Week 127 Menu

The other day on a walk with my girls I saw a neighbor picking fruit from a tree in her yard.  I asked her what kind of tree it was…and she offered to send us home with a bag of the fruit!  It was a plum tree and this is about half of what she gave us.  We don’t even know the woman.  I love friendly neighbors with an overabundance of plums!

I must confess, I did a terrible job sticking to our menu last week…I was SO busy, I never even made it to the grocery store! Which reminds me, I’ve kept track for several weeks and I’ll do a post soon comparing my menu plans with what we really ate…stay tuned for the scoop!

– Caprese Salad

– Fancy Nachos (we didn’t do this last week)

– Asian Spinach Salad (if you’re new to the blog, I LOVE this recipe)

– Leftovers

– Grilled cheese and tomato soup

    Happy 4th to everyone! Goodness.. this is my first post back from a 3 week hiatus! I’ve been so busy, sorry everyone! Here is my menu for the week:

    Sun: out at a friends for a BBQ – i love summertime!
    Mon: tacos with homemade pico de gallo
    Tue: grilled chicken salad
    Wed: teriyaki glazed salmon
    Thur: leftovers or grilled cheese sandwiches
    Fri: out at a friends
    Sat: (Happy 4th!) Camping this weekend
    Sun: Camp food

    It’s been blazin’ saddles hot up here! So I’m not inspired to cook. Salads and BBQ’s – here I come!

    Tuesday: Rosemary Garlic Tilapia and Caesar Salad
    Wednesday: Left Overs
    Thursday: Roast Chicken with Potatoes and Green Beans
    Friday: Slow Cooker Chicken Cacciatore and Zucchini
    Saturday: Hot Dog cook out and Salad
    Sunday: Left Overs

    This is my first week reading this blog. I don’t plan my meals day by day, but I do have 5-7 meals in mind before I go shopping and then decide each day what is for dinner depending on how much time we have. This week:

    – Macaroni and Cheese, plus broccoli (homemade pasta… 1/2 wheat, 1/2 white flour)

    – Grilled Chicken Sandwiches (marinated in a home-made marinade very close to pesto), with corn on the cob

    – spaghetti with my wife’s meat sauce, frozen cord, grilled garlic bread (my new favorite grilling item)

    – grilled salmon, mashed pots, green beans

    – grilled cheese, broccoli, tomato soup

    – green pepper, onion, and cheese quesos, with rice

    Now that schools out and I am off for the summer I can get back to planning, well, back to cooking actually!

    Sun- Tri-tip, roasted potatoes, veggies
    Mon- Homemade sub sammies, fruit, chips
    Tues- Chicken Burritos, beans, rice
    Wed- Shrimp scampi pasta
    Thurs- Veggieritos, fruit, maybe smoothies?
    Fri- Leftovers/eat out
    Sat- 4th of July BBQ

    Sun – whole wheat pasta/chicken sausage and brocc, salad
    Mon – burgers and Alexia fries and onion rings
    Tues – roast chicken w/brown rice salad
    Wed – left overs
    Thurs – taco pie
    Fri – dinner at mom in laws
    Sat – cook out or eat out

    Trying to use up what we have in the freezer and pantry before we move!

    M – fajita chicken salad – fajita chicken, greens, corn, black beans, red bell pepper
    T – Spicy Rice, Bean & Cheese Skillet (

    R – mac & cheese w/veggies – freeze leftovers for Sun

    I have not done this forever and have been suffering…truly suffering….

    Monday—checking out the farmer’s market then making dinner
    Tuesday—Leftover Rosemary-Lemon Salmon (from Sunday)
    Wednesday—Pasta and making lots of pasta sauce to freeze and take to mom-in-law who just had surgery and friend who is having a baby
    Thursday–Breakfast night!!! French toast with berries
    Friday–I work—Leaving leftover pasta for hubby and sitter
    Saturday—out to eat—going out of town hopefully!!!
    Sunday—frittas with finds from farmer’s market

    Not an excited week as far as food goes—but no one will starve!!

