Happy New Year!
We ended 2010 on the beach in Monterey and started 2011 snug at home. On New Year’s Day morning, both girls slept in, and then Anna cuddled with me for about 30 minutes before everyone got out of bed. If that is any indication of what the year will be like, then I think 2011 is going to be great.
It’s the first menu of the year. What shall we eat? Hmmmmm…

– I’m liking my recent “Breakfast for Dinner” theme on Sundays…makes for a nice, relaxing Sunday. I think I’ll keep doing it, at least for the next little while.
– I’m going to try a yeast waffle recipe, which sits overnight, and see how we like them compared to our usual waffles

I really need to get better at meal planning again! I did make a massive pop of split pea soup that will probably feed me for lots of lunches and dinners this week.

This is one of my only New Year’s Resolutions this year, meal planning. I’ve been making pancakes for dinner way too often, and spending too much at the grocery store because I haven’t planned out my meals. I figure posting here will keep me accountable!

Happy New Year Jane! I would like to thank you for making meal planning a “cool” thing! When Iwas newly married, the only thing my hubby and I ever really fought about was what to have for dinner. We would go to the store and buy a lot of crap and not really want to eat it or cook it later. So we started a menu plan. We lived on the 4th floor of our apartment building and there was no elevator so we shopped once a week. That was as much as we could handle carrying up the stairs! Even though we moved from that building a long time ago, we have kept with the once a week store trip and menu. It has saved a lot of fussing! Now that I have hijacked your post, here’s our menu:
Sunday– Oven Fried Chicken Strips with mac & cheese
Monday– Cheesy Potato Soup (new recipe)
Tuesday– Tilapia (either poached or panko , not sure yet) and noodles
Wednesday– BSTs (Bacon, Spinach and Tomato) with leftover soup if any

Seriously, I am hating cooking right now. I just don’t want to spend so much time in the kitchen and all the fun recipes have expensive ingredients and the cheap ingredient casseroles make me want to throw up. Maybe having a 1yr old that cries every time I enter the kitchen has something to do with this. Either I cook one-handed or I let him cry. Or let him make a tremendous mess with something on the floor to distract him. Help! I am so uninspired!
Hey Beth! I have been there!! 2 of my 3 kiddos would only sleep for about 30 minutes at a time and I got pretty good at “prestaging” dinner. If you can manage to get everything ready in shifts it helps a lot. I never did it, but my SIL had great success cooking several recipes of something at once and then freezing. Hang in there, he won’t be 1 forever 🙂
Hey Beth–I have been there as well! I started putting my foot down when my first baby hit 9months old. She would never let me cook, so I bought toys that she could ONLY play with on the floor of the kitchen. I also put music on now when I cook. My kids are pretty used to the fact that when the music turns on and mama is in the kitchen, unless they are dying, they need to keep themselves busy. If you let him cry, he’ll eventually get over it. You can also bribe him with snacks! Snacks ALWAYS keep kids busy! Good luck!!!
We’ve had similar issues. I’ve done a lot of one handed cOoking, but I find that kid involvement helps. My almost two year old is great at shredding lettuce, everyone loves to stir or pour stuff into a bowl. I also find that nap time prep work helps a ton. I also let the kids throw stuff into a pot before it goes to the stove. Also snacks are a fabulous idea. Good luck!
I’m so glad others are piping in! I’ve been lucky in that I’ve never been in a phase like this with my kids, but it is definitely common! just hang in there! everyone else’s suggestions are awesome. my friend nikki is really good at getting her 1-year-old involved in the kitchen – she’ll just get out lots of bowls, spoons, measuring cups, give him some flour or beans and let him have at it at the kitchen table while she cooks. I thought that was great when she told me about it.

Sigh… thank you all for your thoughtful replies. I sincerely appreciate it. I will try the music and special toys and nap time prep. Nap time is sacred and it is hard to decide how to spend my time, lol! I’ve also got a little etsy store to nurse along but right now I think I’d better just stick to the basics so I don’t drive myself crazy. Whining kiddos (3 boys 1-6) really drag me down. I made some “yummy oatmeal” this morning with fun stuff in it and my 4yr old had a meltdown because a raisin hit his tooth hard. I told him it was a super food and would make him have super energy all day and he cheered up a bit. 🙂
Also the freezing meals would be a good idea too. I used to do more of that and it sort of died off! Thank you again.

Menu planning is a given for me – I live at Sugarloaf, ME and it is 15 miles one way to a somewhat useful grocery store, and 45!! minutes one way to a large one. This week includes two trips back to MA, so especially crazy.
Sunday: Pasta fagoli and focaccia – serves two purposes, I can add them to my food blog this week, and take the soup to lunch (I work as a ski instructor during the day.)
Monday: I’m on the road after work, left marinated chicken teriyaki breasts for my husband and son.
Tuesday: Arrive back in ME late, but I braised some beef in homemade porter today, so that will be ready to go when I get home.
Wednesday: Company for dinner. I’ll bring fish back with me from civilization (MA). Something quick to whip up after work; the details will evolve as I stop by the grocers.
Thursday: Braise leftovers in a sandwich, good bagette, onions, cheese, with salad.
Friday: Yes, more braise (big piece of meat). Chopped up, becomes a meat ragu, over pasta.
Saturday: Out with friends (back to MA)
The meat for a braise – beef, pork, or lamb are the cheapest cuts you can buy, and usually serve me for multiple meals. I can’t think of another way to eat as well, inexpensively.
I can’t imagine living so far from the store! I can definitely see why planning is a must!! 🙂

Ok, you’ve convinced me…not a resolution as I suck at those, but I am going to meal plan more. I actually resolved to buy more pre-made stuff, as I’ve been obsessed with trying to make stuff from scratch all the time and burned myself out. Yesterday stocked up on some frozen stuff from trader joes, after having to cook in a strange kitchen w/o my own food all last week. We managed to have both salmon and pizza twice in the week, plus leftover Christmas ham and turkey.
Monday – orange chicken w/ broccoli and brown rice
Tuesday – chicken mushroom pot pie
Wed – pizza at a birthday party
Thursday – late night for everyone, maybe pancakes
Friday – soccer game, kids at grandparents 🙂
Saturday – Donovan’s bday (about 5 kids in his class have bdays this week) – pizza at mini-golf most likely
Sunday – mac n cheese since I’ll let him pick his bday meal
Oh dear, I’ll be cooking up more next week.

oooh I love sourdough waffles! They are easy (provided you have a good starter to use) and taste great. I make them often, and even freeze them. snap apart in the morning, pop in toaster, and it’s a better choice than Eggos.
