Week 181 Menu

I love summer.

The light is always just right.

And drinking fountains abound.

Too bad we still have to eat and I still have to plan a menu every week! 😉 Actually, this week is kind of nice…no traveling of any kind. A little break before more travel madness ensues next week! Sorry for the multiple carry-overs from last week’s menu…things were bananas.

Easy Peasy Bean Tacos
– Guacamole and chips

– Crêpes (surprise, surprise…Nate didn’t make these while I was out of town. what? he didn’t jump at a chance to cook?)

Stuffed Peppers

– Leftovers

– Eat out

– Homemade pizza (going to top with carmelized onions, tomatoes and honey goat cheese from Trader Joe’s)

Spaghetti Pomodoro
– Salad and bread

    ummmmm, firstly, I wish I was coming to your house on Saturday because that sounds awesome!!
    Friday–we had grilled cheese sandwiches (mine and hubby’s had tomatoes from our garden in them)
    Saturday–we had panko-breaded catfish fillets
    Sunday–I am going to FINALLY make the “Stupid Chicken”
    ( that has been on my menu for about a month!
    Monday–Pork Loin and rice
    Wednesday–Chicken Enchiladas
    Thursday–Poached Catfish and pasta

  2. Monday: Grilled Veggie Tacos with Sweet Corn Salad:

    Tuesday: Dinner for work

    Wed: Grilled Pear, Brie, and Honey Crostini with Salad:

    Thursday: Breakfast of some sort, maybe whole wheat waffles with berries or cereal:)

    Friday: Grilled Pizza:

    Saturday: OUT

  3. Love that your menu is a very real menu! I have not planned ours out yet, little behind this week…but thinking something like,

    Monday: Homemade Maui Pizzas (w/ easyBridgford Dough)
    Tuesday: Chicken kebabs w/ our garden veggies
    Wednesday: Oven Tri Tip w/ a caesar salad & fruit
    Thursday: Steak bowls w/ leftovers
    Friday: out of town – Palo Alto – loads of fun places to go!
    Saturday: out of town
    Sunday: out of town

    Anyone else out there with a toddler to feed? I’m working on streamlining menus and would love to get some ideas!

    Sunday: Soba Noodles with spinach and edamame

    Monday: Black beans, crispy potatoes, salsa and chips

    Tuesday: Pizza (with TJ whole wheat dough)with zucchini and goat cheese (I might have to do the caramelized onions/ tomato/ cheese too!)

    Wednesday: Leftovers

    Thursday: Brown rice and lentils + mixed veggies

    Friday: Veggie Pasta (roast all leftover veggies, toss with tomato sauce and throw over whole wheat pasta)

    Saturday: Take out

    Eric bought tortillas at Costco while I was out of town and they are taking over the fridge! Either soft tacos or quesadillas.

    Beef Kebabs with Israeli couscous and watermelon salad

    Orzo Pasta salad (from Chef Kyle)

    Balsamic Grilled Chicken and Strawberry Feta Salad

    Flatbread pizza with italian sausage, zucchini, yellow squash, red bell pepper, and marinaded mozzarella balls

  16. It’s a pretty lame menu this week. We’re out of town most of the week. I’ll be doing my stock-up-cooking-extravaganza this week, but not much on the what’s-for-dinner-tonight-cooking front this week.

    Sunday: Pizza
    Monday: Stuffed Peppers and veggies
    Tuesday: Whole, roasted chicken with homemade, crispy tortilla chips

    Wednesday – Friday: Vacation in Cleveland (AKA Cooking with Uncle Mike!)
    Saturday: Wedding Food in Cleveland

  17. Monday: Veggie bugers made from quinoa, veggies, and egg
    Beet and radish salad with mustard vinaigrette

    Tuesday: Moroccan Bison with Apricots over Couscous

    Wednesday: Summer Vegetable Fried Rice

    Thursday: Dinner out

    Friday: Blackened Chicken with veggies and salad

    Saturday: Liver and onions with veggies

    Here is my first attempt at a menu since before baseball season and the move…
    Sun: Grill burgers, cauliflower, cantelope
    Mon: Buttermilk blueberry pancakes, fruit
    Tues: Teriyaki chicken
    Wed: husband’s birthday so who knows
    Thu: Spagetti with grilled artisan bread
    Fri: some kind of summer salad
    Sat: BBQ chicken wraps

    Oh and plenty of fresh corn on the cob from a local farm…several times a week.

    Monday – BBQ ribs in crockpot, pasta salad, corn on the cob

    Tuesday – Broccoli & ricotta pasta

    Wednesday – Honey Lime Grilled Chicken, Butter Bean salad

    Thursday – Sicilian Eggplant Marinara over pasta

    Friday – BBQ chicken pieces, grilled summer squash & zucchini

    Saturday – if it’s not 100 degrees… homemade pizza

    Okay – so I’m a little behind – it’s been a crazy busy week, and well – I’m tired! (That comes after having spent the past year pretty seriously ill – it’s appalling how long it really takes to get over it all!)

    Monday – Spaghetti and if I get the strawberry syrup done, and the beans canned, then I might also make garlic breadsticks… just depends on the whole energy level thing…

    Tuesday – Tacos (yes, the boys chose!)

    Wednesday – the parents have a dinner meeting, the kids are probably going to DIY (it’s great having teenagers!)

    Thursday – Fish on the grill and some pasta side dish

    Friday – Teriyaki chicken on the grill (this is an experiment – I’m hoping it turns our fabulous!)

    Saturday – Fajitas

    Sunday – Pork chops – probably on the grill – just because we can!

    I’ll probably make potatoes on the grill about a bazillion times this week because I’m in love with them in a big way… gosh, they’re fabulous!
