Week 166 Menu

Yesterday we went to an Easter egg hunt. It was the perfect morning, I must say. Until we discovered Anna, our 2-year-old, had eaten ALL the candy from her TWELVE eggs before we even left the party. But even that made the morning a little more perfect than it already was.

Bad news for me, I made everything on my menu last week! So, I have to come up with a completely new menu. Life is so hard, eh? 😉 Thank goodness I have your menus to peruse for ideas!

– Homemade pizza

– Stuffed Shells (probably this recipe, or maybe something simpler)

– Macaroni & Cheese (my friend Rachel was telling me this week how much they love The Pioneer Woman’s recipe, so I’m going to try it…but I think I have to top it with panko breadcrumbs instead of cheese. I love a good crust of breadcrumbs. Mmmmm. Also, I did a call for mac & cheese recipes a while ago, so there are lots of recipes to browse here.)
– Salad

– Leftovers

– A dinner salad of some sort – will browse the Croutons menu for ideas

– Eat out

– Easter dinner…which I need to figure out!

    Tuesday- Turkey burgers, green beans, some type of potato!

    Wednesday- Pasta- simple sauce

    Thursday- Just me and the kids….not sure yet!

    Friday- Pizza Most likely!

    Saturday- Homemade calzones with the grandparents

    Sunday- Homemade Ravioli with meat sauce, Leg of lamb with potatoes, brussels sprouts, salad.

    Friday: Shrimp Scampi, garlic toast
    Saturday: Eat Out–Chipotle
    Sunday: Lasagna, garlic biscuits, asparagus
    Monday: Chicken Pot Pie, fruit
    Tuesday: I’m out of town with the kids but I think we’re eating Buffalo Mac ‘n Cheese. The hubby is on his own!
    Wednesday: BBQ–teriyaki chicken and smoked sausages, probably some potato, and fruit
    Thursday: leftovers

    I don’t know what days we will be having these, but this week we will have chicken cutlets with spaghetti squash, tuna helper (we’re poor college kids!!!), fried rice, and macaroni and cheese

    Short week for us, as we’re traveling to see my family for easter.

    Monday: venison steaks (grilled), pasta tossed with olive oil and steamed broccoli

    Tuesday: salmon with wild rice and steamed cauliflower

    Wednesday: spaghetti and turkey meatballs with salad and garlic bread

    Thursday: on the road

    Friday: visiting family

    Monday-Ham/scalloped potatoes in the slow cooker, mixed veggies
    Tuesday-Leftovers from Monday night
    Wednesday-Brisket and Roasted Veggie Pot (3 c. potatoes/3 c. carrots/1/2 c. onions stir in 15 oz. beef broth, cooked in the slow cooker on high for 4-6 hours.)
    Thursday-Leftovers from Wednesday night
    Friday-Lemon Butter Chicken Breasts, garlic butter orzo, green beans
    Saturday-Hot dogs and oven fries

    Here’s what we are having this week. We are trying to eat cheap since our grocery budget did not have much left in it.

    Monday–Chicken Alfredo
    Tuesday–Breakfast (probably waffles and sausage)
    Thursday–hot dogs (my oldest son’s Spring music program is that night)

    Tuesday: Pan roasted noix st jacques (scallops), with roasted green asparagus and red potatoes

    Wednesday: Grilled lemon/garlic chicken with carrots and fresh peas

    Thursday: Ham & Manchego cheese sandwhiches/ green salad

    Friday: Tacos with homemade salsa and guacamole

    Jane, I top my mac and cheese with panko breadcrumbs. You will not regret it! It gives so much more flavor than just topping with cheese. I put mine in a skillet with about a tablespoon of butter (I know, bad, but M&C isn’t the healthiest dinner…) and swish them around until they are nice and brown. Then I top my already hot mac&cheese and bake til bubbly and delicious. mmmmmmmmmmmmmmmmmmmmm

    Hi Bonnie –

    The carrot cake pancakes will be a new recipe for me so I can’t review them yet but here is the recipe I am going to use from Cooking Light

    Ingredients (serves 6)
    5.6 ounces all-purpose flour (about 1 1/4 cups) (I’ll probably sub some whole wheat)
    1/4 cup chopped walnuts, toasted (I’m leaving out)
    2 teaspoons baking powder
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    1/8 teaspoon freshly ground nutmeg
    Dash of ground cloves
    Dash of ground ginger
    1/4 cup brown sugar
    3/4 cup low-fat buttermilk
    1 tablespoon canola oil
    1 1/2 teaspoons vanilla extract
    2 large eggs, lightly beaten
    2 cups finely grated carrot (about 1 pound)
    Cooking spray (I’m using butter =))
    3 tablespoons butter, softened
    2 tablespoons honey
    1. Weigh or lightly spoon flour into dry measuring cups, and level with a knife. Combine flour and next 7 ingredients (through ginger) in a large bowl, stirring with a whisk. Combine 1/4 cup brown sugar and next 4 ingredients (through eggs); add sugar mixture to flour mixture, stirring just until moist. Fold in 2 cups carrot.

    2. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Spoon 4 (1/4 cup) batter mounds onto pan, spreading with a spatula. Cook for 2 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook 1 minute or until bottoms are lightly browned. Repeat procedure twice with remaining batter. Combine butter and honey in a small bowl; serve with pancakes.
