Week 561 Weekly Menu + A Happy New Year!

Happy New Year! (Related: How are we already 1 week into January? WHOAH.)

We just returned from a 2-week trip to New Jersey and New Hampshire. Yes, we were there for the bitter cold. Yes, we got to watch the blizzard in New England from my in-law’s couch in their 1775 farmhouse and it was awesome. Yes, traveling at Christmas was as stressful as I thought it would be. And, yes, it was totally worth it! (Although, it may be another 15 years before we do it again. Sorry, grandparents!)

It’s Monday and I actually do have a meal plan for the week. It’s boring but it’s done and I did the grocery shopping, so I’m feeling good about life. I’ve been getting messages about how people miss the weekly menu. So, let’s get this party started, shall we? GO MEAL PLANNING!

Taco Tuesday

Rachel Sandwiches

– Leftovers

– Ravioli and Caesar Salad

– Eat out night (or maybe I’ll cook something special as my mom will be visiting!)

  1. Happy New Year!! I got a vacuum sealer for Christmas and am itching to vacuum (and stash in my freezer!!) anything I can get my hands on! 🙂

    Sunday: Calzones and roasted Brussels sprouts
    Monday: Chicken pot pie
    Tuesday: Taco bake with nachos (holdover from last week)
    Wednesday: Roasted chicken thighs and cauliflower rice
    Thursday: Pumpkin muffins
    Friday: Leftovers
    Saturday: Out

    I missed you Jane! Glad all is well and you had a fun holiday. I’m really trying to stick to meal planning. The order isn’t set, but here’s the dinner plan.

    Sun: Roasted Veggie and Tofu Bowls with Cashews, Apples
    Mon: Leftover Bowls, Grapes
    Tues: Scrambled Eggs with Veggies and Cheese, Toast and Green Smoothies
    Wed: Lentil Soup, Yogurt, Rolls, Apples
    Thurs: Eat Pizza at a Bday Party (or Take Out)
    Fri: Leftovers or Frozen Meals

    So happy you are back! We are doing a Paleo experiment this month.
    Sun – Braised beef cubes, roasted vegetables & faux-tatoes (mashed cauliflower)
    Mon – Ground beef chili, salad
    Tue РCrispy chicken thighs, saut̩ed peppers, faux-tatoes
    Wed – Kalua pork & cabbage
    Thu – lettuce wrap tacos w/leftover pork
    Fri & Sat home alone so probably whatever leftovers are rattling around the fridge

    Happy New Year! I’m in MA, so we just got our pipes thawed out, and dug out from the storm too!

    Sat ”” French onion soup (because BRRRRRR!), French bread pizza for the kids
    Sun ”” orange chicken over rice
    Mon ”” fish sticks, veg fried rice (w/ leftover rice from sunday)
    Tues ”” beef stew, crockpot
    Wed ”” pizza
    Thurs ”” tuna noodle casserole
    Fri ”” breakfast dinner

    Sunday- 14 bean soup with leftover ham
    Monday- salmon, asparagus, rice and salad
    Tuesday- I have a meeting so leftover soup and salad
    Wednesday- chicken chili
    Thursday- roasted chicken breast and veggies
    Friday- out
    Saturday – tbd

    Happy New Year Jane! (As a nanny i am only responsible for the family meals Monday-Thursday)
    Monday – Indian tacos (tofu)
    Tuesday – Thai stuffed peppers
    Wednesday – slow cooker beef stew and fresh bread
    Thursday – Cornbread chicken casserole
    For just me
    Friday – out for pizza
    Saturday – Trader Joe’s tika masala
    Sunday – omelet and hashbrowns

    Starting of the New Year using my Christmas present (the Instant Pot)!
    Sunday homemade gnocchi and marinara sauce
    Monday Cincinnati chili and spaghetti in the Instant Pot
    Tuesday Chicken cutlets with lemon and sage, rainbow chard with basil, and (in the Instant Pot) fingerllng potatoes
    Wednesday leftover spaghetti chili
    Thursday lamb shoulder chops and leftover chard and potatoes
    Friday enchiladas suizas (maybe?)
    Saturday jook (Chinese rice porridge)

    • interested to see how you like the instant pot! like my vacuum sealer (mentioned above!) mine is still in the box…I need to put it to work! let us know how you like it!

      oh, and my friend barbara has a blog called Pressure Cooking Today with tons of instant pot recipes. she’s great!

      Thanks, Jane, for the tip on your friend’s website. I am loving the instant pot! I mean, really, really liking it! I’m going to get a little more daring in the next couple of weeks (duck confit, perhaps) as well as some other pressure-cooker type recipes to see how much time I can save in cooking time.

    Tuesday: Frozen Burritos and Fresh Fruit (I was sick)
    Wednesday: Hubby Brought Home Take-Out
    Thursday: Beef Stew with Olives and Capers
    Friday: Cheddar and Mustard Loaf Ham Sandwiches with Fresh Fruit
    Saturday: Grilled Steaks with Special Sauce and Broccoli
    Sunday: Crispy Lentil Kachori and Salad

    Happy New Year! I’m sorry to be late to the party, but I just realized you were back!

    Mon – Veggie soup (crockpot), yeast rolls
    Tues – Leftover soup, grilled cheese
    Wed – Chicken pot pie (frozen), rice, broccoli, black eyed peas
    Thurs – Spaghetti, salad, bread
    Fri – Chili cheese hot dogs, tater tots, baked beans, mac & cheese
    Sat – Leftovers
    Sun – Out to eat with our board game group
