Week 187 Menu

I visited one of my favorite spots yesterday and bought this…

If you can tell us what spice (or, more accurately, seed) it is, you win the Spice Queen/King title for the day! And if you don’t know what it is, you’ll find out soon enough…I’m trying a new recipe this week involving this beautiful seed and you can bet I’ll be writing about it (crossing my fingers it actually tastes good!).

Last week there was a lot of shifting with my menu. I ended up changing a lot of what we ate based upon the stores I had a chance to shop at. So, we’ve got a few repeats from last week’s menu.

– Recipe that uses the above spice that I’m keeping a secret for some reason…I guess I’m bored? πŸ˜‰
– Fresh corn on the cob from the farmstand

– Homemade pizza just for Cate, who will officially be a KINDERGARTENER on Tuesday!

Red beans and rice (Thanks for the link, butterfly wishes! And Emily, I’ll be sure to try the recipe you shared last week as well!)

– Leftovers


– Eat out

– Scrambled eggs with tomatoes, basil and mozzarella cheese
– Fresh fruit

As always, I’m incredibly appreciative of you all sharing your menus. I love that you provide ideas for each other, and, more importantly, for ME. Yeah, this is all about me in the end. πŸ˜‰ Seriously, though, my brother recently asked me where I go for ideas every week. I don’t go any further than this blog…I just browse through previous weeks’ menus and look at your comments from the week before. That’s it. So, THANK YOU!

  2. I’m becoming addicted to meal planning, especially since I read someone’s comment on here that mentioned the Meal Matters website. Here is this week’s menu:

    Sunday: Entree salads
    Monday: Chicken & Mushrooms with Tarragon Mustard Cream Sauce
    Tuesday: Flank steak with pureed cauliflower and roasted green beans
    Wednesday: It’s my birthday – Indian takeout dinner!
    Thursday: Leftovers
    Friday: Grilled Salmon Paprika
    Saturday: Easy Chicken Enchiladas

  6. Annatto, eh? Never heard of the spice. I am very intrigued about the flavor and how to use it! Can’t wait!!

    Sunday: Parmesan-crusted Mahi and roasted potatoes
    Monday: Eggplant Parmesan
    Tuesday: Real burgers on the grill (after a veggie-heavy week last week, Scott is craving some real meat)
    Wednesday: Sweet Corn Pancakes; We are suckers for any new kind of pancakes!
    Thursday: Grilled, marinated chicken and stir-fry veggies
    Friday: Homemade pizza
    Saturday: Out.

    It’s back to school this week- menu planning is more important than ever now! Thanks for sharing ideas!

    Sun: Fettucine alfredo with chicken and broccoli, salad, garlic bread

    Mon: Chicken with lemon cream sauce in crockpot, zucchini, brown rice

    Tues: Turkey Melts, sesame noodles, oven fries

    Wed: BBQ Country style ribs in crockpot, mashed potatoes, broccoli

    Thurs: Leftovers

    Fri: Pizza

    Sat: Out

  10. Monday: Grilled chicken, couscous and steamed mini squash with olive oil, sea salt and thyme.

    Tuesday: Whole grain spaghetti with summer squashes, bell peppers and garlic bread crumbs

    Wednesday: Healthy Southwestern Sloppy Joes

    Thursday: leftovers

    Friday: work bbq – lucky for us we LOVE who we work with, so will be a fun evening!

    Tuesday: Layered Crockpot Chicken Enchiladas Suiza

    Wednesday: Udon noodles with Asian veggies and peanut sauce

    Thursday: Grilled Foccacia Bread Pizza with Fresh Tomatoes, Basil and Buffalo Mozzarella

    Friday: Date Night

    Saturday: Greek Pita sandwiches with grilled chicken, tomatoes, feta, Kalamata olives, cucumber, romaine lettuce and Greek Dressing

    Sunday: Breakfast for Dinner – Belgian waffles with fresh berry topping and light whipped cream.

    Monday: Out for my dad’s birthday dinner
    Tuesday: Garlic-Rosemary Roast Chicken, CSA potatoes and vegies,
    Wednesday: Hubby cooks. Bacon and Vegetable frittata, watermelon
    Thursday: Hubby cooks. Hamburgers, Chips, Beans, Watermelon
    Friday: Chicken Enchiladas with CSA or garden peppers/jalapenos, grapes
    Saturday: Buffalo chicken Pizza, salad

    I also am addicted to these muffins and wanted to share the recipe (it’s actually for bread, but muffins are so much easier and less messy for the kids). A great way to use up some summer blueberries!

    so last year we were empty-nesters for a few months but now a full house again – but they all want to help cook!

    Saturday (Grace) spaghetti with fresh tomato sauce and salad
    Sunday – (Nancy) chicken stirfry with rice
    Monday (Neil) Frikadeller with beets and potaoes (neil just got back form denmark:) )
    tuesday (Tom ) Mexican stirfry

    Thursday (Grace) BLT salad with summer squash soup

    Our weekly menu started on Thursday last week, I don’t know if that counts. Boy will I be glad to get the kids in school and start a routine again.

    So, here it goes from last Thursday (because that’s how I roll).

    Thu: Homemade artichoke & spinach pizza, with tomato, mozzarella, and basil skewars.
    Fri: Leftover Homemade pizza
    Sat: Chicken Piccata w/ roasted garlic spaghetti, and steamed carrots
    Sun: Made homemade marinara for the freezer, but ate Chipotle veggie burritos
    Mon: Beans & cornbread better get them soaking
    Tues: Chicken Parmesan (with that homemade marinara) and whatever veggies I can scrounge up.
    Wed: my dad cooks for us!
    Thu: (now we’ve come full circle), Sauteed shrimp w/ corn on the cob

    It’s supposed to be 106 today with 49% humidity here in the Southwest. Sandwiches and salads sound the best to me, although I did put other items down.

    Mon.-pork, bake potato, green salad
    Tues.-while chicken chili, cornbread
    Wed.-fish sticks, rice a roni, veg
    Thurs.-chicken wraps
    Fri.-homemade pizza
    Sat.-PW’s cube steak sandwiches or chicken fried steak or maybe a big Chef salad
    Sun.-Crockpot roast or crockpot lasagna

    I’ve gone back to Weight Watchers so many of our meals are WW friendly!

    Monday- Italian skillet chicken with whole wheat pasta and salad
    Tuesday- 3 bean and pork slow cooker chili
    Wednesday- Baked Macaroni and Cheese and roasted broccoli
    Thursday- Chicken in wine sauce with Asparagus. I may serve this with quinoa or ww couscous
    Friday- Leftovers
    Saturday- BBQ with friends
    Sunday- ANOTHER bbq with friends!

    Mon. out then Eat Pray Love with ladies from my book club (hubby and kiddo having something quick and easy)
    Tues. Tacos or sloppy joes w/ground turkey
    Wed. Chicken Stir Fry
    Thurs. Crockpot Pork Loin, I had the most delicious Pork Stew at a restaurant that I want to recreate.
    Fri. Tortellini Soup
    Sat. TBD

    Annatto seed – used in Hispanic foods as well as Caribbean & Asian. Good for dirty rice.

    Is that annatto? I made annatto oil once to use in scrambled tofu, but that was all… AND a long time ago. Can’t wait to see what you do with it!
