Here’s our breakfast this morning, puffed oven pancake. It’s Cate’s new favorite breakfast food. I think they’re pretty good, but honestly, the best part is how EASY they are to make. I’m glad Cate is so easily pleased…at least for now. Knowing how 5-year-olds are about food, she’ll hate them tomorrow. 😉

I grew up with this puffed pancake as a special breakfast treat. We had it just a few times a year and how I loved it! We called them German Pancakes, only because that is what they were named in the “Osterizer” cookbook my mother had. It may sound strange, but we served them with lemon juice and powdered sugar. Very tasty!
