Tortilla Soup Success!

When I wrote about Aaron and Lindsay’s Chicken Tortilla Soup Extravaganza last month, the response was huge.  Understandably, since it looked SO delicious. I knew the soup was tasty, but I had never actually made it myself. This week I finally tried out the recipe.

It was really easy to make! SO simple.  And of course just as delicious as ever.  My kind of recipe! The tortilla strips were also a cinch to cook, but mine were NOT as tasty as Lindsay’s, so I’ve gotta ask her what EXACTLY she does there.  Anyway, just wanted you to know that not only is the recipe delicious, it’s quite simple, despite the fact it is classic Gourmet Lindsay.  Thanks again, Lindsay and Aaron!

    I made it shortly after you initially posted about it… yeah, it didn’t work out so well. I accidentally dumped tons of the spices in {maybe I need exact amounts when dealing with spicy ingredients? I have a tendency to go a little overboard} and then it was a downhill fiasco from there. I’ll have to try it again sometime. I’m sure it will be much better next time.

    i’m glad a couple of people had tortilla soup success. as for the tortilla strips, i really don’t know if the brand of tortilla makes a whole lot of difference. you’re definitely going to have the best results if you use plenty of oil because they’ll get nice and crispy. i managed to do it before with cooking spray, but found it difficult to duplicate those results again. i ended up with really chewy, hard strips on a subsequent try. (at least they soften up when submerged in the soup though).
    jane, i thought you swore you’d never fry up your own chips! i started doing this because i don’t really keep chips in my cupboard, but i often have corn tortillas on hand. i loved the results and the strips looked so pretty, i’ve kept with it.

    I tried the soup last night and although the taste was absolutely delicious my husband complained that it was just too watery (and I agreed) so I was wondering if anyone tried flour or something else to thicken it a bit? I simmered it for a good long while but it didn’t really help all that much.

    that’s interesting…it definitely is a BROTH based soup…if I were you, I would try making up a little cornstarch and water slurry to thicken it up…and if you do try it, please report back on how it goes!

    if anyone else has ideas/experience with a thicker tortilla soup, please share!

    Hillary, the traditional way to thicken tortilla soup is by using masa harina, perhaps 2 Tbsp for this recipe. That is the flour they use to actually make tortillas.
