Summer Break! Drop Menus Here!

Hello foodie friends! I am crying “Uncle!” and going to take a summer break from meal planning (since I basically am already). We aren’t eating out a ton or anything, but we are taking a very relaxed approach to dinner each night. I haven’t ever officially taken a summer blog break from planning my weekly menu…it feels weird but also a bit refreshing. I think by the time school gets started, the break will have me ready to get planning weekly again. 

Until then, please feel free to drop your menus on this post all summer long. It can be our summer resource weekly menu spot.

    Happy Summer! Enjoy your break! I haven’t posted in a while, but I have had menus and am following them. I just made our menu for the week of 7/10-7/16:

    Sun: Pan fried perch & bluegill, roasted potatoes, coleslaw
    Mon: Cheese ravioli with red sauce, salad
    Tue: Halibut, peas, coleslaw
    Wed: Crescent roll chicken casserole, mixed veggies
    Thu: Seared scallops, corn on the cob, watermelon
    Fri: Pesto shrimp with white beans

    All tacos at our house this week:

    Breakfast sausage with pineapple
    Teriyaki chicken

    Any meals that are left over will be planned on the fly.

    Happy summer break!! Trying to keep my meals from heating my house up too much 🙂

    Monday: Black Bean, Rice and Avocado Burritos with Pico and Fresh Veggies

    Tuesday: Carne Molida Tacos with Guac, Corn and Salsa

    Wednesday: Steak Fajitas with Beans, Pico, and Salad

    Thursday: Chili, Fritos and Corn

    Friday: Pork Larb and Sweet and Salty Coconut Rice with Peas

    Saturday: Italian Sub Sandwiches and Fresh Veggies

    Sunday: Crispy Chicken Caesar Salad and Creamy Chocolate Pudding for Dessert 🙂

    Hi!
    Today is the first day of our new week and already the hot weather is making us shift our plans. I’m throwing the cod into the freezer for later (hopefully it will weather the freezer well; I don’t know if I’ve frozen cod before.)

    Sunday: leftover lasagna and broccoli
    Monday: veggie burger salads

      Tuesday: Korean dumplings and edemame
      Wednesday: Balsamic Fruit and Grain Salads
      Thursday: Instant Pot Moroccan Lentils
      and then Friday and Saturday I am on my own as my husband will be away.

    So sick of the heat! I’m trying not to cook too much. Lots of salads, cold cut sandwiches, tacos, shredded chicken and pork bbq sandwiches, corn on the cob, burgers, brats, hot dogs, and more salad. Hope you’re back soon with ideas for the end of summer, because I am running out. 🙂
