Week 207 Menu

One of the best things about winter is the abundance of clementines/ cuties/mandarins/whatever-you-want-to-call-them. We’re eating a bag a week…
at least!

Last week was awesome. We had a wonderful abundance of menus shared and many of you have made meal planning a new year’s resolution. I love it! Let’s keep the momentum going…

MONDAY:
– Fettucine Alfredo (no recipe link…developing a recipe for a future post!)
– Salad

TUESDAY:
Stuffed Shells (we didn’t make ’em last week, ended up having spaghetti b/c I didn’t have time for the baking part…but I have all the stuff!)

WEDNESDAY:
Easy Peasy Bean Tacos
– Guacamole and chips

THURSDAY:
– Leftovers

FRIDAY:
Whole Wheat Pancakes
– Smoothies

SATURDAY:
– Eat out

SUNDAY:
Bistro Chicken
– Mashed potatoes
– Broccoli

    I love stuffed shells but haven’t had them in a while. Making a mental note to add them to my plan soon! (That’s why I love sharing plans, such inspiration!)

    Fajitas with peppers, onions and veg chicken strips

      I’m with heidi, our best ones have been from costco. the first bag of the season I got at trader joe’s was really good, but the second bag I got there was okay. safeway’s have been the worst. but every bag I’ve gotten at costco has been wonderful!

    sun: rabbit à la moutard. I’ve been dying to try this recipe for a while. And while butchering the bunny was slightly traumatizing, it smells amazing in the oven as I type this.

    My husband’s out of town, so it’s a weird week. I cut up a bunch of vegetables for salads, for the soup tonight, and then for the pot roast tonight. I also made an egg bake that will take me through five breakfasts. Yay for being productive!

    Sunday- Tuscan Vegetable Soup (makes lots, freezing portions for later in the week)

    Monday- Pot Roast (local grocery store had special- buy roast, get potatoes, carrots, and onion bags free)

    Tuesday- My husband is fending for himself (McDonalds for son and himself?) because I’m going out to dinner with friends!

    Wednesday- The start of my solo meals. Salad, soup, or breakfast for dinner, Wednesday through Saturday.

  26. I am following some bloggers’ resolutions to use January to clean out the freezer & pantry. I’ve gotten through most of the pantry (thanks to the party at our house last week!). Now, I’m working my way through the freezer!

    Sunday: Stuffed Shells (This Week for Dinner) & roasted sweet potatoes – extras from a “new baby” gift
    Monday: Pulled pork from freezer & butternut squash
    Tuesday: Chicken pot pie (Ina Garten) from freezer over egg noodles

    my roommate and i are medstudents typically cooking for 1-2 depending on call schedules,etc. here’s what the week looks like at our apartment:

    monday – leftover vegetable barley soup + cornbread
    tuesday – cheddar cauliflower casserole with shredded potato crust + spinach salad with cranberries & toasted walnuts
    wednesday – baked sweet potatoes + sauteed spinach
    thursday – leftover casserole
    friday – dinner out with friends 🙂

    and of course snacks during the week will include all those delicious citrus fruits shipped to us from california 🙂

    Thursday- Leftovers

    Friday- Steak, Broccoli, Mashed Potatoes

    Not only did I stick to the meal plan last week, but we managed to have so many leftovers and I planned ahead for doubletiming (i.e. using chicken left over to cut up and make quesadillas for lunch) and we managed to bring our lunch everyday! I need a blog for posting my lunch menus! So much $$$ saved!!! THANK YOU for such great inspiration!!!!!

    Here’s this week:
    Mon: Baked Chicken, macaroni&cheese, & Corn
    Tues: meatloaf, mashed potatoes, biscuits
    Wed: Veggie Stirfry with rice & wonton strips
    Thurs: Chicken enchillada casserole
    Fri: Pork Roast, sweet potatoes, salad
    Sat: Leftovers
    Sun: Family dinner (but it’s our turn, so I’ve got to plan)
    I’m thinking open faced chicken parmesan sandwiches & Salad..but I may pick something else off these posts. Everyone’s sounds so yummy! 🙂

    My menu plan might be changing slightly. A trip Tuesday and Wednesday for work was cancelled. I had planned on my husband and kids having things I don’t like, but now I’ll either have to eat them or make something different! Maybe I can adopt the clean out the pantry idea and improvise without another visit to the store.

    Sunday – Dill pickle pot roast, sweet potatoes tian, salad
    Monday – Chicken enchilada soup, chips & salsa
    Tuesday – Corn dogs, tater tots and green beans
    Wednesday – tuna salad, fruit and fresh veggies
    Thursday – Tilapia, wild rice, brussels sprouts
    Friday – out
    Saturday – Seared scallops with snow peas and couscous

    Tuesday, 1/11: Slow cooker ”” West Indies chicken over brown rice

    Thursday, 1/13: Skillet chicken with goat cheese and marinara, gnocchi, spinach salad
    Friday, 1/14: Fend

    I’m a late posted this week. but I’ve taken down some ideas from everyone else for next week! (c:

    Sunday – roast chicken and rosemary & garlic smashed potatoes (fist time we managed to use up a giant bag of potatoes after the holidays!)
    Monday – Lunch was buffalo chicken salad wraps, dinner was our spinach & feta ‘meat’balls with penne and red sauce from last week (we had a surplus of food) and Chris’ Italian bread. yum!
    Tuesday – Asian chicken noodle soup (we’re making the broth from our roast chicken!)
    Wednesday – up in the air as I might go out
    Thursday – frozen kale and lemon pesto
    Friday – puff pastry pizza with pesto, onions, artichokes, orange pepper and blue cheese

    Wow, you’ve inspired me to set my own (late) New Years Resolution- plan a menu every week! It will be interesting as I am due to have our 2nd baby in July but I’ll give it a go. Here’s the first attempt:

    Sun: Mac n cheese and broccoli

    Tues: Roast veggie stew in bread bowls
    Wed: Spaghetti
