New Year’s Resolution “Back to Basics” + Week 733 Weekly Menu

HAPPY NEW YEAR!

I hope the year has gotten off to a nice start for you, but I have a sneaking suspicion it might be a little crazy for everyone. 2022 has already proven to be quite a ride for me. I won’t get into boring details about work, life, etc…but our family is getting PCR tests tomorrow morning. Pretty sure COVID is making another unsolicited visit to our home. Apparently it missed the memo that the Maynards aren’t hosting guests right now. Update 1/13: None of us have COVID-19, hallelujah! We are definitely sick but at least it’s not that. Phew.

2022 Kitchen Resolution

A new year means a new kitchen resolution for me. I’ve been thinking about this a lot this week. If you’ve been hanging around on this blog for a while, you know that each year I choose a resolution that links what we do in the kitchen to environmental goals. You may also know (or not, that’s fine) that in October 2020, I severed a tendon in my thumb, which turned into a year-long journey of surgeries and physical therapy. Today I can use my thumb again. (Woohoo!) It’s not the same as it was before but it works, so I am grateful. Bottom line, last year I did not make a resolution and I did not cook much at all…mostly because I couldn’t. Hello Fresh is the only reason we cooked at home in any capacity.

Which brings me to this year’s resolution. I’m going back to basics, back to what started this blog in the first place. 

Plan. Shop. Cook.

I am re-committing to weekly meal planning, grocery shopping and cooking at home. I am fine with the fact that I fell out of practice over the last 15 months – there were many good reasons why that happened. But I am also ready to get back to the thing that not only alleviates stress every week but is just plain good for my family’s health and the environment.

I appreciate each and every one of you who have stayed here posting menus, even when I wasn’t able to be here every week. I am scared to even say it out loud, but I will be back every week putting our menu up! Starting today! Plus I actually do have a list of photographed recipes to share with you…here’s hoping I can get those published this year, too!

Week 733 Weekly Menu from This Week for Dinner

MONDAY:

  • Spicy Chicken Tacos

TUESDAY:

  • Mushroom Ravioli and Salad

WEDNESDAY:

  • Homemade Hamburgers

THURSDAY:

  • Rotisserie Chicken + Mashed Potatoes + Brussels Sprouts

FRIDAY:

  • Leftovers

SATURDAY:

  • Takeout Night

SUNDAY:

    So sorry to hear you all are not feeling well again. I hope you get your tests and recover, whatever the cause.

    I’m not feeling too well here, so all we have on the menu is leftover soup and sweet and spicy sriracha chicken tacos. We’ll see from there.

    My resolution is to cook more from cookbooks. I have many great ones, but end up scouring the internet for recipes instead. It’s not bad, but I could save time and resources using what I have.

    • Thank GOODNESS it’s not covid. All confirmed today. still feel crappy…but sure am glad I got my act together this weekend, made food much less stressful this week.

  2. COVID should follow vampire rules and only enter your home when you invite it. I hope either 1) your tests are negative or 2) your symptoms are mild if your’e not.

    My New Year’s resolution is cooking through America’s Test Kitchen’s “Ultimate Meal Prep” cookbook. Four meals per week, WITH A GROCERY LIST (!!), and tips on what can be prepped ahead. Since it’s America’s Test Kitchen, you know the recipes are good and since it’s weeknight dinners, you know they’re fast. 🙂 We started Week 2 Tonight and so far they’re all amazing.

    Sunday: Quick White Wine-braised Chicken and Potatoes (ATK Meal Prep recipe) and roasted asparagus

    Monday: BLT Salad

    Tuesday: Flank Steak with Farro and Mango Salsa (ATK Meal Prep) and roasted cauliflower

    Wednesday: Shrimp and White Bean Salad with Garlic Toasts (ATK Meal Prep) and roasted sweet potatoes

    Thursday: Pan-Seared Chicken Breast with Artichokes & Spinach (ATK Meal Prep) with roasted broccoli

    Friday: Homemade French Bread Pizzas

    Saturday: Out

    Sun: Chicken shawarma in pita & Persian rice casserole with eggplant
    Mon: Oven-baked beef ribs, sautéed leeks with mushrooms & roasted potatoes with lemon and parmesan
    Tues: Pasta with bacon, peas and shallot sauce
    Wed: leftovers
    Thurs: leftovers
    Fri: “Siu Yuk” (Chinese roasted pork belly with crispy skin), stir-fried bok choy
    Sat: leftovers

    My cooking resolution this year will be to explore deeper into regional foods and experiment more with these regions. After watching shows by Pati Jinich and Stanley Tucci,, etc., I see how each “nationality” of food can have some really interesting variations just a few miles apart.

    Monday: Penne with Vodka Sauce and Peas

    Tuesday: Beefy Chili Mac and Corn

    Wednesday: Pecorino and Rosemary Crusted Chicken and Roasted Brussels Sprouts

    Thursday: Ginger Pork Sliders with Tangy Slaw

    Friday: BBQ Soy and Ginger Chicken with Rice Pilaf and Peas

    Saturday: Focaccia with Rosemary, Tomatoes and Cheese Sandwiches and Fresh Veggies

    Sunday: Lamb Kofta, Pitas, Tzatziki and Salad

    • I was just thinking how lockdown was AWFUL but at least we weren’t sick for over a year! those were the dayyys? wait. hah! thank you for the good thoughts, still sick but COVID free, so I am grateful.

    I hope you are all negative/feel ok! Sorry to hear about ANOTHER unsolicited visit. Yikes.

    I am delighted to hear your new year’s resolution and I think I may adopt yours as one of mine this year! I have been falling into cooking the same very simple meals over and over and am feeling a bit bored. For the first week of January I actually planned and bought some ingredients for interesting meals (still fairly simple) and it was so nice.

    I don’t assign my meals to specific days of the week, I just make a list for the week. Also, I chose a favorite cookbook and picked a few recipes from there this week. 🙂

    Stir fry – tofu & veggies

    “My favorite lentils” (from “A Modern Way to Cook”)

    Brown rice goodness bowl (also from A Modern way to cook)

    Smoky corn chowder, (a modern way to cook)

    Gently spiced sweet potato and quinoa bowls (A modern way to cook)

    Tuesday – lasagna and salad
    Wednesday- chicken with rice
    Thursday – leftover lasagna
    Friday – Mexican take out
    Saturday- salad and soup

      smoked salmon pizza is intriguing…how does it work?

      I used my standard pizza crust recipe, but any type of pizza crust that you like will work. Bake it without toppings (I brushed it with olive oil and a sprinkle of salt). Once cooled a little, spread on creme fraiche then top with red onions, capers, smoked salmon, fresh dill, lemon zest, black pepper, and arugula.

      Enjoy with a glass of wine.

      It’s delicious!

    Sun: Pizza in a bowl
    Mon: Taco Salad
    Tues: Breakfast (Green Onion and Bacon Frittata, Home Fries)
    Wed: Soup and Sandwiches
    Thur: Breaded Pork Chops, Shells and White Cheddar
    Fri: Chili Cheeseburgers, French Fries
    Sat: Leftovers
    Thursday thru Saturday may still move around
