Week 164 Menu

This past week was GREAT. I can’t tell you how nice it was to have a decent menu plan again and actually follow it (with tweaks here and there, of course). I cooked real meals. I had the ingredients in the fridge. It was so nice.

Nate went to Costco yesterday. I like it when he goes without me because he buys splurge items like pre-cut mango, which I always feel a little guilty spending extra money on. Seriously, not having to slice mango but still getting to eat it is the BEST.

Asian Spinach Salad (I’m going to try leaving the chicken out, maybe add a few veggies to the mix…although it is really good WITH the chicken, just trying to figure out more veggie-based dishes)

– Fajitas (leftover ingredients from last week)

– Butter Chicken & Basmati Rice (still looking for a good recipe for Butter Chicken…any tips?)
– Naan bread
– Some sort of veggie

– Leftovers

Frittata (I’m going to do a veggie frittata, but use the linked recipe as a base)

Pot Roast w/mashed potatoes and a veggie

Please share your menu! We like all kinds of menus, no matter how fancy or un-fancy they are! Also, you certainly don’t have to assign days to specific items…we’re flexible around here.

  2. No real plan yet, though I’ve had risotto on the mind lately. Tonight thinking about some Asian-inspired braised chicken thighs with coconut rice. Tomorrow will be some Meatless Monday inspiration, Thursday is always date night with the Mr. and Friday’s are always homemade pizza night. Will gifure out the rest as the week goes on.

  3. I have a great recipe from Phyllis Carey (“the casual gourmet”) whose cooking classes I’ve taken. I have her book “Fast and Fabulous Chicken Breasts” and she has a really good butter chicken recipe. She serves it w/ sauteed spinach w/ garlic & mustard seeds over basmati rice.

    2 Tbsp veg oil
    1 cup chopped onion
    2 Tbsp minced fresh ginger
    1 jalepeno chili, seeded & chopped
    2 tsp garam masala (I can find it at Jimbos and our larger grocery stores)
    1 6 oz can of tomato paste
    1 1/2 cups chicken broth
    1/2 cup heavy whipping cream
    4 boneless skinless chicken breast halves
    salt & pepper (to taste)
    1/4 cup unsalted butter (divided use)
    4 lime or lemon wedges

    Heat oil in 3 qt saucepan over medium heat. Add onion, ginger & chili and toss until tender & browned (about 4 min). Stir in the garam masala and then transfer to a blender (I just use one of the mini cuisinarts – easier to clean). Add the tomato paste and chicken broth & blend until smooth.. Return to saucepan and add the cream. Bring to simmer and cook until sauce reduces to about 2 1/2 cups (about 5 minutes). Set aside (sauce can be made ahead which I do).

    Trim/pound chicken breasts to even 1/2 inch thicknes. Season w/ salt & pepper to taste.

    Heat 1 Tbsp of butter in skillet over med high heat. Brown chicken on both sides (about 2 minutes). Pour in reserved sauce and simmer, uncovered, 5 to 7 minutes until chicken is cooked through.

    Remove chicken to serving plates (over rice). Swirl remaining butter into sauce. Spoon sauce over chicken and serve w/ lime or lemon wedges.

    Tuesday: pasta with homemade tomato sauce

    Wednesday: Chile coated salmon with creamy lentils

    Thursday: Grilled lemon/garlic chicken with haricot verts (string beans)

    Friday: Tacos, with homemade salsa and guacamole

    Sat: Pho noodle soup (Yes, we had this last week too; I have a feeling that this will be showing up alot since JJ asks about every other day when I am making it again).