  9. How nice of your neighbor! Enjoy those plums! Are you going to enjoy them fresh or do you have plans to make something yummy with them?

    This week our menu options are:

    Spinach Quesadillas
    -Fresh Tomato, Basil and Mozzarella Pasta
    -Homemade Pizza
    Sorta Soba Noodle Bowl – didn’t end up making this last week
    -And some kind of BBQ for the 4th. Probably Blue Cheese Balsamic Burgers, Grilled Corn, Watermelon Lemonade & something for dessert…suggestions?

    Here’s my menu…I was struggling for a bit of inspiration…of course, the ideas/menus shared here always help…I leafed through one of my fav cookbooks, “Quick Fix Meals” by Robin Miller and found some mid-week inspiration.
    M- Leftovers or Terriyaki salmon with sweet pot and rice
    T- Roasted Chicken with smokey Apricot Sauce (Robin Miller’s recipe) with Red potatoes, capers, tom, & onion salad, veggie
    W- Chicken and mushroom quesadillas (using leftover chicken) with salad
    Th- Stuffed peppers
    Fr- Dinner out to celebrate my birthday
    Sat- 4th of July grill out
    Sun- Leftovers

    No menu for the week (vacations and holidays make for unstructured life), but I wanted to mention that my mom made some AMAZING plum jam a few weeks ago. After your post on freezer jam, I know you’re an aficionado (and unafraid to attempt homemade jam). You should try it out! Yum!

    Wed – gyoza, miso & green beans…oh and brown rice of course
    Thur – tofu quiche
    Fri – mushroom stir fry
    Weekend – a la my sweet MIL, Japanese food heaven.

    Tuesday: Recipe Club picnic-making deviled eggs
    Wednesday: Chicken Parmesan Burgers, zucchini
    Thursday: at a friend’s house
    Friday: Grilled pork chops with mango salsa, potato veggie mash
    Saturday: Cookout!
    Sunday: Spicy grilled chicken thighs, grilled veggies, pasta salad

    Monday: Tortellini
    Tuesday: Leftovers
    Wednesday: BBQ Beef on whole wheat buns (
    Thursday: Chicken enchiladas
    Friday: Going to a baseball game so ballpark food
    Saturday: Lobster/clambake for July 4th

    Wednesday-salmon, wild rice, roasted veggies
    Thursday-salad bar, chili, cornbread
    Friday-steak fajitas

    T: Turkey Kielbasa with peppers & onions & Coleslaw
    W: Asian lettuce wraps & Mandarin oranges
    R: Grilled chicken, bistro salad & green beans
    F: Pulled pork sandwiches & oven fries
    S: Cookout – bringing Chinese chicken salad & either blondies or samoas.
    S: TBD

    Menu subject to change along with the New England weather.

    I’m a little late to the game this week, but here I am!

    Sunday – Roasted chicken, fresh tomato & avocado salad.
    Monday – Hubby grilled pork ribs! Salad w/ cherries & goat cheese.
    Tuesday – “Enchilada Pie” in the crock pot & salad
    Wednesday – Pulled pork sandwiches & carrot sticks.
    Thursday – left overs
    Friday – spaghetti
    Saturday – burgers @ yam fries

    I wanted to try some new recipes and have enjoyed cooking this week.
    Sunday: Dinner out at Cheeseburger Bobby’s (We had a coupon and it was really good.)
    Monday: Homemade Pizza
    Tuesday: Bolognese Sauce (Pioneer Woman recipe) w/ Spaghetti
    Salad with Oil & Balsamic Vinegar
    Crusty Bread
    Wednesday: Easy Green Enchiladas(4 Reluctant Entertainers)
    Black Beans
    Yellow Rice
    Thursday: Dumplings with Soy Slaw (Real Simple)
    Friday: Grilled Chicken
    Roasted Green Beans
    Salad with Oil & Balsamic Vinegar
    Saturday: Hamburgers with the Fixings
    Field Family Coleslaw
    Deviled Eggs
    Fruit Salad
    Mahogany Cake

    The Green Chile Enchiladas were so simple and a winner with my family.
