Cate, my 4-year-old, has started creating her own ‘recipes.’ The latest is this breakfast appetizer, Mighty Bites on Life Cereal. She was SO proud this morning and she’ll be happy to know her recipe made it to the “blogsite,” as she likes to call it. (The ‘chef’ just saw me editing the picture and said, “Mom, you can make those if you want. You just needs lots of Mighty Bites.”)

We had the creamy enchiladas for dinner tonight! Yum! I contemplated trying them with shrimp but went with the chicken instead! Maybe next time!

Weekends as always man made. Last weekend he did tamale casserole in a slow cooker and it was wonderful. Try it some day.

Tuesday – Bean Burritos, roasted asparagus and greens and tomatoes for the burritos. I think I will try cooking the beans overnight in the crockpot with garlic and red pepper flakes.

I had my tuna finally last week”¦and salmon and grilled peppers that I love.
Thurs., Fri., Sat., Allen is on his own, but he’s a great cook. He will probably do porkchops for one thing and potatoes – such an Idaho boy.
