Week 222 Menu

Happy Belated Passover and Happy Easter! Nate’s parents just drove off to the airport after a completely perfect visit this week. We celebrated Easter in all its glory yesterday and it was a wonderful day full of delicious food and even better memories.

Nate’s mom always has a million fun tricks up her sleeve. One of the many this week was decorating Easter cupcakes. We made mini cupcakes, so for these cute carrots, she sat down with Cate and actually cut up mini carrots into even minier, perfectly shaped carrots to decorate the cupcakes with. The green carrot tops are curly parsley pieces. They were complete adorable (although we noticed this morning they don’t really last over time…mental note!). For the nest cupcakes, she mixed green food coloring with coconut and then had Cate dip the frosted cupcakes into the coconut, finishing the nests off with a few eggs (i.e. jelly beans). This is just one of the many reasons grandmothers are magical.

Time for a menu already? Wowzah. This week is not going to be fancy. I have a lot of work coming up, we’ll be getting back into the school groove after spring break, and, well, we have oodles of ham to get creative with.

MONDAY:
Lentil Soup

TUESDAY:
– Western omelettes (ham, cheese, bell peppers, onions)
– Smoothies

WEDNESDAY:
– Grilled ham & cheese sandwiches
– Salad

THURSDAY:
– Leftovers

FRIDAY:
– Anything but ham!!!! (Eat out)

SATURDAY:
– Spaghetti
– Salad and garlic bread

SUNDAY:
– Breakfast for dinner

    I just started this new grain-free, lactose-free, sugar-free diet so everything I eat needs to be made from scratch. And since I didn’t want to run to the grocery store every day, I finally decided to make a menu for the week and (try to) stick to it.

    Saturday: Prosciutto Wrapped Chicken with cooked carrots and applesauce

    Sunday: Turkey, stuffing, mashed potatoes, coriander glazed carrots, green beans with shaved Parmesan, artichoke and tomato salad, roasted asparagus

    Monday: Grilled steak with tomato tapenade, roasted cauliflower

    Tuesday: Turkey croquettes, cucumber avocado salad

    Wednesday: Shrimp Seviche with a green salad

    Thursday: French Onion Soup

    Friday: Turkey meatloaf

    (We’re trying to eat leftovers without eating them everyday. Let’s see how it goes!)

    I haven’t thought ahead enough to plan out a weekly menu, but I just bought a GIANT bag of Kale, so I know it’s on the menu pretty much every night this week! 😉

    Our Easter feast was fantastic- now my only problem will be trying to get creative with the leftovers!

    Monday- It’s our anniversary, so we are eating out
    Tuesday- Easter leftovers
    Wednesday- Getting more creative with leftovers (I’ll be looking for suggestions)
    Thursday- meatball subs (I’ll be sick of ham by then, so I’ll have to freeze any leftovers at this point)
    Friday- Shepherd’s Pie
    Saturday- Pulled pork sandwiches

    I always plan my week on Friday night and do all my shopping on Saturday morning. That’s why my menu always starts on Saturday.

    This week is a short week, as we’re headed to Vegas on Thursday for a friend’s wedding this weekend. Going to be fun!!

    Tues: Veggie fajitas with homemade guac
    Weds: Tuna melts with homemade tomato soup from the chest freezer
    Thurs: Cobb salad with out the bacon
    Fri: Mystery night
    Sat: Fish tacos and key lime pie

    Thankfully I have a husband who will eat all the leftover ham for lunch, and just complain at the end! So we only have 1 day of leftovers scheduled but still have to use up potatoes that aren’t cooked yet.

    Sun: glazed ham with mustard sauce, mashed potatoes, garlic mushroom green beans, glazed carrots and zucchini, green salad and homemade rolls
    Mon: eating at my parents, not sure the menu
    Tues: Tarragon Chicken Vol au Vents with steamed sugar snap peas and strawberry spinach salad
    Wed:lemon rosemary pork tenderloin with parmesan risotto and grilled zucchini
    Thurs: spaghetti and meatballs, garlic french bread and salad
    Fri: steak fajitas with black beans, chips and salsa and corn and maybe some raw veggies
    Sat: date night at Indian fusion restaurant

    Wednesday: Something with the Ham, I don’t know what yet…

    Friday: Fish/Veggies from our CSA Box
    Saturday: Throwing an engagement party for some friends, catering to be done by Moe’s, but I am going to attempt to make “Mexican” filo triangles, I’ll let you know how it goes. 🙂
