We’re finally back at meal planning after two+ weeks of winging it with holidays and multiple birthdays and I couldn’t be happier! It was a struggle the past few days to through things together.

    Sunday: Greek lamb meatballs with taszycki (sp?) and Greek roasted veggies (yukons, zucchini, yellow squash and red onion with fresh mint, oregano and lemon zest & juice). Pulled from the freezer summer berries and rhubarb for a crisp with vanilla ice cream.
    Monday: Ravoli, broccoli and garlic bread.
    Tuesday: Roasted beet, goat cheese, quinoa & spinach salads.
    Wednesday: Miso salmon with green beans and possibly farro.
    Thursday: Mustard-orange pork loin with roasted squash and peas.
    Friday: Chicken and broccoli strombolis with side salads.
    Saturday: Husband’s making chicken parmesan with sides TBD.

      you aren’t the only one to mention the light – I guess pictures can be deceiving, it’s the one thing I hate about our kitchen – very little light! 🙂 that window doesn’t go to the outside…I think I’ll put in a solatube or something to lighten it up!

    I love red in a kitchen…khaki and red are so good together. Beautiful. We had a Flu and Pneumonia outbreak this past week so, we ditched most of our menu and ate soup!

    Sun- Homemade chicken bites and fries

    Mon- Frito chili pies

    Tues- Chinese

    Wed- Chicken enchilada pasta

    Thurs- Paninis…French dip, caprese and kids choice

    Fri- BLT pizza and shrimp Thai pizza

    Sat- BBQ

    Sun- “what do you call a deer woth no eyes?……. no idear” literally, I have no idea!

  6. I am so glad to be back on a menu plan. I was getting tired of soup and sandwiches! Your kitchen looks great!
    Monday – Herb Garlic Chicken, Garlic Mashed Potatoes, Steamed Broccoli
    Tuesday – One Pot Pasta with Fresh Tomatoes & Basil, Caesar Salad
    Wednesday – Sausage & Sweet Potato Hash, Baked Eggs, Fruit
    Thursday – Shepard’s Pie, Marinated Kale Salad
    Friday – Homemade Pizza
    Saturday – Shrimp & Potato Tacos with Cilantro Cream, Black Beans & Rice, Chips & Salsa

    We still have some of our menu ideas left over from last week so that should get us through until Wednesday – yay!

    Also, what are the corn cake toppers you are having with your chili? It’s such a “cornmeal/bread time of year”. I just had some cornbread croutons at a restaurant last week and they were soooo good – I’m kind of cornbread obsessed right now. Ha!

  12. I just discovered that you can make Baked Potatoes in the crock pot. Oh the things that bring you joy as a mother 🙂

    Thursday: Gnocchi Soup, green salad, breadsticks
    Friday: Pasta All’Amatriciana. Saw it on America’s Test Kitchen, recreated it, and then typed up my version here: with salad and my mother-in-law’s French Bread
    Saturday: Chicken Pot Pie Soup, green salad, and leftover French Bread

    Happy New Year! Your kitchen looks beautiful, very light and bright. I don’t have a resolution for this year but I have made a list of 12 things I would like to achieve including buying my first car, learning to sew, seeing a ballet and going to Spain. I also threw in a few silly ones like feeding a giraffe!

    Mon: Pasta with the last of my frozen courgettes from the garden, lemon, chilli and garlic, salad
    Tue: Pork and apple stew with baked potatoes and broccoli
    Wed: Cauliflower quiche, salad
    Thur: Tandori style chicken, cauliflower and pepper curry and rice
    Fri: Fish and chips, peas
    Sat: Out with friends to see American Hustle.
    Sun: Dinner at Mum’s

      you’re the second to mention the light in my kitchen – it’s all an optical illusion! seriously, the kitchen is actually really dark (the window just looks out on another room). one day we’re going to do a solatube to lighten it up!

      the bottom half is “Classic Taupe” from Behr – and the top half of the room is that same color but adjust down I think 50%. it’s a great color!

    My roommate is on low-sodium per doctor’s orders so I’m going to try and see how long I can last cooking limited sodium.

    Sunday- Cereal (waffle crisp with a nice 2%)
    Monday- Salmon with salad
    Tuesday- Roasted potatoes w/corn and maybe the leftover salmon (if someone hasn’t eaten it while I’m at work)
    Wednesday- Stuffed chicken w/couscous and broccoli
    Thursday- breakfast for dinner (minus bacon omg I’m not going to survive)
    Friday- Oven roasted asparagus w/salmon and new potatoes (I found a recipe for it and my roommate decided to splurge on 2 salmon filets at Costco yesterday)
    Saturday- probably out for pho or snacking on all the veggies. I got a bountiful basket this week so we’ll have a lot of produce.

    for Yo, who wanted my Southwestern Chicken and Lima Bean Stew — here’s the link:
    I got it from Taste of Home magazine (which wouldn’t let me log in to their website when I tried to get it) … but this recipe is identical. I used boneless chicken thighs.
    We liked it pretty well. Mine took the maximum time to cook (the lima beans took awhile to soften). I also threw my boneless thigs in frozen. We liked it pretty well. No one raved about it, but everyone ate it and some had seconds. I liked it.
