Aren’t these beautiful strawberry tops? They caught my eye yesterday and I had to snap a photo. Yes, I know I did not carefully cut the tops off, therefore wasting fruit. No lectures please. I was in a strawberry jam emergency at the time of the chopping, which emergency I will share the details of with you later this week!

Tue: (company coming) strawberry spinach salad w/ grilled steak and Gorgonzola cheese, roasted red potatoes and maybe corn on the cob

Thur: Twice baked potatoes
Fri: Apricot pork chops, hash browns and fruit salad
Sat: Baked mac n’ cheese
Sun: Spaghetti with meat sauce, garlic bread sticks, green salad

M – asparagus & some crazy mushroom(don’t know the name in either Japanese or English) pasta + cucumber yogurt salad
T – gyoza, brown rice, miso soup & boiled spinach w/ soy sauce and benito flakes
W – beef stir fry w/ green peppers, bamboo, goya, onions and maybe carrots
Th – salsa chicken, brown rice and steamed veggies
F – zucchini pizza!
Sat – honey makes tacos, yeah for homemade tortillas
Sun – honey does something in a crockpot & Father’s Day cake
I haven’t figured out what days I’m making what. Summer has been busy and I tend to have to play it as it goes a lot. We’ll have leftovers as we need, but I’m planning these recipes for sure.

I almost forgot…Tuesday night is Mom’s Night Out! My group is dining at Flying Star Cafe. So looking forward to that. Hubby will probably do grilled cheese and watermelon with the kids. His specialty!

haha, you totally read my guilty mind as I looked at all that delicious strawberry attached to the tops! But, my lips are sealed. 🙂
Mon – Mommy & Sammy eat out.
Tues – Mexican Lasagna (leftovers) and side salad. Make a banana cream pie using graham crackers, pudding and bananas. For Sam: chicken tender and cheese quesadilla with salsa on the side OR homemade chicken noodle soup.
Wed – Breakfast for supper – whole wheat pancake recipe (thanks TWFD), fresh squeezed orange juice and turkey sausage…maybe a little fruit salad.
Thurs – Flounder fillets w/lemon pepper, rice w/veggies, Sissy Schubert buns and side salad.
Fri – FUN FRIDAY! spaghetti with meatballs, salad, crusty bread and tapioca for dessert.
Sat – Corn on the cob, BBQ chicken on the grill, cut-cup veggies with ranch dressing (Sam) or hummus (mom & dad)

Monday (June 15): Pan-seared monkfish fillets with olive-orange salsa; sautéed black cabbage with crimini mushrooms and garlic
Tuesday (tonight): Vegetable plate — roasted new potatoes with lemon; pan-glazed sugar snap peas and ginger; poached farm egg; lambs’ quarters with garlic scapes and shallots
Wednesday (June 17): Thin spaghetti with black cabbage, anchovy and green garlic
Thursday (June 18): White beans stewed with bacon and summer greens (turnip greens and beet greens)
Friday (June 19): Not sure yet, but it’ll probably be soup and salad.

We’ve been enjoying corn on the cob a lot lately too. It’s easy to grill up and oh-so-sweet – the perfect summer side dish!
