Week 212 Menu

I bought English muffins recently and Cate has become obsessed. She would eat a whole package every morning if we let her. Is it the English muffin itself or perhaps the butter and homemade jam filling the nooks and crannies? Can’t say I blame her.

Another week, another menu. I can’t believe how fast time is racing by!

– Happy Valentine’s Day! Mac & Cheese for the girls while Nate takes me out for dinner and a movie. He did good this year – he lined the babysitter up weeks ago. What a guy!

Lentil Soup (didn’t make it last week!)
– Crusty bread

Real Simple Lasagna
– Salad

– Leftovers

– Eat out

– Homemade hamburgers…it’s been a LONG time since we’ve made these and it sounds good to me this week!
– Maybe I’ll even get out my new mandoline slicer and make some oven fries

– Breakfast for dinner – perhaps baked french toast – yum!

    Grandma is in town, so we’ll survive this week. Wioo hoo! Those English muffins look great, maybe I’ll whip up a batch this week.

    mmmm. there is something about english muffins.

    Sunday – we’re celebrating valentine’s today with 30 minute gumbo (should be fun to try!) and walnut brownies
    Monday – greek beans over quinoa (
    Tuesday – tofu stir fry
    Wednesday – Chris’ birthday dinner of skillet baked ziti (one of our faves) and mini banana cream pies in mason jars
    Thursday – refrigerator clean out before we leave town
    Friday – curry chicken salad sandwiches for the road!

    If you are interested in making your own English Muffins, an older version of Laurel’s Kitchen has a great recipe based on plain yogurt. I make it every couple of weeks with 1-to-2 white-to-whole wheat flour; most commercial ww English Muffins are too sweet.

    Thursday–Frozen pizza due to very hectic day
    Friday– PDub’s Chicken Spaghetti
    And English Muffins? LOVE LOVE LOVE them. With all 3 of my pregnancies, if I ate an English Muffin with peanut butter on it, I had no morning sickness. The days I didn’t or I tried another topping…you don’t want to know!!

  15. I have been working on my meal planning 2 weeks at a time. We live about 45 minutes from major grocery stores, so planning 2 weeks at a time should make for less frequent trips to the grocery store. We will see how this plan works out. If we can make it work, it should save both time and money. This menu is week 2 of our plan:

      I think planning should definitely help! and geesh, 45 minutes to the grocery store, you definitely want to minimize trips! I’ll cross my fingers planning works for you! πŸ™‚

    Trying to climb out of the food rut we’ve been in the past couple of weeks. Thanks so much for all of the inspiration to actually plan meals… it really does make it sooooo much easier during the busy week!

    I just bought some high fiber Thomas english muffins and the Bitty loves them!

    I don’t have this week’s menu, but tonight we grilled surf & turfs(lobster tail, steak and asparagus – two turfs) and it was delish.

    Last week, I made the EASIEST cream pasta recipe EVER. Had I known it was this easy to make a creamy pasta, I’d weigh about 100 lbs more (that’s like 2 of me!). Ingredients:
    Spaghetti,Heavy Cream, Scallions & white onions, Salt/pepper
    Prosciutto. Chop prosciutto, cook, set aside. Cook scallions and onions in a bit of water, salt & pepper til water almost evaporates. Add cream (may add more water if needed). Put on top of pasta and top with prosciutto. So GOOD. I don’t really cook so this was a new discovery for me! I just used all the left over stuff in my fridge! What a happy little discovery. πŸ™‚

    We had to “celebrate” Valentine’s Day today, due to crazy schedules tomorrow.

    Have fun on your night out! We’re not really big on Valentines Day and I actually prefer to stay in because everywhere gets so crowded so we’ve got a pretty unromantic night planned at home with our toddler.

    Tues: Potato soup and roasted asparagus
    Wed: Pesto pizza
    Thurs: Wraps with turkey, lettuce, tomato, cucumber, and spicy humus

    R: Fettuccini (really, linguine) Alfredo with grilled chicken. High of 68 – gotta use that to my advantage!!

    We already did our major V-Day dinners on Saturday — today’s blog post gives all the recipes for the kids’ meal of tomato-pesto hearts, bacon-wrapped chicken “fingers,” and roasted broccoli. We had cabernet risotto and a spinach salad with fried goat cheese rounds. But here’s the meal plan for this week:
    Sunday, 2/13: Sunday Roast Chicken dinner with homemade apple-cornbread stuffing and sauteed spinach

    I have to tell this to someone. I didn’t post a menu this week because we have a ton of leftovers. But my really REALLY picky husband made me cavatelli with alfredo from scratch (none of that jarred stuff), garlic bread with “fancy” pizza dipping sauce, and s’mores fudge (to remind me of summer because I have a bad case of the winter blues). This is the first time he has ever made me a full meal without asking for any help and he loved doing it! He was so proud and now he wants to help me cook dinners. Which means, he’ll actually try the food he makes. So I think that means he wants to help me plan meals too. He asked me for the link to this blog yesterday. So next week, we might have some awesome collaborative meals planned out!

    I couldn’t live without weekly planning! My goal is to teach my two young girls to eat a wide variety of foods. So each week has new ideas. πŸ™‚

    Friday: I’m in love with spaghetti squash
