Week 191 Menu

I hope you all enjoyed getting a little taste of Menlo Park this week! It was very fun sharing our town with you!

I made these cookies last night. After reading this tweet from Christine Koh, I couldn’t resist. I think the cookies are pretty and they taste like super flat but rich and moist brownies. I’ve never worked with a cookie recipe like this – the dough was much more the consistency of batter and I was skeptical right up until the moment I ate them. Also, I didn’t have all the stuff to make them chunky, so I think mine came out differently than they were supposed to…but they still tasted good. It’s always fun trying new recipes! Especially with chocolate involved!

– Nate’s Omelettes (he’s really perfecting them…so, I’m going to put in in charge of dinner!)
– Fruit

On last week’s menu post, Andrea labeled her menu “Last Week for Dinner,” which totally made me laugh – love it!

    This week I’m whipping up four recipes from ourbellacucina.com and testing out sausage and peppers in the crockpot for aprés soccer on Saturday afternoon.

    Lemon Lime Chicken with Salad and Rice
    Lettuce Wraps
    Potato Cod Cakes (although I make them with crab)
    Potato Frittata
    Sausage & Peppers in the crockpot
    Leftovers
    and Friday Takeout

    Just discovered your blog last week — LOVE it! Reminded me of how much more in control I am when I plan ahead.

    TWFD in our house:
    Sunday – lasagna (I make the recipe on the back of the Barilla noodles box — sooo good and easy).
    Monday – Crock pot carnitas w/ avocado and mango. Much of this will go in the freezer.
    Tuesday – Oven baked chicken tenders – not sure which recipe I’ll use for this yet, tho.
    Wednesday – DH and DD are on their own; I have a class. My guess is he will reheat the carnitas and throw BBQ sauce on them.
    Thursday – veggie chili
    Friday – Probably $5 pizza from the grocery store
    Saturday – unknown, but we usually go out or order in on Saturday

  3. As usual, life throws a few curve balls, so I didn’t make my menu exactly as planned. So this week, the menu reflects the changes of last week.
    Sunday: Chinese Chicken Salad
    Monday: Kale with Panfried Walnuts and Penn Yan Chicken
    Tuesday: Pork tenderloin with sage and roasted grapes, corn on the side
    Wednesday: Chicken with quinoa and veggies
    Thursday: Tagliatelle with peas, asparagus, sugar snaps, bacon and a light cream sauce
    Friday: leftovers
    Saturday: Out to dinner!

  4. Scott is out of town early in the week. So, those dinners are fairly simple (read: can be prepared while minding an almost-2-year old Spider Monkey!)

    Sunday: Steaks and craisin couscous
    Monday: Big salads
    Tuesday: Cilantro rice
    Wednesday: Sweet & Smoky Oven Ribs (from Smtiten Kitchen)…holdover from last week
    Thursday: Chickpeas with Paprika and Cilantro (from Three Many Cooks)
    Friday: Asian Lettuce Wraps (from Pioneer Woman)…freezer stash
    Saturday: Out.

    W: Lean Ground Beef-Vegetable Pies (a quick skillet version of shepherd’s pie)

    Sunday – pasta and broccoli with a goat cheese sauce (adapted from Smitten Kitchen) and leftover crash hot potatoes

    Tuesday – frozen black bean burgers and french fries
    Wednesday through Monday – who knows? because we’ll be on vacation!

    Oh my goodness! The ONE week I was ahead of the schedule and I totally forgot to post! I made my menu and did the shopping on Friday…thought I was so with it. Ha! Well, a few days late (again) and here it is:

    Sun: Baptism party
    Mon: (Costco) chicken curry, rice, vegetable
    Tues: Falafel, pita, tomatoes, cukes, etc. (held over from last week)
    Weds: White bean chicken chili, bread, pudding pie
    Thurs: Chicken fajitas
    Fri: Beef stroganoff, noodles, broccoli
    Sat: Out! (Pizza for kids)

    Mon: Steak, Chicken, and Veggie Fajitas (too many taste buds in this house…4 adults, 1 baby)

    Thurs: Happy Thanksgiving!
