Yesterday we went to an Easter egg hunt. It was the perfect morning, I must say. Until we discovered Anna, our 2-year-old, had eaten ALL the candy from her TWELVE eggs before we even left the party. But even that made the morning a little more perfect than it already was.
Bad news for me, I made everything on my menu last week! So, I have to come up with a completely new menu. Life is so hard, eh? 😉 Thank goodness I have your menus to peruse for ideas!

– Macaroni & Cheese (my friend Rachel was telling me this week how much they love The Pioneer Woman’s recipe, so I’m going to try it…but I think I have to top it with panko breadcrumbs instead of cheese. I love a good crust of breadcrumbs. Mmmmm. Also, I did a call for mac & cheese recipes a while ago, so there are lots of recipes to browse here.)

Jane, I top my mac and cheese with panko breadcrumbs. You will not regret it! It gives so much more flavor than just topping with cheese. I put mine in a skillet with about a tablespoon of butter (I know, bad, but M&C isn’t the healthiest dinner…) and swish them around until they are nice and brown. Then I top my already hot mac&cheese and bake til bubbly and delicious. mmmmmmmmmmmmmmmmmmmmm

Ingredients (serves 6)
5.6 ounces all-purpose flour (about 1 1/4 cups) (I’ll probably sub some whole wheat)
1/4 cup chopped walnuts, toasted (I’m leaving out)
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon freshly ground nutmeg
Dash of ground cloves
Dash of ground ginger
1/4 cup brown sugar
3/4 cup low-fat buttermilk
1 tablespoon canola oil
1 1/2 teaspoons vanilla extract
2 large eggs, lightly beaten
2 cups finely grated carrot (about 1 pound)
Cooking spray (I’m using butter =))
3 tablespoons butter, softened
2 tablespoons honey
Preparation
1. Weigh or lightly spoon flour into dry measuring cups, and level with a knife. Combine flour and next 7 ingredients (through ginger) in a large bowl, stirring with a whisk. Combine 1/4 cup brown sugar and next 4 ingredients (through eggs); add sugar mixture to flour mixture, stirring just until moist. Fold in 2 cups carrot.
2. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Spoon 4 (1/4 cup) batter mounds onto pan, spreading with a spatula. Cook for 2 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook 1 minute or until bottoms are lightly browned. Repeat procedure twice with remaining batter. Combine butter and honey in a small bowl; serve with pancakes.
