Week 105 Menu

hello from route 80 north of lake tahoe! it is snowing something fierce and we may not get home before march, maybe april. but I haven’t missed a menu post yet and nothin’s gonna stop me (gotta love iPhone)!! but typing on my phone is NOT fun, so I’ll throw my menu up late tonight. so the pressure’s on! post your menus!

and while we are crossing our fingers the snow lets up, it is beautiful. I mean really, really pretty. and a weekend in tahoe is worth it! (and for you worriers out there, we have chains on the tires and traffic is slow…we’ll be safe!)

*UPDATE: We made it home!  Here’s my menu (sorry there are repeats from last week. I didn’t do as much cooking last week due to our last-minute trip to Tahoe):

Easy Apricot Chicken (Jen, thanks for reminding me about this old stand-by of mine…and I’m so glad it was hit for you!)
– Rice
– Veggie

– Beef Stroganoff with yogurt and dill (recipe in the February Real Simple magazine I want to try…it’s not online yet…if it’s good, I’ll type it up!)

– Chicken Masala (simmer sauce from Trader Joe’s, with chickpeas added)
– Brown Rice
– Naan bread from TJ’s freezer section (this will be my first time trying it…can’t wait as I’ve heard it’s great!)

– Leftovers

– Quesadillas (as per Cate’s request)

– Eat out

Homemade Mac & Cheese (I’m going to add cauliflower puree)
– Salad
– Crusty bread

    Monday: Spinach Prosciutto lasagna (I’m trying this out for the first time)
    Tuesday: Leftovers
    Wednesday: Hubby gone, so cereal
    Thursday: Ravioli
    Friday: pizza

    ..busy week ahead, so I’m keeping it easy. Looking forward to trying out the lasagna tomorrow!

    Tuesday: Shepherd’s Pie (or leftover chicken soup for sickies)
    Wednesday: Beef Stew, good bread
    Thursday: BLTs, oven fries & fresh fruit tray
    Friday: breakfast for dinner–pancakes, eggs, fruit
    Saturday: Chicken Enchiladas, green salad
    Sunday: beef roast, mashed potatoes & gravy, steamed vegetables

    Tuesday: spaghetti; salad; bread
    Wednesday: tacos
    Thursday: Spinach & Feta Mini Calzones; cous-cous salad
    Friday: pizza

    Sunday: Chicken & Sausage Gumbo

    Tuesday: Spinach and prosciutto lasagna (I told you your picture looked good!)

    Wednesday: Watching some bball so making spicy chicken nuggets and homemade potato chips

    Thursday: Stirfry

    Friday: Progressive dinner with friends. I am making some sort of soup TBD

    Saturday: Date night

    Thursday – leftovers OR spaghetti
    FRiday/Saturday – out of town

    (I’m running in a half marathon on sunday, so I’m attempting to carbo-deplete (tues/wed) and then carbo load (thur/fri);)

    On Saturday I cooked a pot roast (using a recipe for Pork Barbacoa in hopes of recreating my favorite Cafe Rio Salad). It turned out great! Needless to say, we have a lot of meat still leftover, and now for my menu:
    Monday – My version of a Cafe Rio Salad w/ my Pork Barbacoa
    Tuesday – burritos or nachos w/ rice, beans, more leftover pork, cheese, etc.
    Wednesday – Lasagna (most likely will try the Spinach & Prosciutto recipe you posted, thx)
    Thursday – Shrimp Scampi
    Friday – Breakfast for dinner
    Saturday – leftovers, most likely

    Tuesday: pizza with fresh mozz, prosciutto, and basil
    Wednesday: pesto tortellini with garlic bread
    Thursday: ham and potato soup
    Friday: teriyaki salmon with rice pilaf

    Tue- Penne with ham and broccoli
    Wed- Baked chicken and potatoes
    Thur- Spinach and prosciutto lasagna (that picture looked so good!)
    Fri- Turkey chili and mini corn cakes (3rd week on the menu, I will make it this week!)
    Sat- Pizza fondue

    Glad you got back ok Jane! I am feeling very uninspired this week so I’m just going to copy Jane’s menu with a few alterations.

    Mon- Apricot chicken
    Tue- Quesadillas
    Wed- Date night!
    Thur- Chinese New Year Party
    Fri- Mac and Cheese
    Sat- Whatever
    Sun- Lasagna

    I’m finally going to post a menu after lurking here for so long! I’d have posted one sooner, but didn’t have my act together enough to plan ahead!

    Monday-Texas Haystacks
    Tuesday-Stir Fry
    Wednesday-BBQ Chicken, Pasta Roni, Corn
    Thursday- Fajitas, Mexican Rice, baby carrots
    Friday – Anne’s Chicken (Crockpot), rice, green beans
    Saturday – Burgers, Nuggets, Fries, Salad
    Sunday – Cuban Tacos

    Hey, thanks for the shout-out, Jane! It made me feel special today! (I needed that–the toddler pooped in inappropriate places and the baby’s reflux was out of control)
    Ah, the Shark. I will conquer the Shark. The taste was good, but it was dry. I can’ seem to find a way to cook it through without drying it out. My oven broiler is fixed now. I’m trying that next. Definitely not this week, though.

    Here’s my week
    M: potstickers & eggrolls (from Sam’s Club) & fried rice (Happy Chinese New Year)
    T: Leftovers from Mon and Sunday (Very busy day)
    w: Nacho Bar (5 yr old has been begging for this)
    Th: Breakfast Toast Pizza — It was sampled at the grocery store this week (HEB for you Texans) and was really tasty
    F: Pomegranate Chicken (more like a weak curry, found it online–very tasty)
    S: Leftovers (hopefully)
    S: Didn’t know it’s the Superbowl (refer to earlier comment about poop and spit–I’m out of touch) I’ll probably grill some basic burgers and have veggies & dip

    Very uninspired this week. I am having a freezer meal trade with some friends Wed night. That usually perks me up for a while.

  23. Jealousy! We lived in the bay area for three years while my husband was in school, and I always wanted to go to Lake Tahoe and we never did it. Shame on us. Glad you had such a great time!

    Sun- Cream cheese chicken, strawberry spinach salad, wheat rolls, pina colada birthday cake

    Mon- Orange chicken

    T- Broccoli calzones

    W- Chicken salad with apples and grapes

    Th- bacon-topped chicken with glazed carrots and potato skins

    F- out

    Sat- spinach prosciutto lasagna, per your idea. Can’t wait to try it!
