Week 578 Weekly Menu

Happy Sunday! This week I attended the Mom 2 Summit and it was, as usual, really wonderful. This year I came home with a list of things to do that are going to improve my {aging} blog. So get ready! Changes are in store and they are all for the better! (Although, honestly, some of those changes are pretty boring and you won’t even know they  happened…but I’m good with that because spring cleaning always feels good, even when no one sees inside your closets!)

Weekly menu from This Week for Dinner for the week of May 7, 2018, including pesto chicken pasta and chicken tortilla soup!

MONDAY:
Black Bean and Sweet Potato Burritos (I’ll be eating mine as a brown rice bowl :))

TUESDAY:
– Pesto Chicken Pasta

WEDNESDAY:
Chicken Tortilla Soup

THURSDAY:
– Leftovers

FRIDAY:
– Red Beans and Rice (trying a new recipe, will let you know how it goes!)

SATURDAY:
– Eat out night

SUNDAY:
– Baked Salmon with Chimichurri
– Roasted potatoes and another side vegetable

    Tuesday: Arizona Chicken Pasta with Salad
    Wednesday: Chicken with Olives and Chopped Salad
    Thursday: Cheesy Chicken and Rice with Broccoli
    Friday: Spicy Sriracha Shrimp Tacos with Cabbage and Fresh Veggies
    Saturday: Bacon Cheddar Beer Cheese Dip with Fresh Fruit and Veggies
    Sunday: Mother’s Day, no clue 🙂

      Do you have a recipe for your cheesy chicken and rice?

      I don’t really have a set recipe, it is just what my kids like :). I take about 1.5 lbs of chicken, onion powder, celery seed, some chicken broth or other seasoning, cream of chicken and cream of mushroom soups, and put them all in the crockpot. Cook for around five hours or so, then add in cooked rice, cooked broccoli and a bunch of cheddar, stir it all up and serve. It’s easy and my kids think it is the best :).

    Sunday – london broil on the grill, mashed potatoes, zucchini, and corn
    Monday – Salmon, rice and zucchini with salad
    Tuesday – stir fry rice with chicken and vegetables
    Wednesday – smoked sausage with peppers and onions
    Thursday – I’m out – husband fends
    Friday – out
    Saturday – hoagies

    Sun – Roasted Beet Risotto, salad, chicken tenders (baked zucchini sticks as veg option)
    Mon – Jane’s Lentil rice bowls w/ lime tahini dressing (except I used leftover risotto, not lentils/brown rice), steak tips
    Tues – cucumber chickpea tomato salad, fish tacos
    Wed – pizza (veg, pepperoni, plain)
    Thurs – veggie quesadillas, tater tots, salad
    Fri – breakfast dinner
