I recently picked up a bag of Bob’s Red Mill Oat Bran Hot Cereal. Our girls love hot cereal so I thought we’d give it a try. On the back was a recipe for oat bran muffins. Β I love bran muffins, so I had to make the recipe. (I’ve yet to cook hot cereal with our bag of oat bran!)
I made quite a few adaptations to the recipe – it was far too healthy. π Our muffins came out light and fluffy, with just the right amount of sweetness. Β I used a mini muffin tin and was popping muffins like candy. (Side note: Cate, my 5-year-old, gave me the muffin tin for Christmas and I LOVE it. What a smart little girl. Mini muffins are my new fave.)
- ¾ cup whole wheat or regular pastry flour
- ¾ cup Bob's Red Mill oat bran cereal
- ½ cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon baking soda
- ⅓ cup banana (1 medium), mashed
- ½ cup yogurt
- 1 egg
- 2 tablespoon butter, melted
- ½ teaspoon vanilla
- Mix dry ingredients. Mix liquid ingredients in separate bowl. Combine the two mixtures and stir until moistened. Lightly grease or line muffin tin with paper cups. Fill ⅔ full. Bake at 400ΒΊ for 18-20 minutes. Makes 10-12 muffins. (If you use mini muffin tins like I did, bake at 350ΒΊ degrees for 18-20 minutes. Makes 24 mini muffins.)

Thanks for the recipe–all the muffin recipes I’ve ever used (or any quick breads) call for SO much sugar/oil that I might as well make a cake. I’ll try this one!

that’s funny, christie – yahoo and I must be on the same wavelength π I’ve always been happy with their products!
I have to admit, I am an absolute addict of these muffins! I use whole wheat pastry flour and perfectly happy with the results. I also like to add ~1/8 tsp of cardamom & nutmeg, gives them a nice “spice muffin” flavor. If I want them sweeter I throw 1/2cp. semi-sweet chocolate chips in, and if I’m feeling fruity I use a 1/2cp. of blueberries. Both are delicious but WARNING!!! If you use blueberries either refrigerate the muffins or eat them quickly, the muffins tend to be VERY moist and will spoil quicker than the base recipe.
the original recipe also has these ingredients 1/2 cup each of chopped dates, chopped nuts, chopped carrots and 1/2 tsp
vanilla, I egg or 2 egg whites. I eat one with morning coffee, regular size muffin cups. they are delicious and healthy.

I’ve made this recipe so many times. It’s my husband and my favorite. I don’t have whole wheat flour on hand so I just use white flour but we love adding extra things to it. Grated carrots, pecans are walnuts, craisins sometimes, chopped apples besides the bananas of course. I make them in the little teeny muffin tins and with one recipe can get 48 little muffins and they’re the perfect size if you just want a quick snack or even a few for dessert.
