Week 172 Menu…Happy Mother’s Day!

Happy Mother’s Day! Today I not only get to celebrate mother’s day with my sweet daughters, but we are also with my own mother and my mother’s mother. This never happens. It makes me happy.

And, since it’s Mother’s Day, I’m giving myself the gift of not planning a menu. Okay, I can’t totally give up on it…but I am going to take it easy on myself since I AM on vacation and all. And maybe I’ll even let some of you slack off, too…but you better believe I’ll get back on you next week to get planning again!

MONDAY:
– traveling

TUESDAY:
– traveling

WEDNESDAY:
– traveling

THURSDAY:
– either traveling or just finished with traveling and too tired to cook…eating out for sure

FRIDAY:
– breakfast for dinner

SATURDAY:
– tortellini

SUNDAY:
– Baked stuffing coated chicken with a nice fresh vegetable

    M–Radish Greens Soup (from our garden); Brown-bread Toast with Goat Cheese and Homegrown Radishes; Deviled eggs with Paprika and Homegrown Chives

    T–Roast Chicken from our Amish farm source; Homegrown Broccoli Rapini, Mashed Sweet Potatoes with Orange Zest, Arugula and Lemon Balm Salad (from our garden)

    W–Enchiladas with goat cheese, mushrooms, onions, and homegrown mustard greens. Served with the Wednesday Cocktail of the week (mojitas made with homegrown mint)

    Th–Chicken soup with Wild Rice, Leeks, and Homegrown Greens (made from leftover chicken from Tu)

    F–Steak Diane; Homegrown Salad with Arugula, Sorrel, and Radishes; and Balsamic Strawberries with Ricotta Cream

    S–Marcella Hazan’s Simple Tomato Sauce; Telephone Cord Pasta; Assorted Salad Greens from the garden; and Blueberry Muffins (dessert, to be held back from our CSA’s “muffin luck” celebration of the opening of the season)

    Su–Homemade Vegetarian Sushi; Strawberries

  31. Here’s my menu, a little late, but sometimes by week doesn’t lend itself to getting started until Wednesday.

    Monday we ate a spring panzanella salad from Smitten Kitchen.
    Last night, Tuesday we had Ina’s Roast Chicken with white cheddar shells & cheese
    Wednesday, Spicy shrimp and shitake soup (Two Peas and Their Pod)
    Thursday, tofu noodle stir fry (Everyday Food)
    Friday, we’re eating out with a generous gift card a friend gave us.
    Saturday, we’ll have a big breakfast of eggs, bacon, and cream cheese blueberry muffins before a baseball game that afternoon.

    okay, i know i’m late posting this but i actually cooked everything i planned this week so it feels worth documenting:
    m: pan-seared tilapia with lime served with grilled pineapple rice with chives and red onion
    t: grilled wild salmon served with mashed potatoes
    w: grilled marinated skirt steak served with corn dotted cheesy polenta and sauteed mushrooms
    th: cannelini beans and rice
    f: leftovers
    there’s no green vegetables but that’s okay. it was a starchy kind of side dish week with the rain and cold.
