Week 182 Menu

It’s so close I can taste the salt air…

On Friday we fly out East for our annual weeklong family vacation on Cape Cod. I can’t tell you how excited I am to get to this beautiful place. And be with both sides of our family. And eat like calories don’t count.

MONDAY:
– Spaghetti
– Salad & yummy bread

TUESDAY:
– Our 11th Anniversary! Eating out for sure!

WEDNESDAY:
– Dinner at friends’ home

THURSDAY:
– Eat out – it’s the night before we leave, so I’m being realistic here

FRIDAY:
– Flying to Boston alone with my girls…AND the flight takes off at 6 am. That will be a DAY.

SATURDAY:
– First day on the Cape! Woo-hoo!

SUNDAY:
– I’m on vacation…no planning for me!

So begins three weeks where I will not be super inspiring when it comes to my actual meal plans…but I do promise to share all the delicious food we eat on our trip! And if you do plan a menu while I’m off galavanting around the East Coast…PLEASE PRETTY PLEASE share it on here! I need you all to inspire one another with your meal plans, since I’ll be failing miserably at that job. πŸ˜‰

    ok now on to the menu:

    Today: homemade garlic and tomato soup w/ grilled cheese or black bean tacos, homemade salsa (which ever i don’t make for lunch in a few)

    Monday: Red Beans and Brown Rice and cornbread

    Tues: Burgers (veggie for me), potato salad, broccoli and carrots w. ranch dip

    Wed: spaghetti, homemade bread sticks and roasted garlic green beans

    Thurs: Cinnamon Roll pancakes (w. melted frosting syrup), eggs and fresh fruit

  4. Sunday – steak
    Monday – Bagel sandwiches
    Tuesday – breakfast for dinner
    Wednesday – leftovers
    Thursday – spaghetti
    Friday – sausage sandwiches
    Saturday – skillet fajitas

    This may all go out the window as there is a chance that JJ’s job will be moving us to Missouri this week (yes this week). I am hoping that we can stay here for at least another month – but I guess we will see…

    Monday: Broiled Zucchini Pasta with goat cheese
    Tuesday:Trader Joe’s naan with curried veggies and dal
    Wednesday: TJ’s Panko crusted Tilapia with Mixed rice
    Thursday: Take out/ Delivery
    Friday: Clean out fridge day since we’re away for a week!

    Lunches: We’re going to be out a lot this week around lunchtime, so I’m planning to bake lots of veggies and make a white bean spread to make wraps. Yum yum!

  7. Happy Anniversary!! Our 4th is this Wednesday, and since we’ll be in San Diego celebrating all week, we don’t have a menu this week at all. Have fun at Cape Cod!

    Thursday: No-Bake Summertime Lasagna
    Friday: Grilled Lemon-Pepper Chicken and Green Beans with Feta and Tomatoes (adapted from this recipe)
    Saturday: Leftovers or BLTs or some other sandwich and fruit

    We have swim lessons all week from 6 to 7 so I’m utilizing the crock-pot and things I can prep ahead of time this week….

    Sunday – baked eggs, biscuits, tomatoes, fruit
    Monday – Minestrone, bread, salad with easy vinaigrette
    Tuesday – crock pot kielbasa, potatoes, green beans and cabbage
    Wednesday – hot and sour soup and spring rolls with cabbage, carrots, cucumbers, lettuce and herbs
    Thursday – Pho
    Friday – seafood soup, salad, bread (this recipe is from Joy of Cooking) – this plan might change, it’s my husband’s birthday
    Saturday – taking a picnic to a concert in the park, haven’t decided yet

    I’ve never been to the East Coast, really. (Okay, I was in NYC for about 24 hours in January for an interview. I don’t think that counts!) BUT, my baby is going to Boston University in 4 weeks. I’m starting to dream about some of the amazing trips we can take while visiting her! Cape Cod looks amazing – take lots of pictures to share with us, okay?

    Forecast says it’s going to be a lovely week – highs 75 to 80-ish, marine layer in the morning, burning off by afternoon. Lovely, lovely days!

    Monday – Fajitas (on the grill, of course!)
    Tuesday – Baked Ziti
    Wednesday – Spare Ribs in the Crock Pot
    Thursday – Chicken Parmigiana
    Friday – Enchiladas
    Saturday – Beef Brisket (smoked on the grill)
    Sunday – Sandwiches after church, then Turkey on the grill for evening meal.

    Monday: BBQ beef on a bun, cole slaw
    Tuesday: Kitchen Sink Quesadillas
    Wednesday: Veggie burgers, oven fries
    Thursday: Stuffed peppers, pasta & sauce for the kids
    Friday: Leftovers or pizza
    Saturday: Not planned yet.

    Monday- Chicken, Black Bean and Corn Burritos
    Tuesday- Leftovers
    Wednesday- I have class, hubby on his own
    Thursday- Crispy Shrimp with Herbed Bread Crumbs, salad
    Friday- Out
    Saturday- Steaks on the grill with twice baked sweet potatoes
    Sunday- Lentil soup? I know that’s a cold weather meal, but I’ve got a bag of lentils to use!

    Which part of The Cape do you visit? My family has been going for over 15 years..every summer! If you find yourself near or around Hyannis/Centerville.. make a detour and try out FOUR SEAS (http://www.fourseasicecream.com/) It is my FAVORITE ice cream!!! They make everything right there in the back of the shop. Its so creamy and so oh oh delicious! πŸ™‚

    Monday- Coconut Curry Pork Chops, Rice, Peas from our garden

    Tuesday- Leftover Coconut Curry + green salad

    Wednesday- Clam Chowder, Green salad, Honeydew melon

    Thursday- Rotisserie chicken, french bread, salad, and a zucchini cake made in the crock pot (It’s too hot to turn on the oven! The crock pot cake turned out okay, will try again.)

    Friday- Hot dogs cooked over the campfire, watermelon, s’mores

    Saturday- Take out

    Sunday- Potato turnip hashbrowns (lots of garden turnips this week), beets from the garden, watermelon.

    Ahh… Enjoy the ocean air! I am blessed to live on Maine coast, wouldn’t give it up for the world (cold, snowy winters and all!)
    Between prepping for and going on a roadtrip/vacation and I’ve been lax with menu planning lately. Anyway… here’s to getting back on track.

    Mon- Fastfood on the trip home
    Tues- Pizza delivery, too tired to cook
    Wed- Baked Haddock (depending on how hot/humid it gets)
    Thurs- Philly Cheese Steak Sandwiches (w/sauteed peppers, onions and mushrooms Yum!)
    Fri- Pasta w/Italian Sausage
    Sat- Grilled Pizza (trying this again, the first time I made Blackened Pizza, total disaster!)

  33. YES, menus usually get posted on Sundays. YES, it is Wednesday. Well, I think I have finally recovered from vacation (sad, really). It was SO MUCH fun!!!!! Well, here is my improv’ed menu for the week.

    Sunday: Airport food in Atlanta
    Monday: Pasta with pesto (fast, go-to meal)
    Tuesday: Chicken Pot Pie (from freezer)
    Wednesday: Steak and broccoli
    Thursday: Mini-quiches
    Friday: Pumpkin pancakes (some good comfort food!)
    Saturday: out. don’t know where: just out.
