Call for Recipes: APPLES!

Every fall I get homesick for the Northeast in a big way. I can’t even hear the word foliage without getting a little sad…and really jealous. And I miss apple picking. Throwing on a cozy sweater and then walking through an orchard, the sun shining and the air cool. Eating apples right off the tree. Collecting the cheaper apples from the ground to make sauce and cobbler. The whole experience just makes me happy. I’m not even a huge apple person, but I’ll eat as many as you want me to if I get to go pick them. I’m a sucker for fall, what can I say?

My sister Anne called last night to inform me that she is drowning in apples. She requested that we do a call for apple recipes, and I thought that was a great idea. After all, if you DO live where there are orchards galore, you need apple recipes right about now.

Please share your best apple recipes! Cobbler, sauce, juice…whatever you’ve got, we want it! I’ll start us off with one of my all time favorites.

Apple Barvarian Torte
From The Pampered Chef
Crust:
– 1/2 C butter
– 1/4 t. vanilla
– 1/3 C sugar
– 1 C flour

Cheese mixture:
– 1 pkg 8 0z. cream cheese
– 1/4 C. sugar
– 1 Egg
– 1/2 t. vanilla

Apple mixture:
– 3 medium apples (sliced thin and peeled) – I used granny smith
– 1/3 C. sugar
– 1/4 t. cinnamon
– 1/4 C. slivered almonds

Preheat oven to 450. cream together crust ingredients. Press into flat bottom of a springform pan. Set aside. In medium bowl, blend cheese and sugar. Beat in egg and vanilla. Pour mixture over crust. toss apples in cin/sug mix and layer over top. Bake for 10 min. Reduce heat to 400 and bake 25 min more. Sprinkle with almonds and continue baking until lightly browned. Cool before removing from pan.

    Some are the simplest recipes: I peel and core mine and throw them into smoothies for my families. Mix it with some vanilla (or plain) yogurt and another fruit like frozen strawberries or pineapple and you’ve got a delicious, power-punched drink! Sometimes I need a little apple juice to make it mix easily, and you could always use homemade apple juice!

    is use granny smith apples instead on golden.

    HAHA, I was going to post the pioneer woman’s mountain dew apple turnovers too – so easy and sinfully delicious! instead I’ll post another winner – a recipe that Alton Brown created for Apple computers, “Apple Mac N’ Cheese”. This was really good!

    I love this post. Living in WA state, I too have tons of apples. Here is my favorite recipe that I make each Thanksgiving:

    Ingredients

    Crust
    1 refrigerated pie crust (or make your own, sorry I cheat)

    Filling
    1/4 cup white sugar
    2 teaspoon cornstarch
    1 heaping teaspoon cinnamon
    2-3 apples, any variety, peeled, cored and thinly sliced (I used Galas – they were on sale)
    Splash of milk
    1 teaspoon white sugar
    Handful of sliced almonds

    Icing
    1/4 cup powdered sugar
    1 teaspoon of milk

    Topping
    Whip cream or vanilla ice cream (optional)

    Directions:
    1) Preheat oven to 450 degrees. Remove pie crust from pouch; place flat on ungreased cookie sheet. Get rolling pin and roll dough so it’s roughly 14 inches in diameter. Set aside.
    2) In a bowl, mix 1/4 cup sugar, cornstarch and cinnamon. Add apples and gently stir until apples are completely coated and all of the sugar mixture has been mixed with the apples. Spoon apple mixture onto center of crust, spreading to within 2 inches of edge. Fold crust edge over filling to form 2-inch border, pleating crust as necessary. Brush crust edge with milk; sprinkle with 1 teaspoon sugar.
    3) Bake for 15-20 minutes or until crust is golden brown. Sprinkle almonds over apple mixture and set aside to cool.
    4) While cooling, mix powdered sugar and milk in a small bowl. Add more powdered sugar if icing is too thin, more milk if too thick. Drizzle icing over tart.
    5)Serve warm with whipped cream or vanilla ice cream if desired.

  8. deeeeeeeeelicious apple crisp

    Mix the following ingredients together and pour into ungreased 9×13-inch pan.
    8 cups peeled and sliced apples
    1 cup packed brown sugar
    2 T flour
    ½ cup milk
    1 cup water

    Topping:
    1 1/3 cup flour
    1 cup oats
    ½ cup sugar
    1 cup margarine, melted
    1 t salt
    2 t cinnamon
    2 packages dry Butterscotch pudding (not instant)
    Mix topping ingredients together and crumble on top of apple mixture. Bake at 350 degrees until golden brown, approximately 45-50 minutes.

    Jane, you should go up to Apple Hill! It is not quite the northeast, but it is a lot of fun at this time of year. It might be a bit of a drive for you, though.

    Quick Apple Tart: If you don’t want to work too hard, just slice apples thinly and toss generously with brown sugar and cinnamon. Roll out some thawed phyllo dough in a rectangle. Brush dough with butter, with a knife, draw a line around the perimeter, about an inch in from the outside edge (but don’t slice through), and then lay the apples out overlapping within your drawn ‘rectangle’. Bake at 350 for about 20-30 minutes, until crust is golden and apples are bubbly.

    It may seem like an odd combination, but you will surely have no regrets…I make these for a little boutique I have, and they are usually the first thing to go when we have a show!

    Cinnamon roll carameled apples:

    -Granny smith apples
    -Caramel…I buy Peter’s 5 lb bricks, but just a pack of individually wrapped ones will do.
    -melted white chocolate
    -brown sugar and cinnamon…use the same ratio as you would to make normal cinnamon/sugar for sweet rolls

    dip the apples in the caramel, let set, then dip in the white chocolate. while the chocolate is still wet, roll in the brownsugar/cinnamon mixture.

    I cut my apples smaller because I wanted to stretch out my tiny bruised apples and I added an extra egg. I also used mini muffin tins and got 60 muffins (which I’m now sending to friends and stockpiling in my freezer… and stomach). Other than that I used Deb’s/King Arthur’s Flour’s brilliant recipe.

    Is it an ‘apple’ recipe if it’s only half apples?

    We love this instead of traditional marshmallow topped sweet potatoes. I love it because I don’t have to measure anything. 🙂

    Apples ‘n’ Sweet Potatoes

    3 to 4 medium apples your favorite variety
    3 medium-large sweet potatoes
    sugar, cinnamon, butter

    wash and peel apples and sweet potatoes. slice all no larger than 1/4 inch thick. in a tall baking dish with lid layer in this order: sweet potato, apple, sprinkle of sugar and cinnamon, small pats of butter, repeat until you can no longer squish any more into your baking dish. finish with more sweet sprinkle and butter. cover and bake at 350 for 45 miniutes. a fork should easily be able to pierce all layers.

    No apple recipe for you, but just wanted to let you know that when I was growing up in the east bay, we used to go to Sebastapol for apple picking–not sure how many orchards are still there, or how much farther it would be for you, but might be worth a day trip to take away some of the homesickness 🙂

    Apple Candy Bar Salad

    SERVINGS: 12
    CATEGORY: Lower Fat
    METHOD:
    TIME: Prep/Total Time: 15 min.

    Ingredients:
    1-1/2 cups cold milk
    1 package (3.4 ounces) instant vanilla pudding mix
    1 carton (8 ounces) frozen whipped topping, thawed
    4 large apples, chopped (about 6 cups)
    4 Snickers candy bars (2.07 ounces each), cut into 1/2-inch pieces ( I used the mini’s)

    Directions: In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in whipped topping. Fold in apples and candy bars. Refrigerate until serving. Yield: 12 servings (3/4 cup each).
