Week 214 Menu

Our vacation is officially over. And, I must admit, it’s good to be home! We had some really great food this past week, but I am looking forward to eating at home again. Just need to make sure we get to the store first thing tomorrow…our cupboards are bare!

And, sadly, no photo this week. My camera and camera cord are still packed. And I’m just too exhausted to dig them out!

    This week’s a pretty simple one for us. My husband’s a tax accountant so he rarely makes it home for dinner this time of year and I’m really just cooking for me and a toddler who usually picks at dinner anyway.

    Mon: Tomato basil soup and grilled cheese
    Tues: Baked cinnamon yams and salad
    Wed: Pesto pizza topped with broccoli, tomato, and spinach
    Thurs: Fried egg sandwiches with fruit salad.
    Fri: Eat out
    Sat: Poppy seed chicken casserole with steamed broccoli

  5. Here is our menu! Logan’s birthday is on Friday so we are having some of his favorite recipes that day.

    Glad you had a fun time in our neck of the woods (although it was such uncharacteristic weather! You’ll just have to come back again!)

    We’re battling some colds and sinus infections around here so our menu for the week is minimum-fuss.

    Sun: crockpot ground turkey/tomato sauce/macaroni stuff (tastes way better than it sounds)
    Mon: leftovers
    Tue: chicken breasts baked with salsa and sour cream
    Wed: veggie stir fry
    Thurs: always taco night
    Fri: homemade pizza
    Sat: hopefully go out to celebrate being able to breathe through noses again

    Monday: Hubby’s out with friends, Breakfast for Dinner= Hashbrowns with shredded roast beef, peppers and onions, eggs, toast, fruit

    Wednesday: Hubby cooks. Black bean and corn enchiladas from the freezer, chips and salsa, fruit (Leftovers from last week that were suprisingly filling!)

      I recently cleaned out my old magazines and came across two articles on scallop preparation. One was from Fine Cooking which talked about the perfect sear on sea scallops and included 3 sauces. The other was from Everyday Food and it was a recipe for Scallop Po Boys using bay scallops. Both can be accessed on line.

    w-deli style pitas. We love pitas from Pita Pit and sadly in NC they do not have them 🙁 so I recreate at home.
    t- is my dad’s bday, and we will go out and celebrate this weekend but my mom has to work late so I am making him a meal. his request was fried chicken, corn on the cob, mashed potatos, biscuits, and pecan pie

      that IS what it’s all about…doesn’t really matter where you go or what the vacation is, as long as the family has a good time together! 🙂 although, my 6 yo probably could care less about all that as long as Disneyland is involved 😉

  25. I haven’t posted for a while. We’re trying to figure out our evening schedule with two different baseball practice schedules, work schedules, and Relay For Life meeting schedules. We’re going to make it work this week though.

    T- Macaroni & Cheese, Peas sauteed with bacon and shallots, sliced deli ham
    W- My parents cook for us. It’s always a surprise.

    S- I give my husband two options. We can eat out or he can cook and clean the kitchen.
    Sun- It’s my day of rest. I’m always surprised to see what happens on Sundays.

  46. I’m starting to find that I’m just in repeat mode from prior weeks. Which is easy on one hand, but I’m worried that it will cause us to get too burned out on dinner menus. I’ve got to promise myself that I’m going to take some ideas from these menu and incorporate new items into our dinner menus. Maybe I can try for a twice a month goal for now.

    Mon: Taco Salads, Jello, Cuties (oranges)
    Tues: Baked Potato with fixins, jello, yogurt, apple
    Wed: Chicken Salad in Pita Sandwiches, Celery/PB, Yogurt
    Thurs: Cuban Sandwiches, Pringles Chips, Apples
    Fri: Open/BLT Sandwiches (possible eat out day)
    Sat: Left overs from dinner
    Sun: FFY

    Mon: Left over Lasagna
    Tues: Breaded Pork Chops with Mac and Cheese, Mixed Veggies
    Wed: Steak, Mashed Potatoes, Green Beans
    Thurs: Spaghetti with Italian Sausage Tomato Sauce

    Sat: Tacos, Enchilladas…maybe something different in “mexican” style
    Sun: Family Dinner – it was our turn for Oscar night, so we are back to the other families. And my baby shower – yay!!!

      I get in ruts all the time. since I have 4 years’ worth of menus to look back on, sometimes I’ll pop back a few years and look at an old menu – it always makes me laugh because there will be dishes that I totally forgot about that used to be ones I was in a rut with!

      one thing I find helpful to do is to write a list of EVERYTHING I can make for dinner – including things as simple as hot dogs to my more elaborate recipes. then I’ll go to that list to get ideas for things I may have forgotten about.

      and, of course, stealing ideas from everyone else’s menu is the best! 🙂

    Found some great new recipes and threw in one or two that the kids (ages 11, 7 & 3) won’t say “EWW!” before even trying a bite! Ugh.

    Monday. Chicken & onion kebabs with roasted red potatoes with sea salt
    Tuesday. Homemade creamy tomato soup with heart shaped grilled cheese & corn on the cob
    Wednesday. Crispy panko crusted cod with lemon dill sauce and rice and salad
    Thursday. Boneless pork chops with gravy and mashed potatoes and peas
    Friday. Ground beef “sliders” on whole wheat buns and fries and side of steamed broc
    Saturday. Ravioli and Caesar salad

    That’s the plan and I’m sticking to it!!