    I don’t know what day we’ll have each of these, but our menu for the week includes:
    -Chana Masala with basmati rice
    -Chinese glazed pork chops with brown rice and broccoli
    -Pasta with asparagus, bacon and parmesan
    -the Coconut Curry Chicken Soup posted here a week or so ago
    -Tilapia with curried couscous and veggies
    -Turkey (they were on sale!) with homemade stuffing and cauliflower

    Sunday – Spicy Chicken (new recipe night from Tasty Kitchen!), homemade eggrolls from the freezer
    Monday – Chicken on the grill, tossed salad, homemade dinner rolls from the freezer
    Tuesday – Bratwurst on the grill, fresh fruit, fresh cut french fries if I’m feeling ambitious, otherwise chips!
    Wednesday – Spaghetti, homemade garlic breadsticks from the freezer
    Thursday – Ribeyes on the grill
    Friday – Pizza party

    It’s been a long time since I’ve posted. It’s good to be back and enjoying looking at everyone’s menus! Here’s ours for the week (though it doesn’t offer up many ideas since we have dinner plans away from home quite a lot this week):

    Monday – italian sausage & rigatoni bake
    Tuesday – OUT
    Wednesday – OUT
    Thursday – OUT
    Friday – baked chicken strips and macaroni & cheese along with a veggie (maybe some broccoli or green beans)

    Oh and tonight was chicken parm with a spinach, pear & toasted pecan salad. Yum!

  19. I’ve never heard of butter chicken, it sounds yummy! Also, I just did a frittata and based it off this I just used veggies I had around, some leftover broccoli, some frozen grated zucchini, and I chopped and boiled a potato. I also added parmesan into the egg mix and spices (basil, oregano, thyme, tarragon). And left out the tomato. It was really good. This week:

    M: Leftover chicken noodle casserole (from Sat.), spinach salad with strawberry and feta
    T: Beef pot roast with herb roasted potatoes and carrots
    W: Leftovers OR Escarole and white bean soup, French bread, green garden salad
    Th: Pan-fried chicken sausage with roasted brussel sprouts and orzo
    F: Homemade pizza
    S: Dinner with friends
    Su: Spaghetti and meatballs with parmesan, fresh salad

    -Fried Egg with mushrooms & spinach over toast

    -Cilantro lime rice

    -Frozen burrito and chips & salsa, since Josh will be out of town

  23. This week, I am trying to use up a lot of stuff in the freezer and pantry because, next weekend, we are going to try the once-a-month cooking thing, so I want to make sure we have room.

    I will be making:
    -Spaghetti with turkey meatballs
    -Tamale casserole (1 lb grnd beef, 1 can Ro-Tel, corn, topped with cornbread batter – bake according to cornbread instructions)
    -Turkey dinner (there was a turkey in the freezer)
    -Shrimp stir-fry
    -Homemade spaghetti-Os
    -Tuna noodle casserole

    It is finally nice here so we got the BBQ out!!!

    Monday – Marinated Chicken Breast in a Ranch Pesto dressing (BBQ of Course)with wild and brown rice and sauteed veggies

    Tuesday – Haddock or Salmon, BBQ potatoes

    Wednesday – Made spagetti sauce with Turkey Sausage on Saturday for supper so the left overs

    Thursday – Paninis

    Friday – Eat Out

    Saturday – Kabobs Tossed Salad and Potato Salad

    Sunday – Roast Beef Dinner

    I feel like I haven’t ACTUALLY cooked in weeks! I think I need to do something this week to get back into cooking!

    Monday- Something with chicken…I have two chicken breasts defrosted.

    Tuesday- I have no idea! I have really been craving red meat as of late but I’m trying to avoid it because I know it’s not all that great! I may have to buckle and get it!

    Wednesday- Out for St. PAtrick’s Day!

    Thursday- Into NYC for a friend’s birthday…MEXICAN!

    Friday- Pizza- maybe homemade!

    Saturday- My daughter’s 3rd birthday- we’re doing pasta…she LOVES it!

    Pretty basic and non-descript! πŸ™

    I’m not sure if “butter chicken” is supposed to be cooked a specific way, but I found a recipe at this link that we’ve been making almost weekly (it uses ritz crackers). We LOVE it — adults and kids alike.

    Ive been thinking about this week since I ordered groceries last week. Totally helps the planning.

    Oh and we’ll be eating clam miso soup for breakfast tommorrow and boiled rapeseed flower w/soy sauce and mustard with dinner one day. Maybe we’ll put off the lasagna until next week and do gyoza instead.
