hello from route 80 north of lake tahoe! it is snowing something fierce and we may not get home before march, maybe april. but I haven’t missed a menu post yet and nothin’s gonna stop me (gotta love iPhone)!! but typing on my phone is NOT fun, so I’ll throw my menu up late tonight. so the pressure’s on! post your menus!
and while we are crossing our fingers the snow lets up, it is beautiful. I mean really, really pretty. and a weekend in tahoe is worth it! (and for you worriers out there, we have chains on the tires and traffic is slow…we’ll be safe!)
*UPDATE: We made it home! Here’s my menu (sorry there are repeats from last week. I didn’t do as much cooking last week due to our last-minute trip to Tahoe):

– Chicken Masala (simmer sauce from Trader Joe’s, with chickpeas added)
– Brown Rice
– Naan bread from TJ’s freezer section (this will be my first time trying it…can’t wait as I’ve heard it’s great!)

– Quesadillas (as per Cate’s request)

– Homemade Mac & Cheese (I’m going to add cauliflower puree)

On Saturday I cooked a pot roast (using a recipe for Pork Barbacoa in hopes of recreating my favorite Cafe Rio Salad). It turned out great! Needless to say, we have a lot of meat still leftover, and now for my menu:
Monday – My version of a Cafe Rio Salad w/ my Pork Barbacoa
Tuesday – burritos or nachos w/ rice, beans, more leftover pork, cheese, etc.
Wednesday – Lasagna (most likely will try the Spinach & Prosciutto recipe you posted, thx)
Thursday – Shrimp Scampi
Friday – Breakfast for dinner
Saturday – leftovers, most likely
Monday: grilled chicken with baked potatoes & broccoli
Tuesday: pizza with fresh mozz, prosciutto, and basil
Wednesday: pesto tortellini with garlic bread
Thursday: ham and potato soup
Friday: teriyaki salmon with rice pilaf

Ah, the Shark. I will conquer the Shark. The taste was good, but it was dry. I can’ seem to find a way to cook it through without drying it out. My oven broiler is fixed now. I’m trying that next. Definitely not this week, though.

Very uninspired this week. I am having a freezer meal trade with some friends Wed night. That usually perks me up for a while.
Jealousy! We lived in the bay area for three years while my husband was in school, and I always wanted to go to Lake Tahoe and we never did it. Shame on us. Glad you had such a great time!
