Week 162 Menu

I can’t find my camera cord…so no picture today. Bummer. I even have some great shots of my messy, tiny kitchen and itsy-bitsy oven so you could all feel bad for me. It’s a happy day, though…my cookie sheets just barely fit in the oven. Yippee!

We have had such an amazing show of support from friends this past week – not living near any family, we really needed it. If you were one of the people who fed us, packed and/or moved our stuff, or took care of our daughters…THANK YOU from the bottom of our hearts!

    Friday-Hamburger Helper 4 Cheese Lasagna…What can I say?..we love it!
    Saturday-Chicken and Stove Top Casserole (I leave out the veggies and serve with salad instead)
    Sunday-“Catch as Catch Can” night…a throwback to my childhood where you kind of scrounge around and decide what you want on your own. Everybody eats something different
    Monday-Tamale Pie
    Tuesday-Chicken Alphabet Soup
    Thursday-Stuffed Shells

    We are having a Cooking With Trader Joes type of week!

    Sunday: eggplant parmesan

    Meatless Monday: stuffed peppers from Trader Joes w/ garlic bread sticks from TJs and ceasar salad in a bag (also from TJs)

    Taco Tuesday: (more from Trader Joes) grilled pollo asada tacos (in taco shells from TJs, w/shredded cabbage from TJs)

    Chicken Weds: yellow curry chicken w/ coconut rice (yellow curry sauce from Trader Joes, lite coconut milk for coconut rice from TJs) plus naan from TJs

    Pasta Thursday: stir fry w/ rice & veggies

    Fish on Fridays: Costco salmon fillets – either just baked w/ olive oil & lemon or bourbon/maple syrup recipe from LA Times. Serve w/ sweet potatoes sprinkled w/ Old Bay Seasoning and baked in oven.

    Sunday – Easy Smoked Sausage Jambalaya
    Monday – Creamy Shrimp and Artichoke Pasta
    Tuesday – Leftovers
    Wednesday – White Chili with Avocado & Tomato, topped with Tortilla Strips
    Thursday – Frittata – not sure what kind yet
    Friday – Leftovers
    Saturday – Pasta with Butternut Parmesan Sauce – Jane you should make this on Saturday. It is yummy and easy, that way you can get your real home cooked meal without stressing.

    fri-broiled fish, spinach, rice
    sat/weekend-some kind of soup!

    Saturday: Leftovers? Out? I’m working. So, it’s hard to say!

    Wow–#11 That’s a first for me, I think. Congrats on the new place, Jane. How about Pot Roast for this weekend? Kind of celebratory but still easy to throw in the oven. Plus, you can even get a few things done during the day. Pioneer Woman showed off hers on GMA and it is posted at her site, if you need inspiration!

    Jane, after moving and unpacking, I’d go for a comfort food dinner on Sunday. A killer baked macaroni and cheese would do it for me. With a virtuous salad or green vegetable.

    Congratulations on your successful move! Wish we could have watched the kids, taken you out to dinner and filled the freezer with goodies to make life easier. So glad you have wonderful friends and a whole company of movers and shakers. Take it easy this week. We will send out some macadamia cookies to hold you over!     Moving is so hard! I think roasts are really something nice for a Sunday dinner, and are quite easy as well. A large enough piece of meat can also leave you with some great leftovers for the week then. Pop some potatoes and carrots, or chopped winter veggies in there with some olive oil and herbs and get them nice and toasty, it’s really a one pan meal. Good luck to you! I’m glad it sounds like you have a good support system, it helps tremendously.

  24. Welcome to your new home…darn, would have brought dinner over 🙂 I’ve got two weeks till I leave for a week, so got to cook healthy to counteract dad’s week. Have to remember pancakes for dinner, this morning made swedish oatmeal-buttermilk pancakes, so good, but kids didn’t like them. Thanks for the referral by the way 🙂

  38. I’m such a slacker. Daddy finally got his wisdom teeth pulled and can only eat soup, so I haven’t been real into cooking lately. Guess as the swelling goes down I’ll have to make real food again.
