Week 113 Menu

Cate, my 4-year-old, has started creating her own ‘recipes.’  The latest is this breakfast appetizer, Mighty Bites on Life Cereal. She was SO proud this morning and she’ll be happy to know her recipe made it to the “blogsite,” as she likes to call it.  (The ‘chef’ just saw me editing the picture and said, “Mom, you can make those if you want.  You just needs lots of Mighty Bites.”)

– Chicken Paninis, with whatever toppings I have on hand

– Chicken Masala & Rice w/veggie
– Naan bread (from Trader Joe’s freezer section – yum!)

Creamy Enchiladas

– Leftovers

– Breakfast for dinner

– Eat out

    WOW, #1 2 weeks in a row! For those who expressed interest about the homemade scrubbies, I put a tutorial on my blog.

    Here is my menu!
    S-almond crusted cod with green beans and mushrooms
    M-baked chicken
    T-spaghetti squash toss with roasted veggies
    W-grilled chicken salad with lemon vinaigrette
    Th-roasted red pepper sauce with pasta
    F-chicken soup

    We had the creamy enchiladas for dinner tonight! Yum! I contemplated trying them with shrimp but went with the chicken instead! Maybe next time!

    M- Chili
    T- Lasagna (nothing fancy-frozen one)
    W- Grilled shrimp, orzo, veggies
    Th-Taco night
    F- eat out
    S- Hamburgers, potatoes, some sort of veggie
    S- Lemon chicken, rice, veggies

  3. Sick kiddo meant we had to do some rearranging of last week’s plans. Didn’t get to the chicken kebabs or the date night.

    Sunday: Mexican Green Salad with Grilled Lime Turkey Breast
    Monday: Grilled Veggie Pizza (weather permitting)
    Tuesday: leftovers
    Wednesday: Vegetable Lo Mein
    Thursday: Rosemary Lemon Chicken Kebabs and Grilled Red Potatoes
    Friday: Date Night (Macaroni Grill gift card)
    Saturday: Fettuccini Alfredo, Italian Green Salad

    Monday-Grilled eggplant, zucchini, roasted red peppers, on grilled french bread. A little crostini action with our Artisan in 5 bread!
    Tues-Salmon with roasted red potatoes
    Wed-Buttermilk whole wheat waffles with strawberries
    Thursday-Veggie quesidillas
    Friday-Probably eat out
    Saturday-Homemade pizza

    I love your site…thought I’d post for fun…
    M-Grilled mahi-mahi w/ mango salsa, black beans and brown rice.
    T-African stew(sweet poatoes, beans, etc)
    W-Thai pizza(one of our favorites)
    Th-Orange chicken and stir fried veggies
    F-Tri-tip roast, steamed veggies and sweet potato fries.
    S-leftover tri-tip sanwdwiches

    Hope everyone has a good week and it’s warmer where you are! We are expecting snow just about everyday this week!
    M- Enchiladas,refried beans,frozen vegetables
    T- grilled pork chops,baked potatoes,salad
    W- buttermilk waffles w/ coconut syrup,smoothies
    TH- hot dogs,chips,BBQ baked beans
    F- homemade pasta sauce,garlic bread

    I want some more veggies in this week..oh well.

    Mon – Beef & green pepper stir fry(yum a favorite)
    Tues – Casserolle? don’t know what yet
    Wed – Chili
    Thur – Gyoza, rice & miso soup of some sort probably just daikon radish, namako mushrooms and tofu maybe some seaweed or leeks too
    Fri – Homemade pasta

    Weekends as always man made. Last weekend he did tamale casserole in a slow cooker and it was wonderful. Try it some day.

    Tues: white chicken chili with pesto bruschetta
    Wed: manicotti with more pesto bruschetta (we make enough to last a couple days)
    Thurs: arroz con pollo (A.C.P @ the mexican restaurants- rice with chicken and lotsa cheese!!)
    Fri: grilled shrimp caesar salad

    Monday-Out with friends
    Tuesday-Mini turkey meatballs in tomato sauce with gnocchi
    Wednesday-Butternut squash mac and cheese, green beans with red onion
    Thursday-Fake lasagna (with ravioli) with roasted vegetable sauce, spinach garlic bread, salad
    Friday-Lentil tacos, corn/pepper saute
    Sunday-Peanut noodles with lots of veggies

    Sunday – leftovers – we had eaten out twice last week to celebrate a 40th birthday in the family. We were tired
    Monday – homemade chicken and rice soup…(from Costco chicken bones) Full of vegies too. W.W. bread.
    Tuesday – Bean Burritos, roasted asparagus and greens and tomatoes for the burritos. I think I will try cooking the beans overnight in the crockpot with garlic and red pepper flakes.
    Wednesday – Beef Stew with dumplings
    I had my tuna finally last week”¦and salmon and grilled peppers that I love.
    Thurs., Fri., Sat., Allen is on his own, but he’s a great cook. He will probably do porkchops for one thing and potatoes – such an Idaho boy.
    I have a workshop. Wahoo!

    Monday-leftover stuffed shells from Sunday, salad
    Tuesday-cabbage soup & crusty bread
    Wednesday-some kind of chicken, rice, asparagus
    Thursday-taco night

    F- weekend at in-laws
    S- weekend at in-laws (maybe we’ll cook some Indian food for them)

    Tuesday: grilled steak & baked beans (maybe?)
    Wednesday: lentil soup (from freezer) & dinner rolls
    Thursday: baked potato bar – this has been a back-up plan for the past couple weeks, so I think I’ll actually put it on the menu this week.
    Friday: pizza? leftovers?

    Monday: Italian vegetable stew, wheat bread
    Tuesday: Empanadas (didn’t make last week), salad
    Wednesday: Creamy baked chicken, rice, green beans
    Thursday: Baked ziti, salad
    Friday: Taco night which may in fact be tostada night
    Saturday: family BBQ (I’m bringing dessert)
    Sunday: sandwiches or breakfast for dinner (something easy, day of rest and all)

    — tunisian fish with couscous and chickpeas

    Thur – Hearty Lentil soup and Crusty bread
    Fri – Chicken Paninis (thanks for the inspiration, Jane!) with fruit salad and maybe leftover soup
    Sat – Taoo salad

    I haven’t been able to visit/post in a while due to crazy work schedule but wanted to drop a line that this post was super cute. I could hear the little girl voice narrating as I read;-)
